Quick and easy homemade Chocolate Crackles.

120 grams (3 cups) Rice Bubbles or Rice Krispies
90 grams (1 cup) desiccated coconut
1 tablespoons cocoa powder
350 grams (2 and 1/3 cups) good quality dark or milk chocolate*, plus extra for drizzling
1 tablespoon coconut oil

Steps:

  • Line a 12-hole muffin pan with cupcake liners. In a large mixing bowl, add rice cereal, coconut and cocoa powder.
  • Break up the chocolate and place it in a small heat-proof bowl. Microwave the chocolate, stirring every 20 seconds, until smooth and melted. Add coconut oil and stir until smooth.
  • Pour the chocolate over the ingredients and stir quickly until all rice cereal is covered. Spoon out chocolate crackle mix into each cupcake liner.
  • Place chocolate crackles in the fridge for at least 30 minutes to set. To serve, melt a little extra chocolate and drizzle over the top.

An old fashioned favorite- the sugar coating makes the top of the cookie crackle while cookies are baking. Kraft 75 year anniversary cookbook. I have made these many times- delicious!!

3/4 c margarine
1/4 c granulated sugar
3/4 c packed brown sugar
3/4 c creamy peanut butter
1 large egg
1 tsp vanilla extract
1 3/4 c all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/4 c baking cocoa powder

Steps:

  • 1. Cream margarine, and sugars until light and fluffy. Blend in peanut butter, egg and vanilla. Add combined dry ingredients; mix well. Shape rounded teaspoonfuls of dough into balls; roll in granulated sugar. Place on ungreased cookie sheet. Bake at 375^, 10-12 minutes.

2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 stick unsalted butter, cut into pieces
5 ounces unsweetened chocolate, cut into pieces
2 cups granulated sugar
2 tablespoons Grand Marnier or other orange-flavored liqueur
3 large eggs, lightly beaten
1/2 cup confectioners' sugar

Steps:

  • Whisk the flour, baking powder and salt in a medium bowl; set aside.
  • Heat the butter, chocolate and 1 3/4 cups granulated sugar in a medium saucepan over low heat, stirring, until melted and smooth. Let cool slightly, then add the Grand Marnier and eggs and stir until combined. Add the flour mixture and stir until just combined. Transfer to a bowl, cover and refrigerate until firm, about 2 hours.
  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Put the remaining 1/4 cup granulated sugar and the confectioners' sugar in 2 separate shallow bowls. Form the dough into 1-inch balls. Add the dough balls, a few at a time, to the granulated sugar and roll to coat, then transfer to the confectioners' sugar and roll to coat. Arrange about 1 1/2 inches apart on the prepared baking sheets.
  • Bake, switching the pans halfway through, until the cookies are puffed and cracked, about 12 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.

  • Melt the chocolate, butter, and peanut butter in a small saucepan over medium heat or in microwave-safe bowl. (If microwaving, heat in 15-second bursts and stir between each.) Once the butter has melted, remove the bowl from the heat and stir until the chocolate melts completely and the mixture is smooth.
  • In a large mixing bowl, beat together the sugar, eggs, vanilla extract, and espresso powder until well combined. Pour in the chocolate mixture, baking powder, and salt, then stir to combine. Stir in the flour just until it disappears. The dough will seem very, very soft. Cover the bowl and chill the dough for at least 3 hours or overnight (it will firm up considerably).
  • When ready to bake, preheat the oven to 325 degrees F. Line a baking sheet with parchment paper and set aside. Place 1 cup powdered sugar in a wide, shallow bowl.
  • With a small cookie scoop or spoon, scoop out heaping teaspoon-sized portions of dough and roll into balls that are 1 1/4 inches in diameter. Place 4-6 balls of dough in the powdered sugar, then gently roll and toss the balls to coat completely (if you do too many balls at once, they will stick together). Shake of excess sugar, then place on the prepared baking sheet, leaving 1 1/2 inches between each (the cookies will spread as they bake). Repeat with remaining cookies.
