1/4 cup water
1 tsp sugar
1 tbsp dark soy sauce ((Note 1))
1 1/2 tbsp light soy sauce ((Note 1))
1 tbsp Chinese cooking wine ((Shaoxing wine) (Note 2))
1/8 tsp Chinese five spice powder ((Note 3))
1 tsp sesame oil (optional)
1/8 tsp tsp black pepper
2 tbsp oil
12 oz / 360g beef fillet, flank or rump ((Note 4 for tenderising option))
1 garlic clove, finely chopped
1 tsp fresh ginger, finely chopped
4 - 5 cups broccoli florets ((1 head), cooked (Note 5))
1 cup water
Sesame seeds (optional)

Steps:

  • Place cornflour and water in bowl then mix. Add remaining Sauce ingredients.
  • Slice the beef into 1/4" / 0.5cm thick slices. Place the beef and 2 tbsp of the Sauce into a bowl and set aside.
  • Heat oil in a skillet over high heat. Add beef and spread out, leave for 1 minute until browned.
  • Stir beef for 10 seconds, then add garlic and ginger. Stir for another 30 seconds or until beef is no longer pink.
  • Pour Sauce and water into the skillet and quickly mix.
  • When the sauce starts bubbling, add broccoli. Stir to coat the broccoli in Sauce, then let it simmer for 1 minute or until Sauce is thickened.
  • Remove from heat immediately and serve over rice. Sprinkle with sesame seeds if desired.

¼ cup brown sugar

1 cup beef broth
4 cups broccoli floret
2 tablespoons cornstarch
2 tablespoons water
sesame seed, as desired

Steps:

  • In an oiled skillet over medium-high heat, sear the steak until cooked all the way through. Remove from the pan.
  • Add a little more oil, then add the garlic and ginger to the pan. Sauté until soft.
  • Add the sesame oil, soy sauce, brown sugar, honey, and beef broth. Stir until combined.
  • Add the broccoli florets.
  • In a separate bowl, combine cornstarch and water. Add to broccoli mixture. Bring to a boil, until sauce has thickened.
  • Add the beef back into the mixture, and serve over rice with sesame seeds, if desired.

8 oz.(226 g) beef tenderloin, flank steak or flap meat, cut into pieces
6 oz. (175 g) broccoli florets
water, for boiling
2 1/2 tablespoons oil
2- in ginger, peeled and sliced (5 cm)
1/2 tablespoon soy sauce
1 teaspoon rice wine or sherry
1/2 teaspoon sesame oil, optional
3 dashes white pepper
1 tablespoon corn starch
1 tablespoon soy sauce
1 tablespoon oyster sauce
1/4 teaspoon sesame oil
1/2 teaspoon sugar
1 teaspoon corn starch
4 tablespoons water

Steps:

  • Marinate the beef with all the ingredients for the Marinade, about 15 minutes.
  • Bring the water to boil and add a few drops of oil. Blanch the broccoli florets in the hot water, about 10 seconds. Remove the broccoli immediately with a strainer or slotted spoon, draining the excess water. Set aside.
  • Heat 1 tablespoon of oil in a wok or skillet over high heat. Stir-fry the beef until 70% cooked. Dish out and set aside.
  • Heat the remaining oil in a wok or skillet over high heat. Add the ginger and stir-fry until aromatic. ''It's diaspora food,'' the chef Jonathan Wu told me, describing the cooking of Chinese immigrants to the United States and a dish that is almost unknown in China but beloved in America. The recipe is a version of the one Wu's mother made for dinner when he was growing up outside Hartford, Conn., with a little chile-garlic paste added for zip and, thanks to the Brooklyn chef Dale Talde, a pat of butter swirled into the sauce at the end. This provides a plush gloss that is far better than the traditional cornstarch slurry. It is midweek family cooking at its best.

1/3 cup Shaoxing rice wine, dry sherry or sake
3 tablespoons plus 2 teaspoons soy sauce
1 tablespoon cornstarch
1 pound beef - chuck or rib steak - sliced thin against the grain
1/4 cup oyster sauce
1/2 tablespoon chile-garlic sauce, or to taste
1/2 cup plus 1 tablespoon neutral oil, like canola, grapeseed or peanut
1 pound broccoli, the head cut into florets and the stems peeled and cut into planks
2 tablespoons unsalted butter

Steps:

