Steps:
- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch ovenproof casserole dish.
- Bring a large pot of salted water to a boil. Add the macaroni and cook until tender (a little more than al dente), about 12 minutes. Drain well in a colander.
- In a large bowl, combine the macaroni, cheese, milk and eggs. Add some salt and pepper. Transfer to the prepared dish.
- Bake until golden brown and bubbly, about 30 minutes. Transfer to a rack to cool slightly before serving.

- Preheat the oven to 450 degrees F.
- Butter a 13 by 9-inch glass baking dish and set aside. Cook the noodles in a large pot of boiling salted water until tender but still firm to bite, stirring frequently, about 5 minutes. Drain well, but do not rinse.
- Whisk the cream, milk, flour, 1/2 teaspoon salt, and pepper in large bowl to blend. Stir in 1 cup Fontina, 1/2 cup Parmesan, 1/2 cup mozzarella, ham, if using, and parsley. Add the noodles and toss to coat. Transfer the noodle mixture to the prepared baking dish. Toss the remaining 1 cup Fontina, 1/4 cup Parmesan, and 1/4 cup mozzarella in a small bowl to blend. Sprinkle the cheese mixture over the noodle mixture. Bake until the sauce bubbles and the cheese melts and begins to brown on top, about 20 minutes. Let stand for 10 minutes before serving.

- Heat oven to 350ºF.
- Melt butter in large saucepan on low heat. Stir in flour and pepper; cook and stir 2 min. or until hot and bubbly. Gradually stir in milk; bring to boil on medium heat, stirring constantly. - Preheat oven to 375 degrees.
- Butter a 9-inch deep-dish pie plate.
- Sprinkle bottom and sides with the bread crumbs.
- Cook the noodles as directed on box (al dente), adding 1/2 teaspoon salt and the teaspoon oil.
- You will need 5 cups of cooked noodles.
- Meanwhile, melt butter in a large skillet over medium-high heat.
- Add the onion and saute until soft, about 5 minutes.
- Stir in flour and remaining teaspoon of salt, dry mustard, pepper, and nutmeg and cook for about 1 minute.
- Gradually stir in all the milk and continue to cook until the sauce simmers and thickens.
- Add 2 cups of the cheese, the optional food coloring, and stir until completely melted.
- Remove sauce from heat and stir in the noodles.
- Spoon macaroni into the pie plate, mounding high in the centre.
- Top with remaining 1/2 cup of cheese and sprinkle generously with paprika.
- Bake until the pie is golden brown and bubbly, about 25 minutes.
- Let pie stand on wire rack for about 15 minutes to set before cutting.

- Preheat oven to 425°F.
- Mix 1/4 cup of cheddar into pastry and shape pastry into a ball and roll out between 2 pieces of wax paper.
- Place this into a 9-inch pie plate, prick bottom with fork.
- Bake 15 minutes, remove from oven and let stand until you are finished the sauce mixture.
- Reduce oven to 350°F.
- Cook elbow macaroni.
- Prepare cheese sauce by combining butter, flour, milk, salt, pepper, parmesan, cream cheese and 2 cups of cheddar cheese. Cook in sauce pan over medium heat until all ingredients are combined.
- Add cooked noodles to cheese sauce mixture and pour into pie shell.
- Sprinkle remaining 1/4 cup of cheddar onto top of pie.
- Bake 20 minutes at 350°F 10-15 minutes.

- Preheat the oven to 425 degrees F (220 degrees C).
- Spray a 9x13-inch casserole dish with cooking spray.
- Fill a large pot with lightly salted water and bring to a boil. Stir in the macaroni and return to a boil. Cook pasta uncovered, stirring occasionally, until it has cooked through but is still slightly firm, about 8 minutes; drain.
- Slowly melt butter in a large pot over low heat. Stir in evaporated milk and black pepper; cook until heated through.
- Whisk eggs in a bowl until smooth; whisk about 1/2 cup of the evaporated milk mixture into the eggs, 1 tablespoon at a time, until thoroughly incorporated. Whisk the egg mixture back into the saucepan with evaporated milk mixture. Continue to heat gently, whisking constantly, until the evaporated milk mixture almost comes to a simmer and the sauce thickens.
- Gently mix salt and cooked macaroni into the sauce and stir to combine.
- Spoon 1/4 of the macaroni mixture in a layer into the bottom of the prepared casserole dish and top with 1 cup shredded Cheddar cheese. Repeat layers three more times; top last cheese layer with paprika to taste.
- Bake in the preheated oven until casserole is bubbling, about 20 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
- Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
- Heat the milk in a small saucepan. Stir in mustard, Worcestershire sauce, salt, and hot sauce. Set aside.

MACARONI VEGETABLE CHEESE PIE
A new take on macaroni and cheese, from Taste of the Caribbean. I added spinach and parmesan cheese to the original recipe, and I forgot all about the egg - but since it was completely devoured by my husband and son, it must have been okay. Don't let the cinnamon scare you - it is very subtle. Note: I've included a bit more information in the directions after the first review that informed me I'd left a couple things out (thanks Ellie).

