Dirty Rice image

This classic Cajun dish pays homage to the Louisiana holy trinity (onions, bell peppers and celery). The finely chopped proteins give the rice its signature "dirty" look. Traditionally, dirty rice includes chicken liver -- you can omit it, but don't fear the liver! It adds another layer of texture and depth of flavor.

1 tablespoon olive oil
8 ounces hot sage pork sausage, casing removed
8 ounces ground beef
6 ounces chicken livers, finely chopped (optional)
1 medium onion, diced
1 green bell pepper, diced
2 large celery ribs, diced
3 large garlic cloves, minced
1 teaspoon fresh thyme leaves, chopped
2 bay leaves
1 1/2 cups long-grain white rice, rinsed and drained
1/2 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
2 1/2 cups beef broth
2 tablespoons Worcestershire sauce
3 scallions, sliced

Steps:

  • Heat the olive oil in a Dutch oven or large heavy-bottomed pot over medium-high heat. Add the sausage, ground beef and chicken livers and cook, breaking the meat into small bits with a wooden spoon, until no longer pink, 3 to 4 minutes. Transfer to a medium heatproof bowl with a slotted spoon.
  • Remove and discard all but 2 tablespoons of the fat from the Dutch oven. Add the onion, bell pepper and celery and cook down, stirring occasionally, until the vegetables have softened, 4 to 5 minutes. Add the garlic, thyme and bay leaves and cook, stirring frequently, until fragrant, about 1 minute. Stir in the rice, oregano, smoked paprika, cayenne, 1 1/2 teaspoons salt and 1/2 teaspoon black pepper and cook about 30 seconds. Stir the cooked meat back in, then add the beef broth and Worcestershire sauce. Bring to a boil, reduce the heat to a low simmer and cover. Cook until the rice is tender and has absorbed the liquid, about 18 minutes.
  • Remove from the heat. Remove and discard the bay leaves, stir in the scallions and season.

2 cups enriched rice
4 cups chicken stock
4 cloves minced garlic
1 1/2 cups diced white onion
1 cup diced green bell pepper
2 tablespoons vegetable oil
Salt and pepper
1 teaspoon dried thyme
1 bay leaf
1/4 teaspoon cayenne pepper
1/4 pound pork sausage meat
1/4 pound ground beef
1/2 pound chicken giblets
1 bunch green onions, chopped

Steps:

  • In colander, rinse rice several times until water runs clear. Place rice in pot and add chicken stock. Bring to a boil then cover and simmer for 20 minutes. Do not overcook.
  • Saute garlic, onions and bell peppers in vegetable oil until soft for about 15 minutes. Season with salt, pepper, thyme, bay leaf and cayenne and add to rice. Cook sausage and ground beef together in sautepan and add to rice.
  • In separate pot place giblets, cover with water and simmer for 30 minutes with green onions, salt and pepper. Let cool enough to chop into small dice then add to rice mixture. Mix rice well and let simmer on lowest heat for an additional 30 minutes, stirring continuously, until flavors meld.

1 teaspoon ground black pepper
2 cups chicken stock
2 bay leaves
5 cups cooked rice, chilled
1/4 cup minced fresh parsley leaves
3 tablespoons vegetable oil
1 pound chicken livers, chopped fine
1/2 pound pork sausage, removed from casings and crumbled
1 cup finely chopped yellow onion
3/4 cup finely chopped green bell pepper
1/4 cup finely chopped celery
2 teaspoons minced garlic
1 tablespoon Essence, recipe follows
1 teaspoon salt
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • In a large, heavy saute pan, heat 2 tablespoons of the oil over medium-high heat. Add the chicken livers and sausage and cook, stirring, until the meat is browned, about 6 minutes. Add the remaining tablespoon of oil, the onion, bell pepper, celery, garlic, Essence, salt and pepper, and cook, stirring, for 5 minutes. Add the stock and bay leaves and scrape the bottom of the pan to loosen any browned bits. Bring to a boil, then lower the heat and simmer for 5 minutes. Add the rice and stir thoroughly. Cook until the rice is heated through, about 5 minutes. Remove from the heat and remove the bay leaves. Stir in the parsley and serve.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