  • In a large bowl, whisk together the wine, 2 tablespoons of the soy sauce and the cornstarch. Add the beef to the bowl, and toss to combine, then cover the bowl, and set aside for 20 minutes or so.
  • To make the sauce, combine in a small bowl the remaining soy sauce, the oyster sauce and the chile-garlic sauce, and mix to combine, then add a tablespoon of water and mix again. Set aside.
  • Heat the 1/2 cup of oil in a wok set over high heat. When the oil is hot and shimmering, add about half the beef to the wok, and stir-fry until it is browned and crisp and barely cooked through, about 2 minutes. Transfer to a bowl or plate, and set aside. Then repeat with remaining beef.
  • Pour off the oil in the wok, wipe it out with a towel and return it to the stove over high heat. Add the remaining tablespoon oil, and swirl it around and heat it until it is smoking. Add the broccoli and cook, tossing and stirring frequently, until lightly charred in spots, about 2 minutes.
  • Add 2 tablespoons water to the wok, and toss and stir the broccoli in the steam for an additional 2 minutes, then return beef to the wok, followed by the sauce. Cook, stirring and tossing frequently, for 30 seconds or so, then add the butter, and stir and toss again for 30 seconds more. Serve immediately, with rice.

  • Slice the steak against the grain into very thin slices.
  • Combine the soy sauce, sherry, and cornstarch and pour this mixture over the steak.
  • Marinate the meat for 15 minutes.
  • While the meat is marinating, slice the broccoli at a diagonal and mince garlic and ginger.
  • Heat a wok or large frying pan for 30 seconds, add oil, wait about 20 seconds, and add minced garlic and ginger root. Fry over high heat, stirring constantly for about 20 seconds more, then add the beef.

1 to 1.25 pounds flank steak, sliced into thin strips, no more than 1/4-inch thick
1/4 cup cornstarch
3 tablespoons olive oil, divided
2 tablespoons sesame oil, divided
4 cloves garlic, pressed or finely minced
1 to 2 teaspoons ginger, or to taste (fresh or dried is okay, use less dried than you would fresh)
1/2 cup low-sodium soy sauce
1/2 cup water
3/4 cup dark brown sugar, packed (light may be substituted)
4 to 6 cups broccoli florets (dependent on preference for broccoli)
2 to 3 green onions, sliced into 1/4-inch long segments
red pepper flakes, optional and to taste
sesame seeds, optional for garnishing

Steps:

  • To a large ziptop bag, add the steak, cornstarch, seal, and toss to coat. Set aside while preparing the sauce.
  • To a medium saucepan, add 1 tablespoon olive oil, 1 tablespoon sesame oil, garlic, ginger, and heat over medium-high for about 1 minute, or just until garlic is fragrant, taking care not to scorch it.
  • Add the soy sauce, water, brown sugar, and stir until the sugar has dissolved. Bring to a boil and allow it to boil for about 2 to 3 minutes. Then reduce the heat to low and simmer for about 5 minutes, or until slightly thickened and reduced. While it simmers, sear the steak.
  • To a large skillet, add the remaining 2 tablespoons olive oil, 1 tablespoon sesame oil, and the steak. Cook over medium-high or high heat until steak is cooked through, about 5 to 7 minutes, flipping the pieces intermittently to ensure even cooking.
  • Add the broccoli.
  • Evenly drizzle in the soy sauce mixture, noting it will bubble up dramatically. Toss the beef and broccoli to coat evenly with the sauce. Simmer for about 3 to 5 minutes at medium-high, or until the broccoli is as crisp tender as desired.
  • Optional - If your sauce hasn't thickened up as much as you'd like and your broccoli is done or nearly done, and you want a sauce that clings better and isn't as thin, simply dissolve 1 tablespoon cornstarch in 1 tablespoon water (called a slurry), add it to the skillet, stir for about 1 minute, or until your sauce has thickened to your desired level. Since I used 6 cups broccoli, the natural water and juices that escaped from it thinned out my sauce, so I needed to use a slurry.
  • Turn off the heat, add the green onions, and stir to incorporate.
  • Optionally, evenly sprinkle with red pepper flakes (makes the dish taste more authentic and gives it flavor without adding much heat), optional sesame seeds, and serve immediately.

