Macaroni and Cheese image

Try Ree Drummond's creamy Macaroni and Cheese recipe from Food Network.

Number Of Ingredients 16

4 cups dried macaroni
1 whole egg
1/2 stick (4 tablespoons) butter
1/4 cup all-purpose flour
2 1/2 cups whole milk
2 heaping teaspoons dry mustard (more if desired)
1 pound sharp Cheddar, grated (not pre-grated cheese), plus more for baking
Salt
Seasoned salt
1/2 teaspoon ground black pepper
Optional spices: cayenne pepper, paprika, thyme
1 pound thick-cut peppered bacon
3 yellow onions, halved and sliced
3 tablespoons butter
8 ounces gorgonzola
Cooked sliders and/or macaroni and cheese, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the macaroni until still slightly firm. Drain and set aside.
  • In a small bowl, beat the egg. In a large pot, melt the butter and sprinkle in the flour. Whisk together over medium-low heat. Cook for a couple of minutes, whisking constantly. Don't let it burn. Pour in the milk, add the mustard and whisk until smooth. Cook until very thick, about 5 minutes. Reduce the heat to low.
  • Take 1/4 cup of the sauce and slowly pour it into the beaten egg, whisking constantly to avoid cooking the eggs. Whisk together until smooth. Pour the egg into the sauce, whisking constantly. Stir until smooth. Add in the cheese and stir to melt. Add 1/2 teaspoon salt, 1/2 teaspoon seasoned salt and the pepper. Add any additional spices if desired. Taste the sauce and add more salt and seasoned salt as needed! DO NOT UNDERSALT.
  • Pour in the drained, cooked macaroni and stir to combine. Serve immediately (while it's still very creamy) or pour into a buttered baking dish, top with extra cheese and bake until bubbly and golden on top, 20 to 25 minutes.
  • Fry the bacon in a skillet over medium-high heat until slightly crisp, about 8 minutes. Remove from the pan and cut into bite-size pieces.
  • In a separate pan, cook the onions in the butter over a low heat until caramelized, 20 to 30 minutes, stirring occasionally.
  • Use a fork to crumble the gorgonzola.
  • Put the bacon, caramelized onions and crumbled gorgonzola into separate bowls. Serve as delicious toppings for both sliders and macaroni cheese.

1 (20 ounce) package Simply Macaroni & Cheese
3 cups mushrooms, sliced (crimini and shitake)
4 tablespoons bacon fat or 4 tablespoons vegetable oil, divided
1 tablespoon white truffle oil
1/2 cup panko breadcrumbs

Steps:

  • Thaw overnight the package of Simply Macaroni & Cheese in the refrigerator.
  • When ready to cook, preheat oven for 400 degrees F.
  • In a frying pan or large skillet, heat 2 tbsp of the bacon fat on medium-high. When fat has melted and is sizzling, add the mushrooms and saute them for 4-5 minutes.
  • Open the package of Simply Macaroni & Cheese and add to the frying pan. Mix well and allow to cook for 2 minutes. Sprinkle the white truffle oil around the pan and stir well to combine all of the flavors.
  • Pour the mixture into a deep glass or ceramic bread loaf pan. Melt the remaining 2 tbsp of bacon fat in the microwave and stir in the panko breadcrumbs. Stir well to incorporate the bacon fat. Top the mac and cheese with the panko breadcrumbs evenly.
  • Bake in the upper portion of the oven for 16-20 minutes, or until the topping is golden and the cheese sauce is bubbly. Serve hot!

2 2/3 cups small elbow macaroni (or bow ties or ditali)
4 tablespoons butter
1 cup fresh whole wheat bread crumbs
1/4 cup all-purpose flour
1 1/2 cups milk
1 1/2 cups vegetable or chicken broth
4 green onions, thinly sliced
3 cups (12 ounces) grated cheddar cheese

Steps:

