- Toss all ingredients together in a large bowl.
- Line a baking sheet with parchment paper or foil.
- Roast almond mixture until lightly toasted and skins are just beginning to split (about 20 minutes).

ROASTED ALMOND BUTTER
While many nut butters contain added sugar or hydrogenated oils, this homemade recipe contains just nuts, and maybe a little salt if you're so inclined. The secret to a deeply nutty flavor is twofold: Leaving the skins on and roasting the almonds before puréeing both add complexity. For a chocolate version, blend in some maple syrup and cacao nibs (start with about 2 tablespoons of each, then adjust to your liking). A few drops of pure almond extract would also add a nice flavor boost, reminiscent of marzipan.

- Heat oven to 350 degrees. Spread nuts in an even layer on a rimmed baking sheet. Bake until golden and nicely toasted, about 20 minutes, stirring halfway through. Transfer to a rack and cool completely, 30 minutes.
- Place nuts in a food processor and purée until smooth, about 8 minutes, scraping the sides and bottom of the bowl as needed (mixture may clump up, but will eventually become creamy). Season to taste with salt, if desired. Almond butter will keep in an airtight container in the refrigerator for at least 3 weeks.

- Preheat oven to 350 degree Fahrenheit.
- Place almonds on an unlined baking sheet. Bake for 10 to 12 minutes, watching to ensure they don't burn and rotating the pan about halfway through cooking.
- Remove from the oven and allow to cool.Note: To speed up cooling time, you can place the almonds on a new baking sheet and place into the fridge until cooled.
- Place almonds in a food processor (I use a 12-cup processor).
- Process for 8 to 10 minutes or until creamy, stopping to scrape down sides of processor with a spatula every couple of minutes, or as necessary. Note: The mixture will initially look very powdery and dry (this is completely normal, just go with it; eventually the almonds will break down and will be smooth and creamy). Also, depending on the power of the processor you are using, the process may take a little longer, but that's okay.
- Once mixture is smooth and creamy, add salt and process for another minute until combined.
- Transfer the almond butter to a storage jar, cover, refrigerate and enjoy within 2 weeks. Yields about 1 cup. Note: Mixture will thicken slightly in the fridge. Enjoy!

- Add the almonds to a pan lined with parchment paper. Roast for 12-15 minutes until them start to smell really fragrant. Be careful to watch them so they don't burn.
- Add the almonds to a food processor and process for about 5-10 minutes, scraping the sides as needed during the process. You will have to do this a few times in the beginning. It will seem like it is just going to stay a flour, but trust me, after a few minutes it will start to come together. Have patience. Once it starts to turn into butter, let it go until it becomes super duper creamy. Don't stop too soon or it won't become silky smooth. Don't stop when it's still overly thick and chunky. Once it is easily pouring off of a spoon, then it is done. The roasted almonds give a wonderful sweetness. Yum.

- 1. position a rack in the center of the oven and heat the oven to 400°. In a small pan over low heat, melt the butter with the sugar and 1 teaspoon salt, stirring. Put the almonds in mixing bowl, scrape the butter mixture into the bowl and toss thoroughly to coat.
- 2. Scrape the almonds and anything remaining in the bowl onto a large rimmed baking sheet. Spread evenly. Roast until fragrant and darkened to a Rich Brown, 11 to 13 minutes. Any exposed almond meat should be a deep golden color. Be sure not to under cook. Remove from the oven and drizzle with a little of the olive oil and toss with 1 teaspoon salt. Let cool completely. They will get crunchier as they cool. Scrape the almonds and all the contents of the pan, there will be some yummy brown stuff, into an airtight container and store in refrigerator for a week to 10 days. Makes about 2 1/4 cups

HONEY ROASTED ALMOND BUTTER
Almonds are roasted with sweet honey and rich coconut oil then blended in a food processor until deliciously creamy.

- Preheat oven to 350 degrees F. In a small mixing bowl whisk together melted coconut oil, 3 Tbsp honey and 1/8 tsp salt until well combined. Place almonds in a mixing bowl then pour honey mixture over almonds and toss to evenly coat.
- Spread almonds into an even layer on a baking sheet lined with a silicone liner (scrape any excess honey from bowl using a spatula and spread over almonds). Bake in preheated oven 14 - 15 minutes until nicely roasted, tossing once halfway through. Cool completely, about 20 minutes.
- Pour almonds (and any honey mixture from baking mat) into a food processor. Pulse until ground into butter, stopping and scrapping down sides and bottom of mixer every few minutes (processing time will vary depending on food processor models. It will take anywhere from 8 - 20 minutes). Near end of mixing, if more sweetness is desired add up to 1 Tbsp honey and another pinch or two of salt as desired. Store in an airtight container in refrigerator.

ALMOND BUTTER
Steps:
- 1.Place all ingredients into the Vitamix container in the order listed and secure lid.
- 2.Select Variable 1.
- 3.Turn machine on and slowly increase speed to Variable 10, then to High.
- 4.Use the tamper to press the ingredients into the blades.
- 5.In 1 minute you will hear a high-pitched chugging sound. Once the butter begins to flow freely through the blades, the motor sound will change and become low and laboring. Stop machine.
- 6.Store in an airtight container. It can also be frozen for longer storage.