- heat oven to 350.
- cook macaroni in boiling water for 10 minutes; drain, rinse under cold water and drain again.
- Melt 2 T of butter in pan and add the flour. Cook for 1 minute, then add milk, whisking constantly.
- Heat till mixture boils, then simmer gently for 5-10 minutes.
- stir in mustard and cinnamon, with 2/3 of the cheese. (alternatively, you can put in all the cheddar here, and top with parmesan at the end).
- Season to taste. Cook gently, stirring frequently, till cheese has melted, then remove from heat and whisk in egg. Cover and set aside.
- heat remaining butter in a small frying pan and cook the scallions, chopped tomatoes and corn (and spinach, if using) over gentle heat for 5-10 minutes.
- Tip half the cooked macaroni into a greased ovenproof dish. Pour half of cheese sauce over it and mix well, then spoon tomato/corn mixture even over.
- Tip the remaining macaroni into the pan containing the cheese sauce, stir well and then spread carefully over the tomato and corn mixture.
- Top with remaining grated cheddar (or parmesan). Bake 45 minutes, or till top is golden and bubbly.
- Let stand for 10-15 minutes before serving. Garnish with parsley.

- Heat oven to 400 degrees Fahrenheit.
- Grease a pie plate 10 x 1 1/2 inches.
- Mix 2 cups cheese and the macaroni.
- Sprinkle mixture in the plate.
- Beat remaining ingredients, except the 1/4 cup cheese, until smooth, 15 seconds in a blender on high, or 1 minute with a hand beater.
- Pour into plate.

SPIKED ROSEMARY MACARONI AND CHEESE PIE WITH CARAMELIZED SHALLOTS

- Preheat the oven to 375 degrees F.
- Bring 4 quarts water to a boil in a large pot; stir in 1 tablespoon of the salt and the pasta; cook according to the package directions for al dente pasta. Drain well.
- While the pasta is cooking, in a large skillet over low heat combine the oil, the shallots, and 1 teaspoon of the salt. Cook the shallots over low heat until they begin to fall apart and caramelize, 20 to 30 minutes. Once caramelized, remove from the skillet and set aside.
- Bring the cream to a simmer in a 4-quart saucepan over medium heat. Make sure the cream does not come to a boil. Stir in the cheeses. Add the rosemary and cook, whisking often, over medium-low heat, for 2 to 3 minutes, until melted and smooth. Remove from the heat. Whisk in the pepper and the remaining 2 teaspoons salt.
- Stir in the cooked pasta and caramelized shallots.
- Pour the mixture into a lightly greased 3-quart baking dish. Bake for 30 to 35 minutes, until golden brown and bubbly.
- Remove from oven; let stand for 10 minutes before serving.
TRINIDADIAN MACARONI PIE

- Heat oven to 350 degrees. Grease a 9-by-13-inch (3-quart) baking dish with butter.
- In a large bowl, mix the Cheddar and mozzarella, and set aside. In a small bowl, whisk the evaporated milk, egg, tomato paste, garlic and onion powders, mustard, thyme, Scotch bonnet pepper, 1 teaspoon salt, and a generous pinch of black pepper until very well blended.
- Cook macaroni in boiling salted water according to the package directions for al dente. Drain and return to the pot. Stir in the tablespoon of butter until melted, then add half the cheese and stir until it's fully combined and starting to melt. Stir in the milk mixture until the pasta is evenly coated. Pour the pasta into the buttered dish, spread it evenly and sprinkle the rest of the cheese on top.
- Bake until the top is bubbling and golden brown, 35 to 40 minutes.
- Remove from the oven and let rest for at least 10 minutes to help it firm up. The dish can be made up to a day in advance, tightly covered with foil or plastic wrap, and refrigerated, or cut into serving sizes, wrapped tightly and frozen. Reheat covered with foil in a 350-degree oven or in a covered skillet on the stove.
FISH PIE MAC 'N' CHEESE

- Pour the milk into a large pan and add the flour and butter. Set over a medium heat and whisk continuously until you have a smooth, thick white sauce. Remove from the heat, add the mustard, most of the cheese (save a handful for the top), peas and parsley.
- Meanwhile, boil the pasta in a large pan of water following pack instructions until just cooked. Drain.
- Heat the oven to 200C/180C fan/gas 6. Tip the pasta into the sauce and add half the fish, stir everything together then tip into a large baking dish. Top with the rest of the fish, pushing it into the pasta a little, then scatter with the remaining cheese. Bake for 30 mins until golden, then serve with salad, if you like. Can be chilled and eaten within three days or frozen for up to a month. Defrost in the fridge, then reheat in a microwave or oven until piping hot.

SOUTHERN MACARONI PIE
This recipe was given to me by my niece who resides in South Carolina. It is different than Baked Macaroni and Cheese recipes. I use this as a side dish to baked or fried chicken, baked pork chops, kielbasa, or just about anything. It is an alternate to having the traditional potatoes at most meals. You will find this recipe is quick to put together and calls for a minimal number of ingredients. Leftovers can be reheated in a microwave.

- Cook macaroni in salted water until almost done.
- Beat egg and flour with fork until there are no lumps.
- Beat in milk and salt.
- In a greased 2 quart shallow casserole dish, layer the macaroni, cheese, another layer of macaroni, and a final layer of cheese.
- Pour the milk mixture over the top of layered ingredients.
- Bake uncovered 45 to 55 minutes in a 350 degree Fahrenheit preheated oven.
- Remove from oven and let sit for 15 minutes before serving.
- This last step is important to let the pie set-up.
