MACARONI VEGETABLE CHEESE PIE

Macaroni Vegetable Cheese Pie image

A new take on macaroni and cheese, from Taste of the Caribbean. I added spinach and parmesan cheese to the original recipe, and I forgot all about the egg - but since it was completely devoured by my husband and son, it must have been okay. Don't let the cinnamon scare you - it is very subtle. Note: I've included a bit more information in the directions after the first review that informed me I'd left a couple things out (thanks Ellie).

Time 1h10m

Yield 4 serving(s)

Number Of Ingredients 17

2 cups macaroni

2 -4 tablespoons parmesan cheese (optional)

parsley, for garnish

  • heat remaining butter in a small frying pan and cook the scallions, chopped tomatoes and corn (and spinach, if using) over gentle heat for 5-10 minutes.
  • Tip half the cooked macaroni into a greased ovenproof dish. Pour half of cheese sauce over it and mix well, then spoon tomato/corn mixture even over.

  • Top with remaining grated cheddar (or parmesan). Bake 45 minutes, or till top is golden and bubbly.

SPIKED ROSEMARY MACARONI AND CHEESE PIE WITH CARAMELIZED SHALLOTS

Spiked Rosemary Macaroni and Cheese Pie with Caramelized Shallots image

Macaroni and cheese is such a Harlem staple that we knew we had to make ours special. Alexander has always done his with rosemary, which gives it a nice earthy flavor. We threw in caramelized shallots for sweetness and texture. Rosemary and shallots are both such simple adds, but also unexpected. We think this will be your new favorite mac.

Provided by JJ Johnson

Categories     main-dish

Time 1h15m

Yield 6 to 8 servings

Number Of Ingredients 9

2 tablespoons kosher salt
1 pound dried penne rigate pasta
1 tablespoon olive oil, plus more for greasing the baking dish
8 shallots, peeled and left whole
4 cups heavy cream
4 cups shredded white cheddar cheese (about 1 pound)
4 cups shredded smoked Gouda cheese (about 1 pound)
2 tablespoons chopped fresh rosemary
2 teaspoons freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Bring 4 quarts water to a boil in a large pot; stir in 1 tablespoon of the salt and the pasta; cook according to the package directions for al dente pasta. Drain well.
  • While the pasta is cooking, in a large skillet over low heat combine the oil, the shallots, and 1 teaspoon of the salt. Cook the shallots over low heat until they begin to fall apart and caramelize, 20 to 30 minutes. Once caramelized, remove from the skillet and set aside.
  • Bring the cream to a simmer in a 4-quart saucepan over medium heat. Make sure the cream does not come to a boil. Stir in the cheeses. Add the rosemary and cook, whisking often, over medium-low heat, for 2 to 3 minutes, until melted and smooth. Remove from the heat. Whisk in the pepper and the remaining 2 teaspoons salt.
  • Stir in the cooked pasta and caramelized shallots.
  • Pour the mixture into a lightly greased 3-quart baking dish. Bake for 30 to 35 minutes, until golden brown and bubbly.
  • Remove from oven; let stand for 10 minutes before serving.

TRINIDADIAN MACARONI PIE

Trinidadian Macaroni Pie image

Macaroni pie is a firmer, highly spiced version of mac and cheese. Quintessential Trinidadian seasonings like thyme and Scotch bonnet pepper give this dish a distinctive taste, while a little less liquid mixed with an egg creates a solid, sliceable texture. A Trini staple for large family gatherings, it's the perfect addition to a holiday table. And if there are any leftovers, they keep well. Feel free to use your favorite Cheddar, but if you're able to find New Zealand Cheddar (or "Trinidad cheese" as it's called on the island), don't pass it up.

Provided by Lesley Enston

Categories     casseroles, main course

Time 1h20m

Yield 6 to 8 servings

Number Of Ingredients 13

1 tablespoon butter, plus more for greasing the dish
8 ounces sharp Cheddar, coarsely grated (2 cups)
8 ounces whole-milk mozzarella, coarsely grated (2 cups)
2 1/2 cups evaporated milk (from 1 1/2 12-ounce cans)
1 large egg, whisked
2 tablespoons tomato paste
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons Dijon mustard
1 teaspoon fresh thyme leaves, chopped
1/2 Scotch bonnet pepper, finely minced, seeded for less heat
Kosher salt (Diamond Crystal) and black pepper
1 pound dried macaroni

Steps:

  • Heat oven to 350 degrees. Grease a 9-by-13-inch (3-quart) baking dish with butter.
  • In a large bowl, mix the Cheddar and mozzarella, and set aside. In a small bowl, whisk the evaporated milk, egg, tomato paste, garlic and onion powders, mustard, thyme, Scotch bonnet pepper, 1 teaspoon salt, and a generous pinch of black pepper until very well blended.
  • Cook macaroni in boiling salted water according to the package directions for al dente. Drain and return to the pot. Stir in the tablespoon of butter until melted, then add half the cheese and stir until it's fully combined and starting to melt. Stir in the milk mixture until the pasta is evenly coated. Pour the pasta into the buttered dish, spread it evenly and sprinkle the rest of the cheese on top.
  • Bake until the top is bubbling and golden brown, 35 to 40 minutes.
  • Remove from the oven and let rest for at least 10 minutes to help it firm up. The dish can be made up to a day in advance, tightly covered with foil or plastic wrap, and refrigerated, or cut into serving sizes, wrapped tightly and frozen. Reheat covered with foil in a 350-degree oven or in a covered skillet on the stove.

This recipe was given to me by my niece who resides in South Carolina. It is different than Baked Macaroni and Cheese recipes.
