FISHERMAN'S GRILLED TROUT

6 trout fillets
1 medium white or yellow onion
Large lemon
6 to 8 cloves garlic, crushed
1/3 stick butter
Salt and ground black pepper
6 aluminum sheets, approximately 12 by 12 inches

Steps:

  • Heat grill to medium-high heat.
  • Rinse fillets and pat dry. Slice onion into 1/8-inch rings, and set aside. Slice lemon into 1/8-inch rings, remove seeds and set aside.
  • Rub 1 clove of crushed garlic over the fillet. Place fillet in the center of the aluminum foil. Top with 1 pat of butter, 2 to 3 onion rings, then season with salt and pepper, to taste. Cover fish with 1 or 2 lemon rings. Fold aluminum foil around fish to create a sealed package. Repeat for each fillet.
  • Place packets on hot grill for 5 minutes or until cooked through, careful not to overcook the fillets. Remove fish from foil, plate and serve immediately.

GRILLED CIABATTA WITH RICOTTA AND SNAP PEAS

1 loaf ciabatta, sliced into 1/2-inch-thick pieces on the diagonal
5 tablespoons olive oil, plus more for brushing
1 1/2 cups fresh ricotta
2 tablespoons chopped fresh chives
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
1 pound sugar snap peas
1/3 cup fresh basil
1/3 cup fresh mint
2 tablespoons lemon juice
Sea salt flakes, such as Maldon, for serving

Steps:

  • Preheat a grill pan to medium-high heat. Brush the sliced ciabatta with a little olive oil. Place on the grill pan and cook until toasted and grill marks form, about 2 minutes per side.
  • Combine the ricotta, 2 tablespoons olive oil, chives, salt and pepper in a small bowl. Set aside.
  • Bring a large pot of salted water to a boil Add the snap peas and cook for 3 minutes. Immediately plunge them into a bowl of ice water until cold. Remove and pat dry. Cut half of the peas lengthwise (leave the other half whole). Combine the cut and whole peas with the basil and mint in a large bowl. Add the lemon juice and remaining 3 tablespoons oil and toss to coat.
  • Place the grilled ciabatta on a serving dish. Add a dollop of the ricotta mixture to each piece and then top with some snap pea salad. Sprinkle with sea salt flakes before serving.

1/4 cup fresh lemon juice, plus 2 lemons sliced into 1/4-inch-thick rounds
1/4 cup dry white wine
2 tablespoons extra-virgin olive oil
4 whole dressed rainbow trout (about 10 ounces each), head and tail on
16 thyme sprigs
2 shallots, thinly sliced
Kosher salt and freshly ground pepper
Nonstick cooking spray

Steps:

  • Whisk together juice, wine, and oil in a shallow nonreactive dish. Stuff half of the thyme, shallots, and lemon slices inside of the fish. Arrange trout in a single layer in dish; turn to coat. Scatter remaining thyme, shallots, and lemon slices over the fish. Cover; let stand for 1 hour, turning occasionally.
  • Preheat a grill to medium-high. Remove fish from marinade. Season with salt and pepper. Spray a grill basket large enough to hold 4 fish with nonstick cooking spray. Arrange fish in grill basket.
  • Grill until just cooked through and firm to the touch, 5 to 7 minutes per side.

1 cup olive oil and vinegar salad dressing (recommended: Newman's Own)
3 tablespoons frozen orange juice concentrate, thawed
1 tablespoon dried fines herbes
1 teaspoon red pepper flakes
2 pounds trout, cleaned, heads and tails removed
1/2 cup mayonnaise
2/3 cup artichoke bruschetta topping (recommended: Delallo)
1 tablespoon lemon juice
1/4 teaspoon cayenne pepper
1 (19-ounce) loaf ciabatta bread
2 cups spring salad mix
2 tomatoes, sliced
1/2 small red onion, thinly sliced

Steps:

  • In a medium bowl, stir together salad dressing, orange juice concentrate, herbs, and red pepper flakes.
  • Place the trout in a large resealable bag and pour the salad dressing mixture over the fish. Squeeze the air from the bag and seal. Marinate in the refrigerator for 1 to 2 hours.
  • Meanwhile, to make the artichoke aioli, stir together the mayonnaise, artichoke bruschetta topping, lemon juice, and cayenne in a medium bowl. Refrigerate until ready to use.
  • Set up grill for direct cooking over medium heat and oil the grates well.
  • Remove the trout from the marinade, discarding any leftover marinade, and place on the grill, flesh side down. Cook for 3 to 4 minutes per side, or until just cooked through. Remove from the grill and set aside.
  • Slice ciabatta bread horizontally and quickly toast on the grill. Spread both sides with artichoke aioli. Carefully pull skin from trout fillets (bones should come up with skin).
  • Assemble sandwich and cut into serving size pieces.

2 whole 1 pound trout, cleaned
2 tablespoons canola oil
Salt
Pepper
1/4 cup freshly squeezed orange juice
1/2 cup fresh raspberries
1 tablespoon fresh basil chiffonade

Steps:

  • Place the trout on a large piece of aluminum foil. Rub the trout with canola oil and season with salt and pepper. Pour orange juice over the trout. Place berries over the trout. Fold up the aluminum foil to create a sealed packet. Place the packet on the grill and cook for about 4 minutes per side. Remove from the grill and let rest for 5 minutes. Carefully open the foil packet (there will be steam) and sprinkle with the basil.

1 (2 pound) London broil
1 tablespoon olive oil
1 tablespoon steak seasoning (recommended: Montreal Steak Seasoning)
2 tablespoons pesto
1/4 cup mayonnaise
4 ciabatta rolls, sliced in 1/2 lengthwise
3 plum tomatoes, sliced

Steps:

  • Preheat grill to medium heat.
  • Brush London broil with olive oil and season with steak seasoning. Place on grill. Grill 3 to 5 minutes per side, depending on thickness and preference. When done, let rest 5 minutes then slice on the bias.
  • In a small bowl, combine pesto and mayonnaise.
  • Spread mayonnaise blend on bottom half of each ciabatta. Top with tomato slices and meat. Cover with the top halves and serve.

ARTICHOKE PESTO ON CIABATTA

1 (8-ounce) pack frozen artichoke hearts, thawed
1 cup fresh parsley leaves, packed down
1/2 cup chopped toasted walnuts
1 lemon, zested and juiced
2 cloves garlic
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup extra-virgin olive oil
2/3 cup grated Parmesan (2 teaspoons per cube)
1 (12 to 16-inch) ciabatta loaf, cut into slices
1/4 cup extra-virgin olive oil, for drizzling

Steps:

  • In a food processor combine the artichokes, parsley, walnuts, lemon zest and juice, garlic, salt, and pepper. Run the machine to finely chop all the ingredients, stopping the machine a few times to scrape down the sides. Then, with the machine running, drizzle in 1/2 cup extra-virgin olive oil. Spoon the pesto into the cups of an ice cube tray. Tapping the tray gently on the counter to remove any air bubbles. Cover tightly with plastic wrap and place in the freezer. Freeze for 1 day or up to 1 month.
  • When ready to serve, thaw the pesto. Mix in the Parmesan. Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Drizzle the ciabatta slices with the 1/4 cup extra-virgin olive oil. Grill until toasted, about 5 minutes. Spread the artichoke pesto over the toasted slices and serve.

1 loaf ciabatta
1 1/2 tablespoons extra virgin olive oil
2 large garlic cloves
1 tomatoes, halved crosswise
salt & freshly ground black pepper

Steps:

  • Preheat a grill pan over medium-high heat.
  • Slice ciabatta in half lengthwise, then cut each half into 1" slices.
  • Place bread on grill pan cut side down and grill until golden and crisp.
  • Working quickly, drizzle the toasted side with olive oil.
  • Rub garlic cloves over the grilled bread, then rub the cut side of the tomato over (squeeze tomato slightly while doing this).
  • It is important to do this while the bread is still hot or warm so that the garlic melts into the bread.
  • Sprinkle with salt and pepper and serve immediately.
