2 large navel oranges
1 (12-ounce) package fresh cranberries, picked over
3/4 cup sugar
1/4 cup water
1/8 teaspoon ground ginger
1/2 teaspoon fresh lemon juice
1/2 teaspoon fresh lime juice

Steps:

  • Remove the peel and pith from oranges with a pairing knife, cut each section into quarters.
  • In a heavy saucepan over medium heat combine oranges, cranberries, sugar, water, and ground ginger. Cook for 15 minutes, stirring occasionally. Remove from heat and stir in lemon and lime juice. Cover sauce and chill before serving. Can be made up to 3 days prior to serving.

  • combine everything (except almonds) in a skillet.
  • cook uncovered over medium heat until most of the cranberries pop open and the mixture is thickened, 7-10 minute.
  • if desired, add almonds.
  • let cool, and serve or refrigerate up to a day.

1 cup firmly packed brown sugar
1/2 cup freshly squeezed orange juice
1 whole orange, peeled
1/4 cup pure maple syrup
1 tablespoon orange zest

1/2 teaspoon ground ginger
1/2 teaspoon ground cloves

Steps:

  • Place all the ingredients in the container of a food processor fitted with the metal chopping blade. Process until the mixture is chopped to the consistency you like. Cover and refrigerate.

2 cups cranberries, whole, raw, washed
1 small onion, small means should be able to cup hand around onion
3/4 cup sour cream
1/2 cup sugar
2 tablespoons prepared horseradish, red is a bit milder than white

Steps:

  • Grind the raw berries and onion together. (use an old-fashioned meat grinder or a food processor) - it should be chunky not a puree.
  • Add everything else and mix.
  • Put in a plastic container and freeze.
  • Early Thanksgiving morning, move it from freezer to refrigerator compartment to thaw. ("It should still have some little icy slivers left.").
  • The relish will be thick, creamy and shocking pink.

This is my mother-in-law's recipe and as far as my husband and son are concerned, it is the most important part of thanksgiving dinner. It's nice to serve this in a glass bowl to show off the festive red color. Preparation time does not include overnight refrigeration.

1 (12 ounce) bag cranberries
1 (6 ounce) box red Jell-O (pick your favorite red flavor, or use two 3-oz boxes and mix flavors)
1 apple, cored but unpeeled
1 orange, seeded, but unpeeled
1 stalk celery, diced
1/2 cup chopped pecans or 1/2 cup walnuts
1 (8 ounce) can crushed pineapple, undrained (I typically use a 16 oz can and it also works fine)
1/4-1/2 cup sugar (optional)

Steps:

  • Chop or grind cranberries, orange (with rind) and apple (with peel). Make sure you do this in such a way as to conserve all of the juice.
  • You can use a food processor or one of the old metal food grinders that clamp to your table - mine drips horribly, but if you have kids helping, it's lots of fun for them to turn the crank and hear the cranberries pop. You could of course chop it all by hand with a knife, but you'll want to chop everything very finely.
  • Place fruits and their juices in a serving dish/bowl that will hold 8-10 cups.
  • Add diced celery, nuts and crushed pineapple with juice.
  • Dissolve jello in recommended amount of boiling water (2 cups), and add to the fruit/nut mixture.
  • Depending on how juicy your fruit is, you may not need to add any cold water to the mixture. If you think it will need it, don't add more than 1 cup.
  • Depending on the tartness of your fruits, you may or may not want to add some sugar, perhaps 1/2 cup. (I just taste it before putting it in the fridge to set and add sugar if it seems too tart.).
  • Refrigerate for several hours till set(overnight is good).

1/3 cup granulated sugar
3 cups cranberries

  • In a medium saucepan over medium heat, combine orange & apple juice and sugar. Stir until sugar is dissolved and then bring it to a boil.
  • Add cranberries, stir and return to a boil. Reduce heat to medium-low and add orange & lemon zest; stir. Let simmer gently for 10 minutes, stirring occasionally.

1 tangerine
2 cups fresh cranberries or 2 cups frozen cranberries
1 tablespoon chopped fresh ginger
1/2 cup white sugar
2 tablespoons freshly squeezed lime juice

Steps:

  • With a zester or a grater, remove the zest from the grapefruit and the tangerine; set aside.
  • Peel the 2 fruits and cut into segments, removing all pith, seeds and membranes.
  • Transfer to a food processor and swirl around until finely chopped; place in a large bowl.
  • Add the cranberries (no need to thaw if frozen) and ginger to food processor and pulse until chopped; be careful not to overprocess.
  • Add cranberry-ginger mixture to citrus fruit in bowl and stir in sugar, lime juice and zest; stir until sugar is dissolved.
  • Taste and add more sugar if you feel it's necessary.
  • Refrigerate for at least 2 hours to let flavours blend; keeps well for about 2 weeks.
  • Makes just over 2 cups.

3 c cranberries, fresh see note
1 large navel orange
grated orange peel
water
1 c sugar
1/2 tsp salt

Steps:

  • 1. Rinse cranberries and remove any that are soft and/or shriveled. Measure three cups.
  • 2. Grate the zest off the orange and place the zest in a one cup measuring cup.
  • 3. Juice the orange and pour into the measuring cup. Fill up to one cup mark with water.
  • 4. Place sugar, salt, and orange juice mixture into medium sauce pan, heat to boiling.
  • 5. Add cranberries and return to boil, then lower the heat and simmer about ten minutes until it reaches the desired consistency, stirring occasionally.
  • 6. Place in a decorative dish and allow to cool; refrigerate. Store leftovers in the refrigerator.
  • 7. NOTE: One twelve ounce package is approximately three cups of cranberries. You may use fresh or frozen cranberries.