MADELINE ROSELAND'S DIRTY RICE



Madeline Roseland's Dirty Rice image

Madeline Roseland is my grandmother from Louisiana. She made this every year for Thanksgiving, and like most Cajun recipes, the amounts are general, as well as the prep and cooking times. Cook the rice until it's done. If you use the microwave, it will be finished sooner than the rice steamer. Keep adding spices until it tastes good to you. It should be as spicy as you can handle. If you've ever read a Cajun cookbook, you'll know I'm telling the truth when I say they don't usually use cookbooks or measuring spoons. They just know it and hand it down to the next generation by teaching in the kitchen while actually preparing the recipe. The turkey drippings are what makes this rice so good, and for the very best flavor, use the turkey juice from the bottom of the roasting pan when your turkey is almost done. It just isn't the same without it. I know lots of people don't like the liver, but if you do this recipe correctly, the liver taste does not come through as liver, it just adds a distinctive flavor, but is not overwhelmingly liver. Granny also used Bruce's Ma Cayenne pepper, which has a flavor all its own, but I think the company went out of business years ago, because we haven't been able to find it in forever. Other Cajun brand peppers work better than the traditional red peppers.

2 cups white rice
4 cups turkey drippings, juice
1 lb ground beef
1/2 lb ground chicken liver
1 large onion, chopped
1 large bell pepper, chopped
3 -4 stalks celery, finely chopped
4 fresh garlic cloves, minced
1/2 cup real unsalted butter
1/2 teaspoon cayenne pepper, more to taste
1/2 teaspoon cajun spices, more to taste (I use Tony Chaceries)
salt
black pepper

Steps:

  • Cook rice in turkey stock in microwave or rice steamer.
  • If using the steamer, reduce turkey stock to 2 cups.
  • Sauté garlic and vegetables in butter until soft.
  • Add ground meat and seasoning to sautéed vegetables.
  • Brown until done.
  • Do not drain liquid--this is not a low fat recipe!
  • Just continue cooking until the liquid is reduced almost completely (leave it a little juicy) back into the meat and vegetable mixture. You don't want the rice runny, just moist.
  • Stir meat mixture into rice and serve.

This a great dish I adapted from several recipes. The great thing is you can make this as spicy as you want. This goes great with a splash of hot sauce on top and some corn bread. Yummy!

1/2 lb ground beef
1/2 lb hot Italian sausage, casings removed and crumbled
1 yellow onion, diced
2 celery ribs, sliced
8 ounces dirty rice mix
2 cups water
1 (10 ounce) can of hot diced tomatoes and green chilies
1 (15 ounce) can dark red kidney beans, drained
1 1/2 teaspoons cajun seasoning

Steps:

  • In a skillet, cook the ground beef and sausage until almost completely brown.
  • Add the onion and celery. Cook for an additional five minutes, then drain off the fat.
  • In a separate pot, combine the water, dirty rice mix, tomatoes, and kidney beans.
  • Bring to a boil and add in the cooked meat.
  • Return to bubble, cover, and simmer for 25 minutes.

Dirty Rice is a staple in South Louisiana. I fell in love with this dressing at an Easter family gathering. I begged and got this wonderful recipe from my husband's Aunt Adine Laborde (TeeTa as she is known in the family) I hope you enjoy it as much as we do.

