SUPER-EASY NO-BAKE CHEESECAKE
I was looking up cheesecake recipes, and they all either seemed too hard or needed baking. I made this up, it's sort of a combination of several of the recipes I found. The consistency is lovely, and it's pretty addictive. It is very rich, that's how I like it. I suppose you could freeze it if you wanted, but I haven't tried. It was perfectly good from the fridge. Excellent topped in homemade whipped cream!!

EASY NO-BAKE CHEESECAKE PARFAITS
When it comes to digging your spoon into a tall glass of deliciousness, there's no party quite like a cheesecake parfait party. Sweeten up the deal by bypassing the oven in favor of this 15-minute no-bake cheesecake.

- Beat the cream cheese, 3 tablespoons heavy cream and 5 tablespoons sugar in a stand mixer fitted with the paddle attachment until smooth. Add 1 tablespoon vanilla extract and the lemon juice and zest. Beat until light and creamy, about 3 minutes.
- Whisk together the remaining 1 cup heavy cream, 3 tablespoons sugar, 1 teaspoon vanilla extract and the sour cream in a large bowl with a handheld electric mixer (or a stand mixer fitted with the whisk attachment) on high speed until soft peaks form.
- Add a layer of crushed graham crackers to the bottom of each parfait glass. Top the graham crackers with a layer of the cheesecake, then a layer of fruit (see Cook's Note). Top each parfait with a dollop of the whipped cream and serve.
NO BAKE SUPER EASY LEMON CHEESECAKE
A nice and easy treat that is very simple to make. I usually omit the crust and put it into glasses to chill and cover with crushed biscuits

This is an easy recipe that doesn't take long to fix. My husbands family has me make several of these around the holidays. To start with you need to have a store bought graham cracker pie crust.

- Put the cream cheese in a bowl and heat for 30 secs in a microwave.
- Stir in sour cream, sugar, and vanilla extract.
- Fold in the cool whip.(If you choose to have strawberries or any type of fruit or topping)Cut strawberries and line the bottom of the pie crust. Then add a thin layer of strawberry glaze over the top.
- Then put the cheesecake mixture in the pie crust. (If using strawberries, put remaining strawberries and glaze on top).
- Put in fridge until ready to serve.

SUPER SIMPLE LOW CARB NO-BAKE CHEESECAKE
This is a delectable dessert for those of you who are on any of the low carb diets out there. It's so quick and easy, you can have it done 5 minutes after you start. This will satisfy your sweet tooth without ruining all your hard work!

- Soften the cream cheese either by leaving it out on the counter or putting it in a microwave safe bowl and heating it gently for a minute or so. Using electric beaters, beat the cream cheese until it is nice and smooth with no lumps.
- In a separate bowl, using the same mixer, beat the cream until it is nicely whipped and stiff peaks form.
- Using a rubber spatula, scoop all the whipped cream cheese into the bowl with the whipped cream. Beat the two together until they are completely blended. Then, pour in the Splenda and beat some more.
- Voila! A yummy dessert in no time. You can either serve this immediately as a "cheesecake flavored mousse", or, you can spoon it into individual dishes and chill for a more solid product. This entire recipe is big enough to fill a 9" pie pan.
- For those of you who are further along in your low carb program, you can add raspberries or strawberries on top to make this a real treat! Enjoy!

A friend of mine gave me this recipe. I think she got it out of one of the Better Homes & Gardens Annual Cook Books. That would've been sometime in the mid nineties. I used an oreo cookie crust in the picture.

- 1. Blend sweetened condensed milk and cream cheese.
- 2. Gradually blend in lemon juice and vanilla.
- 3. Beat on medium speed until well blended.
- 4. Pour into pie crust.
