HAWAIIAN CHICKEN FINGERS

1/3 cup Thai sweet chili sauce
2 tablespoons mayonnaise
Juice of 1/2 lime
For the chicken fingers:
1/2 cup sweetened shredded coconut
1 1/4 cups panko breadcrumbs
1 teaspoon paprika
3 tablespoons coconut oil, melted
2 large eggs
Kosher salt
Cooking spray
2 large skinless, boneless chicken breasts, each cut into 8 strips

Steps:

  • Make the dipping sauce: Whisk the sweet chili sauce, mayonnaise and lime juice in a bowl.
  • Make the chicken fingers: Preheat the oven to 425 degrees F. Spread the coconut on a baking sheet and bake, stirring occasionally, until golden brown, about 10 minutes. Transfer to a shallow dish and let cool, then stir in the panko, paprika and coconut oil. (The mixture should resemble wet sand.) Whisk the eggs and 1/2 teaspoon salt in a separate shallow dish.
  • Set a rack on a baking sheet; coat the rack with cooking spray. Dip the chicken in the egg mixture, shaking off any excess; coat with the coconut mixture, pressing firmly to adhere. Place the chicken on the prepared rack; coat generously with cooking spray. Bake until cooked through and golden brown, 15 to 20 minutes. Serve with the dipping sauce.

1 teaspoon ground mustard
1 can (8 ounces) pineapple chunks, undrained
Hot cooked rice

Steps:

  • Preheat oven to 375°. Place chicken in a greased 13x9-in. baking dish. In a small bowl, mix ketchup, soup, green pepper, vinegar, brown sugar and mustard; stir in pineapple. Pour over chicken., Bake, uncovered, 25-35 minutes or until a thermometer reads 165°. Serve with rice. Freeze option: Freeze cooled chicken mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in chicken reads 165°, stirring occasionally.

1 teaspoon ground ginger
1 teaspoon paprika
1 tablespoon onion powder
2 tablespoons garlic salt
3 tablespoons cider vinegar
1 cup ketchup
¼ cup soy sauce
1 (20 ounce) can crushed pineapple with juice
¼ cup packed brown sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Arrange chicken pieces in a single layer in a well greased 9x13 inch baking dish. In a small bowl mix together the ginger, paprika, onion powder and garlic salt. Add the vinegar and mix well. Divide this mixture. Brush 1/2 over the chicken pieces and bake in the preheated oven for 15 minutes.
  • Turn the chicken pieces, baste with the remaining 1/2 of the vinegar mixture and bake for 15 minutes longer. Meanwhile, in a medium bowl combine the ketchup, soy sauce, pineapple and brown sugar. 6 large chicken breasts, cut in half
1/2 cup butter
1 (15 ounce) can pineapple chunks
1/2 cup pressed brown sugar
4 tablespoons cornstarch
1/4 cup very hot water
2 teaspoons salt
1/2 cup vinegar
1 teaspoon Worcestershire sauce
2 teaspoons chili powder
2/3 cup ketchup
2 teaspoons soy sauce

Steps:

  • Set oven to 350°F.
  • Place chicken in baking dish.
  • Melt butter in large skillet on low heat.
  • Mix corn starch and hot water in glass or small bowl until well blended; set aside.
  • Add excess pineapple juice from can of pineapple chunks.
  • Sprinkle pineapple chunks over chicken.
  • Mix brown sugar, salt, vinegar, worcestershire sauce, and chili powder in skillet until well blended.
  • Turn skillet to medium heat and let simmer for 2 minutes.
  • Stir in ketchup and soy sauce.
  • Stir in corn starch mixture and blend well, sauce will become very thick.
  • Let simmer 2-3 more minutes.
  • Pour sauce over chicken and pineapple chunks.
  • Bake chicken for 50-60 minutes, or until chicken is cooked completely through.

½ cup brown sugar ((or decrease to ⅓ cup or ¼ cup of brown sugar for a less-sweet dish))
½ cup less sodium soy sauce
1 ½ cups less sodium chicken broth
2 teaspoons minced garlic
1 cup uncooked long grain white rice
1 cup diced onion ((I use frozen diced onion for a shortcut))
1 red bell pepper, finely chopped
1 (20 ounce) can pineapple tidbits in juice, not drained
2 cups cooked, shredded or diced chicken (such as the meat from a rotisserie chicken)
6 slices cooked bacon, chopped or crumbled
Optional garnish: sliced green onions, chives, or fresh herbs

Steps:

  • Preheat oven to 425°F (220°C). Grease a 9 x 13-inch baking dish.
  • In the prepared dish (or in a separate bowl), whisk together brown sugar, soy sauce, garlic, and chicken broth. Add uncooked rice, onion, bell pepper, and pineapple (with its juice).
  • Cover the dish tightly with foil. Bake for 50-55 minutes. Uncover the dish and use a fork to fluff the rice. At this point, the rice should be almost tender and most of the liquid in the dish should be absorbed. If the rice is still very firm, or if there's still a lot of sauce in the dish, cover and return it to the oven for 5-10 more minutes, or until the rice is just about done.
  • Stir in the cooked chicken. Sprinkle the cooked, chopped bacon on top.

1 lb boneless chicken breast half
1 teaspoon salt
1 (20 ounce) can pineapple slices
1 garlic clove, pressed
1 tablespoon cornstarch
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
1 teaspoon rosemary, crumbled
1 (10 ounce) jar maraschino cherries, halves

Steps:

  • Preheat oven to 400°F.
  • Rinse chicken and place in a shallow casserole dish or 9X13 pan. Sprinkle chicken with salt.

1/2 cup frozen orange juice concentrate
1/2 cup soy sauce

Steps:

  • Cut wings into sections and discard tips or save for another use.
  • Place wings in a large resealable plastic ziplock bag.

1 C cornstarch
3 eggs (large, beaten)
1/4 C vegetable oil
salt and pepper (to taste)
1 C pineapple juice (I used the juice from the can)
1/2 C dark brown sugar
1/3 C soy sauce (low sodium)
1 garlic clove (minced)
1/2 T cornstarch
1 red bell pepper (Medium, chopped)
20 oz Pineapple tidbits (As per instructions, use the juice to mix with the sauce)

Steps:

  • Grease a 9x13-inch baking pan and preheat the oven to 325 degrees
  • Season chicken with salt and pepper and cut in bite-size pieces.
  • Place cornstarch in a Ziploc bag, and eggs in a separate medium bowl.
  • Shake up chicken pieces in cornstarch to coat, then coat in eggs.
  • Heat vegetable oil in a large, non-stick skillet over medium-high heat.
  • Cook coated chicken, until golden-brown on all sides. (Don't cook it all the way through. It will finish in the oven.) Place chicken in the prepared dish.
  • In a medium bowl whisk together the Hawaiian chicken marinade ingredients. Pour evenly over chicken and let the flavors meld for 10-15 minutes.

1/3 cup olive oil
1/3 packed light brown sugar
