PUT THE LIME IN THE COCONUT CAKE

Steps:
- Preheat oven to 350 degrees F and grease and flour 2 (9-inch) cake pans.
- In an electric mixer or using a hand beater, cream butter and sugar until fluffy. Add coconut oil and eggs 1 at a time. In a mixing bowl or on a sheet of parchment paper, combine flour, salt, baking soda and powder. To mixer add coconut milk and flour to creamed mixture alternately, beginning and ending with flour. Pour batter into prepared pans and bake for 25 to 28 minutes. Allow to cool 10 minutes then unmold onto rack(s) over a sheet pan and allow to cool completely.
- For Glaze: In a medium bowl combine sour cream or yogurt, sugar, lime zest and juice, coconut milk, shredded coconut.
- With a bamboo skewer, poke holes in cake and spread glaze on both sides of both cakes. Cover with plastic wrap, chill until ready to frost cake.
- In an electric mixer or using a hand mixer beat together the butter, shortening, and cream cheese until well blended and fluffy. Add the powdered sugar gradually at low speed. Beat in coconut milk and vanilla. Frost cake. Coat top and sides with shredded coconut.
MAMA'S ORANGE (OR LIME) & COCONUT CAKE
Here is the recipe for our orange (or lime) & coconut sponge cake. It is a moist, light, orange / lime flavoured sponge with just a hint of coconut. It keeps well in an airtight container for a week & can be frozen before icing (it freezes very well). This recipe is simple to make & not time consuming at all.

- Cream the margarine and the sugar until light and fluffy. Whisk the eggs into the sugar/margarine mixture.
- Slowly add the flour (sieved), baking powder, orange zest and coconut. Stir in a figure of 8 fashion.
- Gradually add enough water to loosen the cake mix up a bit. It should be the consistency of a slightly thin custard.
- Pour into a non stick cake tin, preferably with loose bottom. I use an 8'' round tin for this cake.
- Bake on a middle/top shelf in the oven at 180 c for around 45 mins or until a skewer comes out clean.
- Remove from tin and cool on wire rack. Once cooled, top with the icing or dust with icing sugar.
- To make the icing, beat the margarine with the sugar & enough of the juice to form a spreadable icing. Cover the top of the cake & decorate with the jelly slices & dragees / silver balls.

- Place egg whites in a large bowl; let stand at room temperature for 30 minutes. , Preheat oven to 325°. In another large bowl, beat sugar, butter and oil until well blended. Add egg yolks, 1 at a time, beating well after each addition. , Combine flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Stir in coconut and extracts.. , Add cream of tartar to egg whites; with clean beaters, beat on medium until stiff peaks form. Fold a fourth of the egg whites into batter, then fold in remaining whites., Transfer to 3 greased and floured 9-in. round baking pans. Bake 25-30 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a small bowl, beat cream cheese and butter until fluffy. Add confectioners' sugar and extract; beat until smooth. , Place 1 cake layer on a serving plate; spread with 1/2 cup frosting and sprinkle with 1/3 cup coconut. Repeat. Top with remaining cake layer. Spread remaining frosting over top and sides of cake; sprinkle with remaining coconut. Refrigerate for 2 hours before cutting. Store in the refrigerator.

- Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., In a large bowl, cream butter, cream cheese and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Beat in extracts. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture just until combined. Fold in coconut., Transfer batter to prepared pan. Bake 75-85 minutes or until a toothpick inserted in center comes out clean. Cool in pan 20 minutes before removing to a wire rack to cool completely., In a small saucepan, combine glaze ingredients. Cook and stir over medium heat 2-3 minutes or until sugar is dissolved. Brush over cake. If desired, sprinkle with coconut.

