1-1/2 teaspoons prepared horseradish
1/4 teaspoon garlic powder
1/4 teaspoon curry powder
1 medium cucumber
1 ounce smoked salmon or lox, cut into thin strips
Kosher salt
Coarsely ground pepper
Chives

Steps:

  • In a small bowl, combine the cream cheese, horseradish, garlic powder and curry; set aside., With a vegetable peeler or metal cheese slicer, cut 12 very thin slices down the length of the cucumber; pat dry. Spread about 1 teaspoon cream cheese mixture down the center of each cucumber slice. Roll up., Arrange salmon on top of rolls; sprinkle lightly with salt and pepper. Garnish with chives.

This is an easy appetizer which tastes great!

2 cucumbers (, peeled and sliced 3/4 inch thick and hollowed with a melon baller)
8 oz block cream cheese at room temperature
2 tbsp mayonnaise
2 tsp Hidden Valley Ranch dressing mix
1/4 tsp salt
Halved grape tomatoes

Steps:

  • Peel and slice cucumbers to 3/4 thick.
  • With a melon baller, cut out center portion of the cucumber.
  • Mix the cream cheese, mayo, hidden valley ranch mix, and salt in a bowl.
  • Place in a pastry bag with a rosette pipette end.
  • Pipe cucumber slice with cream cheese to 1/2 inch above cucumber.
  • Stand a halved grape tomato in the cream cheese.
  • Sprinkle with chives, fresh dill weed, or parsley to garnish.

2 cucumbers washed
8 oUnce low fat whipped cream cheese
1/2 cup low fat mayonnaise
1/2 cup low fat sour cream
1 tablespoon or more dry ranch mix dressing
4 ounces smoked salmon/lox or roasted bell pepper
Chives (for garnish)

Steps:

  • Cut off the ends of your cucumber. Then using a potato peeler make your cucumber look beautiful by creating stripes down the sides of the cucumbers. Cut cucumber into about 1inch rounds
  • Scoop out the seeds and flesh from each cucumber slice- careful not to scoop a lot of the flesh.
  • Place cucumber side down on paper towel to soak up excess water.
  • Mix cream cheese, sour cream , mayonnaise and ranch seasonings. Place in the fridge
  • When ready place or pipe cream cheese filling into the cucumber.
  • Slice lox and place around cucumber or place on top of cheese filling.
  • Decorate with chives

1/2 cup stuffed olives, chopped
1/4 cup chopped chives

Steps:

  • Remove ends from cucumber and cut in half lengthwise. Using a melon baller, remove seeds from both halves.
  • In a small bowl, combine cream cheese, olives and chives. Blend until well mixed.
  • Stuff each cucumber half with the cheese and reassemble halves, pressing together gently.
  • Wrap in plastic wrap and refrigerate overnight. Cut into ¼ inch slices to serve.

1 (8 ounce) container sour cream
1 (3 ounce) package smoked salmon, chopped into small pieces
1 shallot, diced
1/2 lemon, juice of, seeds removed
1 bunch fresh dill, chopped
1 pinch salt & fresh ground pepper

Steps:

  • Using a potato peeler, make stripes on the outside of each cucumber by peeling down the length of the cucumber, leaving every other section intact.
  • Cut off the ends of cucumber and slice into 1-inch rounds.
  • Using a melon baller, scoop out the seeds and inner flesh from the top 2/3's of each cucumber slice to create a tiny bowl in each piece of cucumber(DO NOT scoop all of the way through); Set aside.
  • In a bowl, combine equal parts cream cheese and sour cream.
  • Mix in salmon, shallots, lemon juice, salt and pepper, combining thoroughly.
  • Transfer the mixture to a pastry bag with a star 8 tip.
  • Pipe the filling generously into each cucumber section.

2 standard cucumbers
3/4 pound medium shrimp, thawed, deveined and shells on
1 tablespoon prepared horseradish
1 teaspoon lemon juice
Kosher salt
Freshly ground black pepper
1 (15-ounce) can chopped tomatoes, drained
2 tablespoons chopped parsley, divided

Steps:

  • Peel the length of each cucumber to form alternating stripes of unpeeled and peeled. Cut the cucumbers into 12 (3/4-inch) pieces. Scoop out the center using a teaspoon or a melon baller, leaving the bottom and sides intact to form a cup. (Reserve the centers for the Round 2 Recipe Chicken Tacos with Cucumber Salsa.) Turn them upside down onto a towel and let them drain while you make the filling.
  • Bring a medium pot of salted water to a boil over medium heat. Add the shrimp and cook until bright pink, about 3 to 4 minutes. Strain and rinse in cold water. Remove the shells and discard. (Reserve 12 shrimp for the Round 2 Recipe Shrimp and Potato Salad with Sour Cream and Bacon Dressing.)
  • Chop the shrimp into small pieces and put them into a bowl. Evenly divide the shrimp mixture between the cucumber cups. Arrange them on a serving platter and garnish with remaining parsley.