1/2 cup butter
2 large onions (chopped)
4 garlic cloves (chopped)
4 celery ribs (chopped)
4 medium green peppers (chopped)
2 lbs lean ground meat
4 medium eggplants
1 teaspoon cayenne pepper
2 teaspoons salt
1 teaspoon black pepper
3 cups rice (cooked)
1/2 cup parsley
1 bunch green onion (chopped)

Steps:

  • Peel and cube eggplant, boil 10 minutes and drain.
  • Melt butter in heavy large dutch oven.
  • Saute onion, garlic, celery, peppers until soft, add ground meat and cook until meat is done.
  • Add eggplant to meat mixture and mash.
  • Cook meat/eggplant mixture an additional 15-20 minutes.
  • Add salt and peppers (adjust for taste) Then fold in rice and green onions in meat mixture.
  • Turn off heat and let steam for 30 minutes.
  • Fold in parsley just before serving.

Found on an advertising flyer, nutritious and full of flavour and texture. Prep time does not allow for the bean preparation, although if you substitute canned beans, then the time stated is the time it will take!

2 tablespoons olive oil
3 garlic cloves, minced
1 cup chopped onion
1 green bell pepper, chopped
1 tablespoon chili powder
1/4 teaspoon crushed red pepper flakes
1 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1 1/3 cups uncooked white rice
2 3/4 cups water
1 teaspoon salt
1 1/3 cups corn kernels, blanched
1 cup black beans, cooked and drained
1 (410 g) can chopped tomatoes with juice (I use a 420 gr can of tomatoees)
1/4 cup toasted pine nuts
fresh ground black pepper
1 red onion, thinly sliced
1 tablespoon fresh lime juice
2 tablespoons chopped fresh cilantro
1 lime, cut into wedges

Steps:

  • Beans : Soak for 2 - 4 hours.
  • To cook, drain the soaking water and add cold water, 1 part beans to 2 or 3 parts cold water. Bring to a boil, then reduce heat to a very slow simmer, so the beans stay in their jackets. Simmer for 2 hours.
  • Lightly toast pine nuts.
  • In a heavy saucepan, heat 1 tablespoon of the olive oil over medium heat.
  • Add the garlic and the chopped onions; saute for 5 minutes, stirring frequently.
  • Mix in the bell pepper, chili powder, chili flakes, cumin, and cinnamon.
  • Saute for 2 minutes.
  • Pour the rice into the saucepan and stir to coat.
  • Add the water and 1 teaspoon salt, and bring the rice to a boil over high heat.
  • Cover the pan and turn the heat to low.
  • Simmer the rice for 25 minutes.
  • When the rice is cooked, mix in tomatoes, corn, black beans, and pine nuts.
  • Stir in salt, pepper and lime juice.
  • When the mixture is heated through, spoon it onto plates and top with the sliced red onion and cilantro.
  • Serve a wedge or two of lime with each plate to squeeze over the rice.

1/2 onion, finely diced
3 red bell peppers, finely diced
3 green bell peppers, finely diced
2 yellow bell peppers, finely diced
1 1/2 tablespoons Old Bay Seasoning
1 1/2 cups long-grain white rice
2 3/4 cups boiling water
4 cups canned black-eyed peas, rinsed and drained
salt and pepper
2/3 cup fresh cilantro, finey chopped

Steps:

  • In a large ovenproof pan over meidum-high heat, melt butter; add onions and peppers to pan and stir until limp, about 5 minutes.
  • Add Old Bay seasoning and rice and continue cooking until rice is translucent, about 2 minutes.
  • Pour 2 3/4 cups boiling water into rice mixture.
  • Stir well until rice returns to a boil.
  • Stir in the black-eyed peas and season well with salt and pepper.
  • Cover pan with a sheet of buttered waxed paper or prchment paper and then with aluminum foil.
  • Bake in 400°F oven for 15 to 18 minutes.
  • When the rice is done, fold in the cilantro and serve.

  • 4. Mix stock cube and boiling water and desolve completely.
  • 5. add rice and stock liquid to the meat and veg and stir.
  • 6. let summer for 30 - 40 mins until water is evaporated and rice is tender. (if rice is still not tender add another 1/2 cup water and let it simmer and check rice again when evaporated.).