- Heat oven to 190C/fan 170C/gas 5. Butter two 20cm sandwich tins and line with non-stick baking paper. Grate the 200g block of creamed coconut and keep half of it aside. Then in a large bowl, beat all the cake ingredients (including half of the grated block of creamed coconut) together until you have a smooth, soft batter.
- Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon, then bake for about 20 mins until golden and the cake springs back when pressed. Turn onto a cooling rack and leave to cool completely.
- For the frosting, mix together the remaining creamed coconut, zest and juice of 2 limes. Microwave on High for 30 secs until the coconut melts.
- Make the buttercream by beating the butter until smooth and creamy and gradually beating in icing sugar . Then beat in the cooled coconut mix and 2-3 tbsp Malibu (optional) until it becomes marshmallowy.
- Fill the cooled sponges with a third of the frosting, cover the sides and top with the rest and coat the sides with the toasted desiccated coconut. Keep in an airtight container and eat within 2 days.

- Heat oven to 350°F Grease and flour 2 (9-inch) round (2-inch deep) cake pans; set aside.
- Combine flour, baking powder and baking soda in medium bowl; set aside.
- Combine sugar and 1 cup butter in large bowl. Beat at medium speed until well mixed. Add 1 cup cream of coconut and 2 teaspoons lime zest; continue beating, scraping bowl often, until smooth. Add 1 egg at a time, beating well after each addition. Reduce speed to low; add flour mixture alternately with buttermilk. Beat until well mixed.
- Divide batter evenly between prepared pans. Bake for 35 to 40 minutes or until toothpick inserted in center comes out clean and cake is deep golden brown. (If browning too quickly; cover with aluminum foil.) Cool 10 minutes. Invert onto cooling racks; cool completely.
- Combine 1/2 cup butter, 1/4 cup cream of coconut, cream cheese and lime zest in large bowl. Beat at medium speed until creamy. Reduce speed to low; add powdered sugar and enough half & half for desired spreading consistency.
- Place 1 cake layer onto cake plate, bottom-side up. (If necessary, trim top of cake layer if too rounded to make flat surface before placing onto plate.) Frost top of cake with about 1 cup frosting. Top with second cake layer, bottom-side down. Frost entire cake and sides. Sprinkle top of cake with coconut.

COCONUT ORANGE CAKE
This cake is a recipe I received from Maha Aborjay while living in Hia T'lool, Irbid Jordan. She is a fabulous cook and manager of the Home Economics teachers for Northern Jordan. She taught me alot and I will always be grateful. I hope you enjoy this cake that is so simple to make and delicious with a cup of hot tea.

- Preheat oven 350°.
- Cream margarine, shortening, and sugar till light and fluffy, about 10 minutes.
- Beat in eggs 1 at a time, beating well after each one.

ORANGE COCONUT CAKE
This is a torted orange-flavored sponge cake with coconut filling. The filling is made the day before you bake and assemble the cake.

- Note: The filling has to thicken in the refrigerator overnight. To make the filling:.
- Poke holes in the top of the coconut and drain the milk - you should have approximately 1/3c. Split the coconut and shred the meat - the amount doesn't matter, just use what you get. Put into a ziplock bag or a bowl with a lid to stay fresh until the next day. In a large saucepan over medium heat, melt the marshmallows into the coconut milk, remove from heat and cool. Refrigerate overnight.
- The next day:.
- Preheat oven to 350 degrees.
- Line the bottoms of two 8" or 9" round cake pans with waxed paper.
- Beat the egg whites until foamy; gradually beat in 3/4c. sugar until stiff peaks form. Set aside.
- In a separate bowl, beat the egg yolks with the remaining 1/4c. sugar until thick and lemon-colored; mix in the orange juice and salt.
- Fold the egg whites into the yolk mixture, and then fold in the flour.
- Pour batter into waxed-paper lined pans and bake at 350 degrees for 30-35 minutes. (The tops will spring back to the touch). Cool in pans for 10 minutes and then turn out.
- Filling:.
- Remove from the refrigerate and note that it has gelled and thickened.
- Whip marshmallow mixture until light and fluffy. Beat whipping cream until light and fluffy - don't add any sugar. Fold into marshmallow/coconut milk mixture.
- Split (torte) the 2 completely cooled cake layers so that you have 4 layers. Place first layer on cake plate and spread 1/4 marshmallow/cream mixture on top, sprinkle with shredded coconut. Alternate cake layers and marshmallow/cream mixture and coconut, ending with marshmallow/cream mixture & coconut on top. Store unused portion in refrigerator - it tastes better the 2nd day!
