4 (6.5 ounce) packages dry corn bread mix
6 cups dry bread crumbs
1 pound sausage
½ cup margarine
2 cups chopped onion
4 cloves garlic
⅓ cup chopped green bell pepper
3 cups chopped celery
⅔ cup chopped fresh parsley
2 tablespoons poultry seasoning
1 teaspoon dried sage
1 teaspoon salt
8 cups chicken broth
2 eggs, beaten

Steps:

  • Prepare the cornbread according to package instructions. Once cornbread is cooled, crumble it into a large bowl. Stir in the bread crumbs.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large pot, saute sausage in margarine with the onion, garlic, green bell pepper and celery until tender. Stir parsley, poultry seasoning, sage and salt into the mixture. Pour broth, eggs and cornbread/breadcrumbs into the mixture; mix until the ingredients stick together easily. Transfer to a 9x13 inch pan.
  • Bake covered in a preheated 350 degrees F (175 degrees C) oven for 30 minutes.

Sausage loaded dressing. Recipe #407287 was used to flavor the stuffing but your favored poultry seasoning will work fine. This makes enough to stuff the bird and have a casserole for crisper dressing. Leftovers can be frozen for future use.

10 ounces spicy pork Italian sausage, casing removed and crumbled
1/2 cup butter
1 large onion, chopped
4 celery ribs, sliced
1 large carrot, diced fine
4 garlic cloves, minced
1 teaspoon dried sage
1 teaspoon poultry seasoning, Rosemary Garlic Seasoning
16 ounces cornbread, crumbs Pepperidge Farm
2 cups chicken broth (Recipe #77787) or 2 cups turkey broth (Giblet Stock from Turkey or Chicken or ?? for Soup or Gravy)

Steps:

  • Brown sausage in large skillet over medium heat until no longer pink, stirring to crumble meat.
  • Remove fat from cooked sausage.
  • Add butter to sausage over medium high. Add onions, celery, carrot and garlic cook for 10 minutes or until onions are softened. Stir in dried sage and poultry seasoning, cook 1 minute more.
  • Combine cornbread crumbs t the sausage and onion mixture.
  • Pour broth over stuffing. Toss lightly until evenly moistened. Adding more or less to taste.
  • Stuff a turkey or place in a greased casserole.
  • This can be placed in the oven when the turkey comes out to rest for perfect timing.
  • Preheat oven to 350 degree. Bake for 20 minutes or until heated through. For drier stuffing, uncover during last 15 minutes of baking.

1 (16 ounce) package ground pork sausage
1 large onion, chopped
2 large celery ribs, chopped
2 lbs pepperidge farms cornbread stuffing mix
1 1/2 cups coarsely chopped pecans
1/4 cup chopped fresh parsley
2 cups chicken broth
1/2 cup butter
1/2 teaspoon salt
1/4-1/2 teaspoon pepper
1/2 teaspoon dried thyme
1/4 teaspoon ground nutmeg
1/4 teaspoon ground sage
2 hard-boiled eggs, chopped up

Steps:

  • Cook sausage in a large skillet over medium heat, stirring until it crumbles and is no longer pink.
  • Remove sausage, reserving 1 tablespoon drippings in skillet.
  • Drain sausage on paper towels.
  • Saute onion and celery in hot drippings over medium-high heat until tender.
  • Remove vegetables with a slotted spoon.
  • Combine sausage, vegetables, cornbread, and remaining ingredients in a large bowl, stirring gently until moistened, adding more chicken broth as needed.

STUFFING:
1 pound bulk sage pork sausage
1 bunch celery, chopped
2 medium onions, chopped
1 cup chopped fresh mushrooms
1/2 cup chopped sweet red pepper
1/2 cup butter, cubed
1 can (49-1/2 ounces) chicken broth
2 to 3 tablespoons rubbed sage
1 tablespoon poultry seasoning

Steps:

  • In a large bowl, combine the first 5 ingredients. Combine the eggs, milk and oil; stir into dry ingredients just until moistened. Pour into a greased 13x9-in. baking pan. Bake at 425° for 18-20 minutes or until a toothpick comes out clean. Cool on a wire rack. , In a Dutch oven, cook sausage over medium heat until no longer pink; drain and set aside. In the same pan, saute the celery, onions, mushrooms and red pepper in butter until tender. Stir in the broth, seasonings and sausage. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Remove from heat. Cut cornbread into 1/2-in. cubes; fold into sausage mixture. , Just before baking, loosely stuff the turkey. Remove from the refrigerator 30 minutes before baking., Skewer turkey openings; tie drumsticks together with kitchen string. Place breast side up on a rack in a roasting pan. This was something I always looked forward to during the holidays. I don't know why Mama only made it, then! I've broken that tradition by making it anytime I get hungry for it. However, when it's stuffed inside of the turkey, it's even better! I hope you enjoy! :)

Mexican cornbread mix
3 tablespoons butter
1 large onion, diced (about half of a large onion)
3 stalks celery, diced
1 medium bell pepper, diced
1/2 medium red bell pepper, diced (optional)
3 garlic cloves, minced
3 slices toast
1 chicken breast, baked and shredded
2 eggs, lightly beaten
3 -4 cups chicken or 3 -4 cups turkey broth
poultry seasoning and cayenne pepper, to taste

