Steps:
- Stir the relish, mustard, chives and honey together in a small bowl.
- Cut the apple off its core and thinly slice into half-moons. Toss the apples with the lemon juice to keep them from browning.
- Spread the rolls on both sides with the relish mixture. Build sandwiches with the Cheddar, apples, ham and arugula.
APPLE-AND-HAM SALAD

Steps:
- Thinly slice the apples. Toss with the lemon juice in a large bowl.
- Make the dressing: Heat the olive oil in a skillet over medium heat. Add the shallots and 1/2 teaspoon salt and cook, stirring occasionally, until golden, about 8 minutes. Whisk in the vinegar and mustard; remove from the heat and let cool slightly. Whisk in the sour cream and 1/4 cup water.
- Add the dressing to the bowl with the apples. Add the ham, watercress and endives. Season with salt and pepper and toss to coat.
APPLE HAM SALAD
This is a really delicious salad. Great way of using up apples and that last bit of ham in the fridge. It was adapted from The Best of Country Cooking. Cooking time is time spent in the fridge. You may also want to add a finely minced garlic clove.

- Press thawed potatoes between paper towels to remove moisture; set aside.
- In a small saucepan over medium heat, cook apple and sage in hot melted butter until tender; remove pan from heat.
- Combine apple mixture, potatoes, and ham in a lightly greased 2-quart baking dish.
- In a mixing bowl, whisk the milk, eggs, cheese, and salt together; pour egg mixture over potato mixture.
- Bake, uncovered, at 350° (preheated) for 35-40 minutes or until knife comes out clean.

A caterer friend made these to test, and my goodness, wow! She did not give me exact brand of ingredients, but I'm sure as long as you use good quality ingredients, it will be just as tasty as hers. It definitely had the OMG factor to it!

Steps:
- Core and slice apple thinly, leaving the skin on.
- Place cheese on one slice of bread.
- Place Ham on other slice of bread.
- Layer Apples, about 5-6 pieces, on top of cheese.
- Spread Apple Butter on Ham.
- Enclose the sandwich.
- Sprinkle a pinch of thyme and rosemary on both sides of bread and press in a Panini or George Foreman grill until cheese is melting and both sides are toasted.

- In a small bowl, combine mayonnaise, mustard and honey; spread on one side of each slice of bread. Layer cheese on 4 bread slices; top each with 2 slices of ham, apple slices and remaining bread.
- Cut sandwiches in half. Use any apple slices left to garnish.
- (If to be used in a lunch box, add apple slices to mayonnaise mixture and coat so that they won't turn brown. If needed use a little butter or margarine on bread slices.).
