FESTIVAL-STYLE GRILLED ITALIAN SAUSAGE SANDWICHES

Festival-Style Grilled Italian Sausage Sandwiches image

These delicious grilled sausage sandwiches are my attempt to duplicate the ones I ate when I was growing up and attended Italian street festivals in the North End of Boston. They come together really quickly, and make a great summer lunch. Choose hot or mild sausages as you prefer.

Categories     World Cuisine Recipes     European     Italian

Time 30m

Yield 4

Number Of Ingredients 7

4 (4 ounce) links hot Italian sausage
1 red bell pepper, halved and seeded
1 small onion, peeled and cut in half crosswise
2 teaspoons olive oil
salt and pepper to taste
1 tablespoon olive oil
4 (6 inch) sandwich rolls, split and toasted

Steps:

  • Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.
  • Pierce the sausages in a few places with a fork, and set aside. Slice off the bottoms of the onion halves so they will sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil.
  • Place the sausages, onions, and peppers on the preheated grill. Cook and turn the sausages until well browned and juices run clear. Cook vegetables until tender and peppers are slightly charred. Remove vegetables and sausages from the grill.

GRILLED SAUSAGE AND PEPPERS SANDWICHES

Grilled Sausage and Peppers Sandwiches image

A grill basket makes easy work of preparing these satisfying sausage sandwiches. A little sweetness from balsamic vinegar and a dose of heat from the serrano pepper take the flavors to the next level. We brush the buns with herbed oil before stuffing them to the brim and digging in.

Provided by Food Network Kitchen

Categories     main-dish

Time 45m

Yield 6 sandwiches

Number Of Ingredients 13

1 tablespoon balsamic vinegar
1 clove garlic, finely grated
1 1/2 teaspoons Italian seasoning
Kosher salt and freshly ground black pepper
5 tablespoons olive oil
1 red bell pepper, stemmed, seeded and sliced into 1-inch wide pieces
1 green bell pepper, stemmed, seeded and sliced into 1-inch wide pieces
1 serrano pepper, halved lengthwise, seeds and membranes removed
1 medium yellow onion, trimmed and cut into 1-inch thick wedges
6 sweet Italian sausages (about 1 1/2 pounds)
6 hoagie rolls
12 slices provolone cheese
1 cup store-bought marinara sauce, warmed

Steps:

  • Prepare a grill for medium-high heat.
  • Mix the balsamic vinegar, garlic, 1/2 teaspoon Italian seasoning, 1/2 teaspoon salt and a few grinds of black pepper in a large bowl. Whisking constantly, slowly drizzle in 2 tablespoons olive oil until emulsified. Add the red pepper, green pepper, serrano pepper, onion, 1/2 teaspoon salt and a few grinds of black pepper and toss until well combined.
  • Place the basket on a baking sheet and transfer the peppers and onions to the center, letting any extra marinade drip off. Place 3 links of sausage on either side of the veggies. Close and secure the basket.
  • Place the grill basket on the grill and cook, flipping once, until the vegetables and sausages start to brown and caramelize and an instant read thermometer inserted into a sausage measures 160 degrees F, 10 to 12 minutes.
  • Meanwhile, mix the remaining 3 tablespoons oil, remaining 1 teaspoon Italian seasoning, 1/4 teaspoon salt and a few grinds of black pepper in a small bowl. Open the hoagie rolls and brush the insides with the herb oil. Grill until toasted, about 1 minute.
  • Remove to a platter and place 2 overlapping slices provolone on each roll (do not allow cheese to hang over the sides). Return the rolls to the grill, cover, and cook until the cheese is melted, about 1 minute. Remove to a platter.
  • Remove the peppers and onions from the basket and slice thinly. Cut each link of sausage in half on a deep bias and place in a hoagie roll. Divide the peppers and onions among the rolls and spoon 2 tablespoons warm marinara on top. Serve the hoagies with the remaining marinara on the side for dipping.

GRILLED ITALIAN SAUSAGE SANDWICHES WITH PEPPER-ONION FOIL PACKS

Grilled Italian Sausage Sandwiches with Pepper-Onion Foil Packs image

Grilled Italian Sausage Sandwiches with Pepper-Onion Foil Packs are an ideal, pack-up-and-go meal for cookouts and tailgate parties!

