PARMESAN AND GARLIC BREADSTICKS
These are really good and easy to prepare. They have a nice crisp crust and we loved the addition of the garlic salt on top. You can make these any size you want, from thin to larger. Just adjust the cook time. From TOH made my way. Cook time does not include the time it takes for the dough to rise. The amount of servings depends on how large you make the breadsticks.

Steps:
- In a large mixing bowl, dissolve yeast in warm water and let it sit until bubbly, about 7-8 minutes.
- Add the milk, sugar, minced garlic, Italian seasoning, 3 tablespoons butter, salt, and 2 cups flour.
- Beat until smooth.
- Stir in 1/4 cup parmesan cheese and enough remaining flour to form a soft dough.
- Knead with bread hook for 7-8 minutes adding additional flour as needed.
- Turn onto a floured surface and knead about 10-15 times.
- Place in a greased bowl, turning once to grease top.
- Cover and let rise in a warm place until doubled, about 45 minutes.
- Punch the dough down and let it rest a couple of minutes.
- For thin bread sticks, divide into 36 pieces.
- (This is very versatile here. You can make them as small or as large as you want. I cut mine into 18 pieces for a larger breadstick).
- Shape each piece into a 6 inch rope.
- Place 2 inches apart on a greased baking sheet.
- Cover and let rise until doubled, about 25-35 minutes.
- Melt remaining butter and brush over the dough.
- Sprinkle with Parmesan cheese and garlic salt.
- Bake at 400 degrees for 8-10 minutes or until golden brown.
- Remove from pans to wire racks.
SOFT GARLIC BREADSTICKS
Charles Smith relies of a bread machine to mix the dough for these buttery golden breadsticks that are mildly seasoned with garlic and basil. "I like to use this dough when making pizza, too," says the Baltic, Connecticut reader. "It makes two 12-inch crusts."

Steps:
- Pour 1 cup and 3 tablespoons of water into a Bosch mixer. Then, add 1 tablespoon of yeast, 2 tablespoons of sugar and 3 tablespoons of vegetable oil. Turn on mixer the lowest setting (1), to mix them a little bit. Let it wait for 5 minutes.
- While it's waiting, put 3 cups of bread flour, 1 and 3/4 teaspoons of salt, 1/2 teaspoon of garlic powder, 1/2 tablespoon of vital wheat gluten and 1/2 tablespoons of dough enhancer into a big bowl and mix them well.
- After that, turn on the mixer at the lowest setting (1), add the flour mixture into yeast mixture slowly. When the dough is coming together, increase higher setting to (3). Let it run for 5 minutes.
- Take the dough out and put it into a bowl and cover with a wet cloth. Let the dough rise for 45 minutes to an hour at room temperature. (My trick to speed up the time for dough rising is to preheat an oven for 200F and turn off. Then, put the dough in the oven cover with a wet cloth and let it rises for 20-30 minutes.)
- Next, divide the dough into 13 pieces.
- Roll the pieces into a long rope shape.
- Put a parchment paper on a cookie sheet and spray some oil. Then, lay the rolled dough on the tray and cover with a wet cloth let them rise again. (My trick to speed up the time for dough rising is to preheat an oven for 200F and turn off. Then, put the dough in the oven cover with a wet cloth and let it rises for 15-30 minutes.)
- At the meantime, melt 4 tablespoons of butter in a microwave for 20 seconds. Then, add 1 teaspoon of garlic powder, 1/4 teaspoon of salt and mix well.
- The dough rise again and double its size. Preheat oven for 400 F.
- Brush melted garlic butter on the dough.
- After, sprinkle 2 teaspoons of dried parsley on the dough.
- The following, sprinkle one cup of mozzarella cheese on the dough. And, bake them at 400F for 12-16 minutes. (I did it for around 15 minutes.)