Steps:

  • Prepare cornbread as package directs. I use a Mexican Cornbread mix. Don't use one that contains sugar.
  • When your cornbread has cooled, break it and the toast into a large bowl.
  • Sauté onions, celery, and green bell pepper, optional red bell pepper, and garlic in butter until onions are transparent.
  • Add the shredded chicken and the sautéed veggies into the cornbread mixture. Use your hands to really mix it up.
  • Add poultry seasoning and cayenne pepper, mixing well.
  • Add in the broth a little at a time. Add in just enough to make it thick and somewhat soupy. Mix, well.
  • Give it a taste. It should taste exactly the way you want your dressing to taste. If it needs more spices add them here.
  • When you are content with the taste, stir in the eggs.
  • Pour into a buttered 9 X 13 casserole dish.
  • Bake for 45 minutes or until set.

The family story goes that her in-laws came for dinner, and her father in-law pulled her husband away and asked if they were really that bad off, since there was no meat in the dressing, and since that day, there has always been meat in the dressing.

1 1/2 cups cornmeal
1/2 cup flour
1 teaspoon salt
1 teaspoon baking soda
1 egg
2 cups buttermilk
2 -3 tablespoons drippings (bacon)
1/2 loaf Italian bread (not baguette)
1 turkey giblets
1 teaspoon salt
1 teaspoon black pepper
1 small bunch celery leaves
1 onion, chopped
1/4 cup carrot, chopped (should be about half of a carrot)
1 bay leaf
1 tablespoon parsley
1 egg
1 lb pork sausage
3 onions, chopped
1/2 stalk celery
4 cups water
1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper (or to taste)
1/2 teaspoon sage (or to taste)
1 egg (optional)
1 (7 ounce) can mushrooms
4 tablespoons cornstarch (heaping)
1 cup water
1 (7 ounce) can mushrooms, finely diced (optional)

Steps:

  • Mix cornmeal, flour, salt, soda, 1 egg, buttermilk, drippings.
  • Place in a large cast-iron skillet and bake 25 minutes at 450F or until golden and a toothpick comes out dry.
  • While bread is baking, dry out 1/2 loaf of plain bread by baking it in the same oven for a couple minutes.
  • When both breads are cool enough to handle, crumble the cornbread and and pull the Italian bread apart in small chunks.
  • In a sauce pan, add giblets, salt, pepper, leaves of celery, 1 chopped onion, 1/2 carrot, chopped, bay leaf, and parsley. Place a whole egg in the water as well. Boil for 1/2 hour.
  • In a large frying pan, combine pork sausage, 3 chopped onions, and 1/2 stalk celery. Fry until sausage is done and add to the crumbled bread in a large bowl.
  • Mix the bread and sausage mixture, and one can of mushrooms with juice, adding about a quarter cup to half cup of the broth from the giblets for moisture.
  • Optional: Add an egg to make the stuffing hold together better.
  • Add salt, pepper and sage to taste.
  • For the gravy, finely dice the boiled egg and the gizzard of the turkey. Grate the liver. Combine with juice from boiling giblets. Turn burner on high and bring to a boil.
  • Optional: Add one can of mushrooms.
  • Add salt and pepper to taste.
  • For one quart of of gravy, mix four heaping tablespoons of corn starch into a bowl of 1 cup water and mix.
  • When the sauce has reached the boil, stir in the starch mixture.

12 cups of day-old cornbread (I make 3 packages of cornbread mix and allow to cool overnight)
4 tablespoons olive oil
4 tablespoons fresh thyme leaves or 1 tablespoon dried thyme
2 lbs bulk pork sausage
2 tablespoons unsalted butter
3 cups chopped onions
6 stalks celery, chopped
1 -2 cup dried cranberries or 1 -2 cup dried cherries
4 tablespoons chopped fresh sage leaves or 2 teaspoons dried sage
1/4 cup chopped parsley
2 cups chicken broth
salt and pepper

Steps:

  • Preheat oven to 350.
  • Cut cornbread into 1-inch cubes and place in large mixing bowl with 2 tblsp of olive oil.
  • Add 2 tblsp of fresh thyme (1/2 tblsp dried) to mixing bowl and toss cornbread to coat.
  • Spread the cornbread out on baking sheets and bake at 350 until slightly toasted (about 15 minutes).
  • Allow toasted cornbread to cool at room temperature for about 30 minutes, then return to bowl.
  • While cornbread is cooling, brown bulk sausage over medium heat until cooked through/lightly browned.
  • Use a slotted spoon to remove sausage from frying pan (or drain grease) and add sausage to mixing bowl.
  • Heat remaining 2 tblsp of olive oil and butter over medium heat and add onion and celery.
  • Saute onions and celery for about 10 minutes.
  • Add dried cranberries or cherries to onion/celery and saute for about 5 minutes.
  • Fold the mixture into the bowl with cornbread and sausage.
  • Add the remaining thyme, sage, parsley to the mixing bowl and toss well with spatula.
  • Drizzle the mixture with chicken broth to moisten and add salt and pepper to taste.
  • Place into baking pan (s), cover with foil and cook for 25-30 minutes.
