LOBSTER RAVIOLI

3 tablespoons minced shallot
2 teaspoons minced garlic
1 1/2 cups white wine
1 stick butter
2 teaspoons chopped fresh basil
2 teaspoons chopped fresh parsley
1/2 teaspoon chopped fresh tarragon
Two 8-ounce raw lobster tails, shelled and cut into 1/3-inch pieces
2 teaspoons lemon zest
2 teaspoons lemon juice
2 1/2 tablespoons all-purpose flour
2 teaspoons kosher salt
4 grinds freshly cracked black pepper
48 wonton wrappers
1 stick unsalted butter
1 1/2 tablespoons capers, drained
4 fresh sage leaves
2 small cloves garlic, minced
Kosher salt and freshly cracked black pepper
2 teaspoons chopped fresh parsley
1/2 teaspoon chopped fresh tarragon
Juice of 1 lemon
1/2 cup shaved Parmesan, for garnish
Fresh basil bud leaves, for garnish
Good-quality extra-virgin olive, for drizzling

Steps:

  • For the ravioli: Heat the oil in a medium saucepot over medium heat. Add the shallots and sweat until translucent, about 2 minutes. Add the garlic and sweat until fragrant, about 30 seconds. Deglaze with the white wine. Bring to a gentle simmer and add 1/2 stick of the butter. Stir until melted. Add the basil, parsley and tarragon. Add the lobster pieces and poach in the liquid until almost cooked through, 1 1/2 to 2 minutes. Stir in the lemon zest and lemon juice. Remove from the heat, transfer the lobster to a dish and set aside to cool. Reserve the liquid.
  • Bring a medium saute pan to medium-low heat. Add the flour and toast gently for about a minute. Add the salt and pepper and the remaining 1/2 stick butter, stirring constantly. Cook until the starch begins to dissipate, about 3 minutes; be careful to not allow the roux to darken. Whisk the reserved poaching liquid into the roux until smooth. Simmer until the starch is completely cooked out and the sauce is thickened, 7 to 10 minutes. Remove from the heat, transfer to a medium mixing bowl and cool completely.
  • Gently fold the lobster into the thickened poaching liquid. Lay out the wonton wrappers, working in small batches so they don't dry out. Spoon 1 tablespoon of the filling into the center of each, brush the edges with water to moisten, place a second wonton over top and press to adhere. Use an inverted 2-inch cookie cutter (the smooth side) to gently seal the filling into the middle (this ensures a snug fit and no air bubbles which will make the ravioli burst when poached). Use a 3-inch cookie cutter (the sharp side) to cut out and create round raviolis.
  • Bring 2 quarts well-salted water to a simmer in a large pot. Working in batches, simmer the ravioli until they are al dente, 3 to 4 minutes. Remove with a slotted spoon and set aside.
  • Meanwhile, make the brown butter sage sauce: Set a large skillet over medium heat. Add the butter and cook, stirring until it melts and becomes foamy. Once the butter turns golden brown and has a nutty aroma, about 3 minutes, add the capers, sage and garlic. Season lightly with salt and pepper. Once the sage is fragrant, remove the skillet from the heat and fold in the parsley, tarragon and lemon juice. Stir to incorporate and warm up the herbs and lemon -- this will release their aroma but they'll maintain their bright vibrant color.
  • To heat and serve: Working in batches to not overcrowd the pan, gently toss the poached ravioli in the brown butter in a large saute pan for 1 to 2 minutes over medium heat to coat the pasta evenly. Place the ravioli on plates and spoon over sauce from the pan. Top with shaved Parmesan, garnish with basil buds and a drizzle of extra-virgin olive oil.

1 clove garlic, chopped
1 tablespoon chopped shallots
16 ounces cooked lobster meat
4 ounces cooked snow crabmeat
2 ounces Cognac
2 ounces ricotta
Salt
Pepper
1 tablespoon chopped chives
Pasta Dough, recipe follows
Egg white, slightly beaten
2 ounces unsalted butter
1 tablespoon chopped shallots
4 ounces whole chunk Maryland crabmeat
2 ounces Cognac
5 ounces tomato sauce
10 ounces heavy cream
Salt
8 ounces durum flour
8 ounces semolina
1 egg
Water, as needed
Pinch salt

Steps:

  • For the Lobster Ravioli: In a large saute pan, add the butter and melt. Add the garlic and shallots and saute until golden brown. Add lobster, crab, and chives and saute 2 to 3 minutes. Add Cognac and reduce for 2 minutes. Remove from heat and cool for 30 minutes, until room temperature. Chop lobster mixture into small chunks. In a large bowl, combine lobster mixture and ricotta and mix well. Season with salt and pepper.
  • Lay out the first piece of Pasta Dough on the table and place 1/4-ounce mounds of stuffing 2 inches apart. Using a pastry brush, brush egg white around each bit of stuffing, making the dough damp not wet. Take the second piece and cover the bottom piece with the stuffing. Press around each ravioli being careful not to squeeze the stuffing out. Using a round ravioli cutter, cut each ravioli round and put on a sheet pan sprinkled with semolina. Gently place ravioli in boiling water and cook for 8 to 10 minutes, or until al dente.
  • For the sauce: Using a 12-inch saute pan at medium heat, add butter, shallots, and saute until shallots are translucent. Add the crabmeat and saute for about 2 to 3 minutes. Remove the saute pan from the burner and add Cognac then place pan back on the heat to cook off the alcohol. (Please beware: the Cognac will create a large flame.) Once the flame stops, add the tomato sauce and cream with salt and cook until it reduces half way and becomes creamy. Add the cooked ravioli to the sauce and let cook together for about 1 minute before serving. Garnish with chives.
  • Add all the ingredients into a large mixing bowl until all ingredients are blended. Place mixture on countertop and knead until the texture is smooth and well mixed. Separate the pasta dough into 2 equal pieces and put one piece aside. Flour the first piece, just enough to prevent sticking and roll out with a rolling pin to about 1/8th-inch thick. Repeat procedure with second piece making it as close to the shape as the first.

1 small yellow onion, small diced
5 cloves garlic, peeled and smashed
4 lobster tails, split lengthwise and then crosswise
1 small red bell pepper, diced
2 scallions, roughly chopped into 1-inch pieces
3 sprigs thyme
1/2 Scotch bonnet chile, seeded and julienned
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter

Steps:

  • Add the oil to a large skillet over medium-high heat. Stir in the curry powder with a wooden spoon until toasted and fragrant, 3 to 5 minutes.
  • While stirring, gradually add the onions. Cook for about 2 minutes, and then add the garlic. Cook until translucent, 4 to 5 minutes. Add the lobster and 2 cups water. Stir to combine the ingredients, then cover the pan and cook for 2 minutes. Remove the lid and add a pinch more curry powder if needed to deepen the color.
  • Remove the cover and add the bell peppers, scallions and thyme. Stir to incorporate all the ingredients and let cook at a low simmer, uncovered, for 3 to 4 minutes. Add the Scotch bonnet, 2 pinches of salt and 1 pinch of black pepper. Add the butter and stir to melt, then remove from the heat and serve.

6 ounces raw lobster meat, chopped
1-ounce macadamia nuts, toasted, chopped
3 to 5 fresh basil leaves, chopped
Pinch ground cumin
1 clove fresh garlic, minced
1 package wonton skins
2 teaspoons butter
2 tablespoons all-purpose flour
1/2 cup white wine
1 teaspoon chopped garlic
2 to 4 teaspoons curry powder
1 cup milk
Pinch granulated chicken bouillon
1/2-ounce honey
Black pepper
Chopped basil, for garnish
Grated Parmesan
Macadamia nuts, roasted for garnish

Steps:

  • To make the ravioli: mix all of the stuffing ingredients together. Place 1 wonton skin on a flat surface. Moisten the edges with a little water. Place about 2 teaspoons of the stuffing in the center of the wonton. Top with another wonton and press the edges to seal. Repeat with the remaining ingredients. Bring a large pot of salted water to a boil. Add the ravioli and boil for 3 to 4 minutes, or until they float to the surface and the lobster is cooked through.
  • To make the sauce, in a nonstick pan, add the butter and melt. Add the flour and cook, stirring, until the mixture bubble like pancake batter, about 4 minutes. Whisk in the wine, garlic, and curry powder and cook until the mixture is thickened and the alcohol has cooked out of the wine, about 5 minutes. Add the milk slowly. Use chicken bouillon as your salt and sweeten with honey to your liking. After the sauce is nice and thick, add ravioli. Season with black pepper. Garnish with chopped basil, grated Parmesan, and roasted macadamia nuts.