  • Cook macaroni in boiling salted water until tender, but firm. Drain well. Preheat the broiler. Melt the butter in a saucepan. Remove and toss 1 tablespoon of the butter with the bread crumbs. Reserve. Add the flour to the remaining butter, whisking for 2 minutes. Slowly whisk in the milk and broth. Bring to a boil, whisking constantly. Add green onions. Whisk 2 minutes longer. Remove from heat or keep on very, very low
  • heat. Add half of the cheese, stirring until smooth. Add remaining cheese, stirring until melted and smooth. Add the macaroni to the sauce and stir well. Spoon into a 2-quart shallow baking dish. Sprinkle with the buttered crumbs. Broil until the crumbs brown, about 2 minutes. Serve immediately. (If you wish, the mixture can be prepared before broiling up to several hours ahead and refrigerated. You may need to stir in a little more milk or broth if it thickens to much. Then bake, covered, for 15 minutes at 375 degrees. Uncover, and bake about I0 minutes more until crumbs are browned and casserole is hot and bubbly.)
  • IDEAS FOR LIVENING UP BOXED MAC AND CHEESE
  • Stir in chopped pasta-ready canned tomatoes and chopped fresh basil (Italian)
  • Stir in a can of chopped green chiles and a teaspoon of chili powder (Mexican)
  • Stir in a can of drained water-packed tuna fish, a small can of olives, and some chopped fresh herb such as parsley, basil, thyme, tarragon, sage, or chives
  • Stir in leftover bits of cooked vegies (broccoli or corn) or deli meats (ham or smoked turkey or salami

8 ounces elbow macaroni
10 ounces Kraft macaroni and cheese, dinner (with the can of creamy cheese)
1/2 cup butter (softened)
1/3 cup seasoned bread crumbs
1 (13 ounce) can Carnation Evaporated Milk
16 ounces sharp cheddar cheese
8 ounces colby cheese
8 ounces monterey jack cheese
8 ounces Velveeta cheese
1/4 teaspoon celery salt
2 teaspoons onion powder
2 large eggs, beaten
2 teaspoons goya vegetable seasoning
salt and pepper (to taste)

Steps:

  • Cook macaroni about 3 minute less than the package directions.
  • While the macaroni is cooking:.
  • Grate about 2 ounce each of colby, monterey jack and half of the cheddar. Cut rest of the blocks into medium cubes. Slice the Velveeta. Set aside 1/2 cup of grated cheese to mix with bread crumbs.
  • Drain macaroni. Put butter, milk, grated cheese, celery salt, onion powder, salt, pepper, vegetable seasoning, cheese sauce in can and sliced Velveeta in a large saucepan.
  • Heat on low heat until cheeses are creamy. Put hot macaroni in large bowl. Add sauce, mix well. Add beaten eggs and mix well. Add cheese cubes. The cheese cubes will not melt completely. Add more milk if needed. Mix thorougly. Adjust seasoning if necessary.
  • Pour into large baking dish. Mix remaining grated cheese and 1/3 cup bread crumbs together. Sprinkle on top of mac and cheese. Drizzle 2 tablespoons melted butter on top of grated cheese and bread crumbs.
  • Bake at 350 for 35 to 45 minutes. Put under broiler to lightly brown the bread crumbs on top. Let set 15 minutes before serving.
  • If you like it cheezy, this is for you.

This perfect baked macaroni cheese recipe comes with a creamy cheese sauce, a hint of mustard and uses leftover French stick for its crunchy topping

50g baguette, cut into small chunks
2 tbsp butter, plus 1 tbsp melted
350g spiral or other short pasta
1 garlic clove, finely chopped
1 tsp English mustard powder
3 tbsp plain flour
500ml whole milk
250g vegetarian mature cheddar, grated
50g parmesan (or vegetarian alternative), grated

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Spread the baguette chunks over a baking sheet, drizzle with the melted butter and season. Bake for 6 mins until crisp, then set aside.
  • Boil the pasta for 2 mins less than stated on the pack, then drain. Meanwhile, melt the butter in a saucepan. Add the garlic and English mustard powder, cook for 1 min, then stir in the plain flour.
  • Cook for 1 min more, then gradually whisk in the milk until you have a lump-free sauce. Simmer for 5 mins, whisking all the time until thickened. Take off the heat, then stir in the cheddar and half the parmesan.
  • Stir the pasta and some seasoning into the cheesy sauce. Tip into a large ovenproof dish, or four individual dishes.
  • Scatter over the bread and the remaining parmesan, then bake for 20 mins until crisp and golden. Can be frozen before baking - defrost thoroughly before cooking.