Steps:
- Measure your flour, salt, garlic powder, parsley, and baking powder into a big bowl. Stir the dry ingredients together so that they are evenly distributed throughout the flour. Now, pour in the milk. Stir with a big spoon until you have a ball of dough that leaves the sides of the bowl. You may have to dust the ball of dough with a little flour if it seems sticky to you. Gently knead the ball of dough right there in the bowl 5 or 6 times. Now place your dough on the counter. You may use a piece of waxed paper under the dough if you like. Using a rolling pin roll out the dough to a rectangular shape. If the edges become uneven, use your hands to reshape into a rectangle. It doesn't have to be perfect. You are aiming for a rectangle that will fi into a 9- by 13-inch pan. When you get the dough the right size, set it aside.
- Meanwhile, place the margarine in the 9- by 13-inch pan and place the pan in a 425F oven to melt the margarine. When the margarine is melted, carefully remove the pan from the oven, so as not to burn yourself. Sprinkle the second teaspoon of garlic powder and the 1/2 teaspoon of salt into the pan. You do not have to use the extra salt. Now, very carefully, lay your rectangle of dough into the pan, over top of the margarine. Next cut the rectangle into narrow strips. One method of doing this is to cut the dough in half, then cut each half again, quartering the dough, and then cut each quarter into narrow strips. The margarine will creep up between the strips. This is normal. It is what gives these bread sticks their texture. After cutting your strips, place the pan in the oven, still at 425F, and bake them for 20 minutes. They will be browned and crispy when they are done.
- The parsley is simply for decoration. It makes the bread sticks look more gourmet, but it adds little to the flavor or the texture. Leave it out if you don't have any, or are running low. If desired, you may sprinkle the bread sticks with a little bit of parmesan cheese before or after baking. This tastes good, but once again, is optional.

Steps:
- Put 3/4 cup warm water in a food processor. Sprinkle the yeast on top and let sit until foamy, about 5 minutes. Add the sugar and 1 teaspoon salt and pulse until dissolved. Add the flour, olive oil and 1 tablespoon butter and pulse until the dough forms a ball, about 1 minute. Continue to process with the motor running until smooth, about 2 more minutes.
- Line 2 baking sheets with parchment; brush with olive oil. Turn the dough out onto a floured surface. Divide into 12 equal pieces, then roll each piece into a 12- to-16-inch rope. Arrange the ropes 1 1/2 inches apart on the prepared baking sheets, rolling them to coat with the oil. Cover each baking sheet with a damp cloth and set aside in a warm place until the breadsticks double in size, 45 minutes to 1 hour.
- Preheat the oven to 400 degrees F. Put the remaining 3 tablespoons butter and the garlic in a microwave-safe bowl and microwave until melted, about 1 minute. Brush the breadsticks with the garlic butter; sprinkle with herbs and salt. Bake until golden, 15 to 20 minutes.

- Line a large baking sheet with parchment paper and set aside. In a large mixing bowl, combine the warm water with the yeast and allow it to sit for 10 minutes, until the yeast begins to foam up.
- Add 2 cups of the flour, the salt, honey and olive oil and stir with a large wooden spoon until combined and a soft dough begins to form. Add the remaining 1/4 cup of flour a little at a time, stopping when the dough starts pulling away from the sides of the bowl and stops feeling sticky. You may not need the whole 1/4 cup!
- On a floured surface, separate the dough into 6-7 equal-sized balls (use a scale for accuracy if you’d like). Roll each ball of dough between your hands, one at a time until a “log” is formed. Place the formed breadsticks on the baking sheet about 2-3″ apart. Cover the breadsticks with a clean kitchen towel and allow them to rest for 45 minutes to an hour, until the breadsticks have almost doubled in size.
- Preheat the oven to 400 F. Once preheated, remove the kitchen towel and place the breadsticks in the oven for about 6 minutes. While the breadsticks are baking, melt the butter in a microwave-safe dish and add the garlic powder and salt, stirring to combine. Remove the breadsticks, and using a pastry brush, brush the tops of them with half of the garlic butter. Place the breadsticks back into the oven for an additional 5-6 minutes, until the bottoms are slightly browned. Brush the remaining butter on top just prior to serving.

- Move oven rack to the second highest position. Place a pizza stone on the rack and preheat oven to 500 degrees F for at least 30 minutes.
- Place parchment paper on top of the pizza peel and sprinkle cornmeal over the top. Move dough ball to the pizza peel and press dough out into a 14-inch circle by gently stretching and pressing the dough. (I find it’s best that once the dough is pressed out into an 8-inch circle to place the palm of my hand in the center and gently pull the dough by the edges to get it to 14 inches). If the dough is really snapping back while you’re trying to press and stretch it, then cover it with a damp paper towel and let the dough relax for 5-10 minutes before starting again to get the dough to 14 inches.
- Place the butter, Italian seasoning, garlic powder, and parsley in a small microwave-safe bowl. Cook on high for about 20-30 seconds, or until the butter is melted. Stir the mixture together and use a pastry brush to brush it over the dough.