1 pound butter, softened
1/4 cup chopped Italian parsley leaves
3 shallots finely chopped
2 tablespoons chopped garlic
3 lemons, juiced
1 teaspoon Worcestershire sauce
Salt and pepper
1/4 cup roasted and chopped macadamia nuts
10 (1 1/2 to 2 pound) lobsters

Steps:

  • Combine butter and all parsley, shallots, garlic, lemon, Worcestershire sauce, salt, pepper and macadamia nuts. Mix very well and roll into cylinder with waxed paper. Place in refrigerator for about 2 hours. When ready cut into circles. Cut lobster, lengthwise, into 2 pieces and place on the grill. Grill for about 5 to 6 minutes and when done place the macadamia nut butter circles on top of lobster meat and let it melt on the grill. Serve immediately.

1 1/4 lbs fresh halibut, cut into 4 filets
7 ounces roasted macadamia nuts
2 tablespoons flour
1/2 cup flour, for dredging fish
1 egg, beaten with
2 tablespoons water
1/3 teaspoon cayenne
4 tablespoons butter (clarified butter is necessary if cooking large quantities)
1 (14 ounce) can coconut milk
1 tablespoon peanut oil
1 tablespoon taste Thai red curry paste (start with less, then taste to adjust, it is hot!)
1/2 cup Major Grey chutney, large chunks chopped fine
1 fresh mango, peeled, seeded, and diced small
2 tablespoons finely-sliced fresh cilantro

Steps:

  • Combine nuts and 2 tablespoons flour in food processor, pulsing so as not to overchop and become sticky.
  • Beat cayenne into egg with a fork.
  • Dredge filet first in flour, then egg, then nuts - pressing nuts onto fish.
  • Refrigerate breaded fish while starting sauce.
  • Heat 2 tablespoons peanut oil in a heavy saucepan.
  • Add curry paste and cook one minute, whisking.
  • Add coconut milk and chutney, bring to a boil.
  • Boil lightly till milk is reduced to 1/2 its original volume or to desired thickness.
  • Turn heat off and cover to keep warm.
  • Melt butter in large saute pan over medium heat.
  • Add halibut till deep golden brown, turn to brown other side.
  • If filets are very thick, place in 400 degree oven for 8 minutes after browning to finish cooking.
  • Just before fish is done, add chopped mango and cilantro to sauce.
  • Serve sauce over fish sprinkled with a little more cilantro for color interest and perhaps a whole cilantro leaf.
  • Serve with Jasmine Rice.

2 bulbs of garlic
1/4 cup macadamia nuts, ground coarsely
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground
1/4 cup water
1 teaspoon soy sauce (or Bragg Liquid Aminos or Tamari)
3/4 cup half-and-half cream (or soy milk)

Steps:

  • Remove skins from both heads of garlic, peeling down to the cloves. Do not remove the skins covering the individual cloves.
  • Wrap both garlic heads together in aluminum foil, shiny side inside. Place the foil package on a baking pan, and roast at 375°F for 1 hour.
  • While garlic is roasting, toast macadamia nuts in a non-stick skillet over high heat, tossing nuts constantly for about 2 minutes.
  • Cool the nuts and coarsely grind them (in a mill if on-hand). Set aside.
  • When garlic is thru roasting, open the foil carefully, and allow the heads to cool slightly.
  • Break off each clove and squeeze out its contents into the food processor, squeezing from the tip down to the opening at the base.
  • Add salt, pepper, water, soy sauce, and cream and process to a creamy consistency.
  • Transfer to a 2-quart saucepan and warm over medium heat. Stir in ground macadamia nuts.
  • Makes about 1 1/2 cups.

1 tablespoon fish sauce
1/4 cup soy sauce
14 ounces coconut milk
2 tablespoons gingerroot (minced)

1 tablespoon curry powder
1/4 cup honey
2 tablespoons vegetable oil

6 pieces kaffir lime leaves (sliced)

Steps:

  • For satays:
  • slice beef thinly and then into 1" strips.
  • Thread the beef onto the skewers and place in a shallow pan.
  • For marinade:
  • Combine fish sauce, soy sauce, coconut milk, ginger, garlic, lime juice, curry powder and honey together until well mixed in medium-sized bowl. Pour over the top of skewers. Cover and refrigerate for at least 30 minutes, and up to 2 hours.
  • For sauce:
  • Heat oil in medium saucepan and add the ginger, garlic, shallots, lemongrass and kaffir lime. Sauté over medium heat for 5 minutes. Add the turmeric, coriander seed, brown sugar, lime juice, coconut milk and macadamia nuts. Bring to a boil, then simmer for 10-15 minutes until nuts have softened.
  • Puree sauce in food processor or blender until there are no more lumps. Let cool completely.
  • Remove satays from marinade, pat dry and grill over high heat until the meat is just cooked through.
  • Serve hot with cool dipping sauce.