Provided by Michelle

Categories     Easy Comfort Food Recipes

Time 55m

Number Of Ingredients 8

8 hot Italian Sausages, (you can choose mild if you prefer)
2 large sweet onions
4 red bell peppers
1 teaspoon coarse salt, divided (or to taste)
1/2 teaspoon freshly ground black pepper, divided (or to taste)
2 tablespoon extra virgin olive oil
8 hoagie rolls (or bratwurst buns)
8 oz sliced provolone cheese (optional)

Steps:

  • To make the foil packs, tear two ~12" x 20" sections of foil. Fold each in half. For each piece, roll the sides adjacent to the fold tightly 3-4 times to make a pouch.
  • Mix the sliced onions and peppers. Divide approximately between the two foil pouches. Add 1/2 teaspoon of salt, 1/4 teaspoon of freshly ground black pepper, and 1 tablespoon of oil to each pouch. Fold the top of the pouch several times to seal. Refrigerate until use.
  • Prepare charcoal grill for indirect heat. When the coals are hot and completely ashed over (white), add the sausages directly over the coals. Place the pepper-onion packs on the indirect heat side of the grill.
  • Grill the sausages for 3-5 minutes each on 2 sides, or until browned (check to be sure they don't burn; see Recipe Note #1). Continue grilling, turning as necessary, until thoroughly cooked, an additional 8-9 minutes (total 15-18 minutes) to cook through. If you'd like to toast your rolls, move the sausages to indirect heat and toast the bread until lightly browned.
  • To assemble the sandwiches, lay 1-2 slices of provolone cheese (if using) on the bottom of the roll. Add one hot sausage and ~1/2 cup of the pepper-onion mixture (see Recipe Note #2).

  • Sear the sausages in a little olive oil in a shallow dutch oven, once well seared remove them to a plate.
  • To the same dutch oven (add more oil if you need to) add the peppers, onions and garlic (don't add the long hots at this point if you're using them) add a touch of salt and saute for a few minutes or until they start to develop some color and cook down.
  • Add the tomato sauce, Italian seasoning, granulated garlic, beef stock and seared sausages in with the peppers and onions, then add some basil and arrange the long hots around the edges (if using) bring to a boil, partially cover with a lid, lower the temperature to low and simmer for a couple hours. When ready, preheat your oven to 400 degrees.
  • Make the garlic butter when the sausages are ready by just mixing together the butter, parm, garlic, and Italian seasoning, smear some of it on the cut side of each half of the roll then pop them in the oven for about 7 to 8 minutes or until deeply golden and crispy.

  • Heat the olive oil in a large, deep skillet over medium high heat. Brown the sausage links in the olive oil on all sides. It will take about 2-3 minutes on each side for 10-12 minutes total. Remove them from the pan and let them cool enough to handle. Add the butter to the pan and let it start to melt. Add the onion, garlic and bell peppers and let them soften for 3-5 minutes in the butter. Season the mixture with the seasoned salt, dried basil, dried parsley and cracked black pepper while it cooks. Finally, pour in the tomato paste, wine and Worcestershire sauce. Let them cook for a minute.
  • Meanwhile, take the sausage links and quickly slice them into rounds. They will not be cooked through at this point and that's ok. Return them to the pan and stir them into the rest of the mixture. If the pan is dry, add a little more red wine. Turn the heat down the low and cover the skillet. Let the mixture simmer for 10-15 minutes to really develop flavor and cook the sausage through. While the mixture simmers, split and toast the rolls. Fill them with the cooked sausage, pepper and onion mixture and serve immediately! It also makes great leftovers.

  • In a large pan over over low-medium heat add a drizzle of oil. Add in your sausages and fry for 15-20mins, turning some-what frequently. A lower heat will render down the fat and make the skin nice and crispy, whilst making sure the meat cooks properly. Remove sausages, keep in the fat and raise heat slightly to medium.
  • Add in peppers & onions and fry until they begin to soften/brown. Add in garlic and fry for another minute or so, then stir in tomato paste and fry for another 2mins. Pour in stock and deglaze the pan with your wooden spoon.
  • Add tomatoes, red wine vinegar, basil/oregano, chilli flakes and sugar, salt & pepper to taste. Give it all a good stir. Slice your sausages into chunks and add them to the sauce, then lower heat slightly and simmer for 15-20mins, or until the sauce has completely thickened. This is not only important to reduce the liquid, but also to marry the flavours together.
  • Slice your subs and spread with butter. Add in sausage and peppers then top with a sprinkling of parmesan and fresh parsley (optional). Enjoy!
