MANDARIN PANCAKES
Serve these Mandarin Chinese pancakes with mu shu pork, Peking duck or filled with sweet red bean paste to satisfy the taste buds.

Steps:
- Gather the ingredients.
- In a large bowl, combine the flour and boiling water, starting with 3/4 cup. Begin stirring it immediately, adding a little more water at a time until a shaggy dough forms.
- Knead the warm dough for about 6 minutes, or until you have a smooth dough. If the dough sticks to your hands or the counter, add a sprinkle of flour.
- Cover the dough and let it rest for 30 minutes.
- Turn the rested dough out onto a lightly floured surface. Cut the dough in half to form 2 balls. Use a lightly floured rolling pin to roll each half out until it is 1/4-inch thick.
- Use a cookie cutter or trace a glass or mug with a knife to cut out 3-inch circles of dough.
- Use a pastry brush to brush 1/4 to 1/2 teaspoon of sesame oil over the top of 2 dough circles. Lay one pancake on top of the other, so that the oiled sides are together. (Don't worry if one of the edges hangs over the other.)
- Roll out the pancakes together to form a 6-inch circle. Continue with the remainder of the pancakes. Use a damp towel to cover the prepared pancakes and keep them from drying out while preparing the remaining dough.
- Heat a nonstick or cast-iron frying pan over medium heat. Add one of the pancake pairs and cook until browned on both sides-about 3 minutes altogether; the second side will cook more quickly than the first side.
- Remove the paired pancakes from the pan and pull them apart while they are still hot. Cover to keep warm. Continue with the remainder of the pancakes. Serve immediately.

MANDARIN FRESH CREPES
Steps:
- Heat a round flat pan on medium heat, over stove.
- Mix pancake mix and water. Spoon 1/2 Tbsp. of butter onto hot pan until melted. Pour batter onto pan forming two medium sized golden-pancakes.
- Spoon remaining butter onto pan until melted. Pour remaining batter forming two other medium sized golden-pancakes.
- In a small bowl mix room temperature cream cheese, mandarin oranges, and sugar.
- Divide cream cheese filling into fours. Spoon the cream cheese filling towards the edge of each pancake and roll gently applying pressure so that the cream cheese filling spreads throughout the pancake. When complete, top crepes with whipped cream and enjoy!

- Whisk 1 cup sugar, butter, water, 1/4 cup lemon juice, and egg yolk together in a heavy-bottomed saucepan over medium heat. Bring to a boil, stirring constantly. Cook until thickened, about 1 minute. Cover sauce to keep warm.
- Beat cream cheese, 1/4 cup mandarin orange juice, 1/4 cup sugar, 2 tablespoons lemon juice, and vanilla extract in a bowl using an electric mixer until well blended; mixture will be a bit lumpy.
- Blend milk, flour, and eggs together in a bowl using an electric mixer. Set a greased crepe pan over medium heat. Ladle batter in until just covering the bottom of the pan. Cook until top dries, about 3 minutes. Flip and set aside; repeat with the remaining batter.
- Spoon filling into crepes and fold over like a taco. Spoon mandarin orange pieces over filled crepes. Pour sauce on top.

MANDARINE NAPOLEON
Delicious Corsican drink to honor Napoleon, who was born on Corsica. Mandarine Napoleon liqueur was created to honor Napoleon while he was alive (by a social-climbing chemist), considered a French liqueur, but it is actually produced in Belgium. It is an (38% alcohol) orange-flavored liquor with a cognac base, with a spicy orange bouquet and pale orange color. It is made with Mandarin peel from Sicily chopped fine and steeped in cognac, then filtered, then added to alcohol, sugar, 21 herbs and spices (supposedly include clove, coriander, cumin and green tea). The alcohol is distilled 3 times and aged 3 years before bottling. If you can't find Mandarine Napoleon, I would substitute Grand Marnier for the best taste, then Cointreau, or, if desperate, triple sec. But if you want to honor the great little man, buy the real stuff. Hmm, the Mandarine Napoleon has a unique taste, sweet without being cloying, but not too "sophisticated". I heartily recommend this cocktail, and spring for the real deal, you'll be glad you did.
