Want ice cream but you didn't plan ahead and get it going? Just too busy? No ice cream maker? I've got the answer -- and it's done in an instant. As in a minute or so! You need 3 things: frozen fruit, liquid, and a high-powered blender. Serves 4 to 5 (1-cup servings).

Number Of Ingredients 4

1 1/2 cups cream (whole milk, kefir, or yogurt -- or even water or juice for sorbet)
16 ounces organic strawberries (frozen about 3 to 4 cups -- or mixture of berries or other frozen fruit altogether)
1/4 to 1/3 cup sweetener (dry, or to taste -- whizzed fine* separately beforehand)
1 teaspoon vanilla extract

Steps:

  • Combine all ingredients in the order listed in the Vitamix or Blendtec container.
  • Put the lid on.
  • Start the speed on low and increase slowly as the fruit gets broken up fully and the mixture starts circulating pretty freely.
  • If using the Vitamix, use the tamper while blending to help the mixture circulate.
  • If using the Blendtec, stop and scrape sizes as needed or use the Twister jar with lid that has side scrapers built in (and a smaller batch).
  • When there are no longer chunks of fruit and it's all smooth, it's done.
  • Serve!

The hardest thing about this is waiting for it to freeze, this also works using other fruit such a blueberries, peaches etc but the fruit must be frozen when added to the blender, thaw just slightly and enough to chop the whole berries, cooking time is freezer time, use sweetened berries for this --- this may also be done in a food process with good results

24 ounces frozen sweetened strawberries (do not thaw completely just enough to chop)
1/2 cup sugar (more for a sweeter taste)
1 1/2 cups heavy whipping cream (35%)
red food coloring (optional)

Steps:

  • Chop the frozen strawberries then place in a blender.
  • In a bowl whisk the sugar into the cream; with the blender going, slowly add in the cream/sugar mixture through the opening in the lid, stopping to stir the mixture 3-4 times.
  • Blend until smooth but still with small bits of strawberries. in the mixture (the cream will thicken slightly).
  • Transfer to a shallow pan and freeze until firm (about 2-3 hours).

My new 1 1/2 quart ice cream freezer is getting a work out!! Came up with this idea after wondering if it would work, and it did, wonderfully. I used butterscotch pudding but I imagine any flavor would work. Note that this doesn't use extra sugar. The pudding should be enough.

1 (3 ounce) package instant pudding mix
4 cups whole milk
3 egg yolks

Steps:

  • separate eggs and use whites for something else (like breakfast).
  • beat yolks and 2 cups milk until well combined.
  • heat mixture over low to medium heat to near boiling. It should coat a spoon dipped into it when ready.
  • cool for 15 or more minutes then add the rest of the milk.
  • refrigerate for at least two hours.
  • add pudding mix and stir for 30 seconds to remove major lumps (don't worry about small lumps, they will disappear during freezing process.).
  • add to ice cream freezer and process according to your machines directions.

I really wanted some ice cream, but trying to loose weight. So I came up with this and it's very good. Ice "cream" without all the fat and guilt but plenty of taste! You could use any frozen fruit you have on hand and I think it would work just as good. Check out the nutritional values on this treat. Makes one large treat or two smaller ones.

1 1/4 cups frozen strawberries (must be frozen)
1/3 cup nonfat dry milk powder
1/8-1/4 cup water
2 teaspoons sugar, to taste (I use splenda)
1/2 teaspoon vanilla (optional)

Steps:

  • Place frozen strawberries in food chopper (I use the ultimate chopper, even chops the berry seeds) and chop until the strawberries are frozen crystals.
  • Add powdered milk, 2-3 tablespoons of water, sugar and vanilla.
  • Pulse chopper until mixture is consistency of ice cream.
  • You may have to add little more of the water and pulse more to get the consistency you like.
  • This is more the consistency of "soft serve" ice cream rather than the hard kind in the freezer section.

  • Stir honey (or LC sweetener) into warmed coconut milk (or cream for dairy version), until honey is fully dissolved. Allow honey-milk to come to room temperature.
  • Place coconut milk ice cubes and frozen strawberries into high-powered blender. Blend until powdered. (This may be noisy, depending on your blender brand.)
  • Use a wooden chopstick or handle to get all the frozen powder loosened from the corners. Add the remaining ingredients; (BUT don't add all of the liquid all at once; start by adding about 2/3 of the total, then see if you need all of it. If you use all of it, you may need to freeze the ice cream longer before scooping. If you want to serve it right away, don't add all the liquid.) Blend and scrape the sides as necessary, or us a tamper, until an ice cream consistency is achieved.
