MADELEINES WITH LEMON CURD AND RASPBERRIES

A favorite French pastry snack. Make these light, sweet treats to have with tea or coffee or a satisfying, petite dessert after dinner. Filled with lemon curd and raspberry, these are delicious.

3 large eggs
1 cup (130g) sugar
2 cups + 1 tbsp (200g) all-purpose flour
1 tbsp (10g) baking powder
zest of 1 lemon
8 ounces (200g) butter, melted and cooled
1/4 cup (60 ml) milk
1 tbsp (20 g) honey
1 pint raspberries
1 cup lemon curd (store bought or homemade)
confectioner's (icing) sugar, for dusting

Steps:

  • In a large bowl, whip the eggs with the sugar until pale and thickened. In a medium bowl, whisk together the flour, baking powder and lemon zest. Combine the milk and honey with the cooled butter, then add to the egg mixture. Add half the flour and gently fold in. Add the remaining flour and fold in. Cover and refrigerate for at least one hour or overnight.
  • When ready to bake, preheat oven to 375°F (190°C). Spray madeleine pans (or mini muffin/cupcake pans) with baking spray or brush with butter. Fill each well with a heaping tablespoon of batter, pressing a raspberry into each one. Bake for 5 minutes, then reduce heat to 325°F (160°C). Bake for 5-6 minutes more or until lightly golden around the edges. Transfer to a wire rack and leave until cool enough to handle. Wash and dry the pans and repeat baking until all batter is used.
  • Fill a piping bag or plastic, zip top bag with the lemon curd. Snip a very small opening and pipe about a teaspoon of curd into the raspberry. Dust each madeleine with confectioner's sugar and serve.

I guarantee that you'll be returning to the fridge throughout the day for a cheeky spoonful of this curd. Slather it on a slice of cake or gift a jar to a friend; either way, you'll be happy this recipe makes a little extra. When making curd, measure everything beforehand and have it at the ready. Using a double boiler is an insurance policy to prevent scrambling the eggs, and continual whisking is a must.

Number Of Ingredients 7

1 1/3 cups (175 grams) raspberries
5 eggs, at room temperature
3/4 cup (150 grams) granulated sugar
1/8 teaspoon salt
Finely grated zest of 1 lemon
8 tablespoons (1 stick/115 grams) unsalted butter, at room temperature, cubed
1/2 cup (120 milliliters) freshly squeezed lemon juice, strained

Steps:

  • To set up the bottom of a double boiler, bring an inch of water to a gentle simmer on medium heat in a medium saucepan.
  • Place the raspberries in a resealable plastic bag or small bowl and crush them.
  • Whisk together the eggs, sugar, salt, and lemon zest in a medium metal or glass bowl. The bowl will be used as the top of the double boiler. Place the bowl on top of the simmering water. Make sure the bottom of the bowl doesn't touch the water. Continue whisking until the sugar has dissolved.
  • Add the butter, a cube at a time, making sure that each piece melts before another is added. The mixture will begin to thicken like a custard.
  • Finally, add the lemon juice and crushed raspberries and continue whisking until the curd thickens again. This process takes approximately 10 minutes or until a candy thermometer reads 165 degrees F.
  • Strain the curd through a sieve. Cover the surface of the curd with a film of plastic wrap to stop a skin from forming. Store any extra curd in sealed sterilized jars. Keep in fridge.

2/3 cup plus 1 tablespoon/150 g butter

Zest of 1 lemon

Steps:

  • Grease madeleine tins and set in the freezer. Heat the oven 400 degrees F/200 degrees C.
  • Sift together the flour and baking powder.
  • In a small saucepan melt the butter, and stir in the sugar, honey and lemon zest. Lightly beat the eggs, and temper them into the butter mixture. Whisk into the flour to make a smooth batter. Pour into the molds and bake until the cakes are puffed up, golden around the edges and cooked through, 10 to 12 minutes, without opening the door during cooking.

24 raspberries
Lemon Curd
4 whole eggs
1 1/2 cups sugar
2/3 cups lemon juice (from 4 to 6 lemons)
Zest from 4 lemons
6 ounces (1 1/2 sticks) butter, melted

Steps:

  • For the madeleines: Beat the sugar with the eggs until pale and frothy. Put the flour and baking powder into a separate bowl and add the lemon zest. Mix the honey and milk with the cooled butter, and then add to the eggs. In two batches, fold in the flour mixture. Cover and leave to rest in the fridge for a few hours, or overnight. Preheat the oven to 375 degrees F/190 degrees C /Gas 5. Butter and flour a 12-shell madeleine tin. Put a heaped tablespoon of batter into each madeleine shell and press a raspberry deep into the batter. Bake for 5 minutes and turn the oven off for 1 minute (the madeleines will get their signature peaks), and then turn the oven on to 325F/160 degrees C/Gas 3 and bake for a further 5 minutes. Transfer the madeleines to a wire rack and leave for a few minutes until cool enough to handle. Repeat with the remaining batter and raspberries. While the second batch is baking, pop the piping nozzle into the mound in each baked madeleine and squirt in a teaspoon's worth of lemon curd. Repeat with the second batch. Dust with icing sugar and serve straightaway. LEMON CURD Beat the eggs and sugar in heavy-bottomed sauce pan. Add the lemon juice, zest and butter. Heat the mixture to a boil, then remove from the heat and strain the mixture through a fine-mesh sieve. Transfer the lemon curd to an airtight container and store in the refrigerator for up to a few weeks.