1 lb. beef flank steak, thinly sliced
1 head broccoli, cut into florets
2 tablespoons vegetable oil
3 cloves garlic, thinly sliced or minced
one 1-inch knob fresh peeled ginger, grated or sliced
white rice, brown rice, or cauliflower rice for serving
thinly sliced green onions for serving
1/4 cup low sodium soy sauce
1/4 cup water
1/3 cup brown sugar (sub coconut sugar)
1 tablespoon sambal oelek
1 tablespoon rice vinegar (sub white vinegar)
1 tablespoon sesame oil
1 tablespoon cornstarch

Steps:

  • Freeze beef for 30 minutes - 1 hour for easier slicing. Slice against the grain, into very thin strips. Toss the beef strips with a generous pinch of coarse salt and let it rest while you prep everything else. (All of this is optional but recommended for flavor and texture.)
  • Whisk the sauce ingredients together.
  • Heat a large heavy skillet over medium heat. Add a swish of oil. Working in batches, add the beef in a single layer. Let rest, undisturbed, for a minute or two to achieve a nice browning on the meat. Flip each piece over and cook until browned and yummy. Remove beef from pan.
  • Add a swish of oil to the same pan. Add the broccoli; stir fry for 2-3 minutes, until bright green. (Sometimes I add a splash of water to steam it a little bit.) Remove broccoli from pan.
  • Turn the heat down and let the pan cool a bit. Add one last swish of oil. Add the ginger and garlic; sauté for 1-2 minutes. Add the sauce; stir until a thickened and sticky sauce forms. Add beef and broccoli back in. Toss gently to coat.

180 g broccoli florets

  • Cut and marinade the beef. Cut the beef into slices. Marinate the beef with all the ingredients from the beef marinade for about 15 mins.
  • Blanch the broccoli and carrot. Bring a pot of water to boil and add a few drops of oil. Blanch the broccoliflorets and carrot in the hot water about 10 seconds. Remove the broccoli and carrot immediately with a slotted spoon or strainer, draining the excess water. Set aside.
  • Stir fry the beef. Heat 1 tbsp oil in a skillet over high heat. Stir fry the beef until 70% cooked Dish out and set aside

1 tbsp cooking oil
2 tsp cornstarch
2 tbsp light soy sauce

  • Then add the broccoli to stir-fry until tender-crisp. Return the beef to the pan.
  • Add the stir-fry sauce.
  • Thicken the sauce with cornstarch slurry. Serve.

1 pound flank steak ((sliced 1/4-inch or 0.6cm thick))
1/4 teaspoon baking soda ((optional))
3 tablespoons water
1 1/2 teaspoons cornstarch
2 teaspoons vegetable oil
1 teaspoon oyster sauce
2/3 cup low sodium chicken stock ((warmed))
1 1/2 teaspoons granulated sugar ((or brown sugar))
1 1/2 tablespoons soy sauce
1 teaspoon dark soy sauce
1 tablespoon oyster sauce
1/2 teaspoon sesame oil
1/8 teaspoon white pepper
4 cups broccoli florets
3 tablespoons vegetable oil ((divided))
2 cloves garlic ((minced))
1/4 teaspoon ginger ((grated/minced, optional))
1 tablespoon Shaoxing wine
2 1/2 tablespoons cornstarch ((mixed with 3 tablespoons/45ml water))

Steps:

  • In a bowl, add the sliced beef, ¼ teaspoon baking soda, and 3 tablespoons water (if you don't want your beef tenderized too much, omit the baking soda). Massage the beef with your hands until all the liquid is absorbed. Mix in 1 ½ teaspoons cornstarch, 2 teaspoons oil, and 1 teaspoon oyster sauce, and set aside to marinate for at least 30 minutes.
  • Make the sauce mixture by mixing together the chicken stock, sugar, soy sauce, dark soy sauce, oyster sauce, sesame oil, and white pepper. Set aside.
  • Bring 6 cups of water to a boil and blanch your broccoli for 30 to 60 seconds (depending on whether you like your broccoli crunchy or a little soft). Drain and set aside.
  • Heat your wok over high heat until smoking. Add 2 tablespoons oil and sear the beef on both sides until browned (this should only take 2-3 minutes). Turn off the heat, remove the beef from the wok, and set aside.
  • Set the wok over medium heat and add another tablespoon of oil to the along with the garlic and ginger (if using). Stir the garlic and ginger for 5 seconds and then pour the Shaoxing wine around the perimeter of the wok.
  • Next, add in the sauce mixture you made earlier. Stir the sauce around the sides of the wok to deglaze it (all those nice bits from stir-frying the beef should be absorbed into the sauce). Bring the sauce to a simmer. Stir the cornstarch and water into a slurry to ensure it's well combined, and drizzle the mixture into sauce while stirring constantly. Allow it to simmer and thicken for 20 seconds.
  • Toss in the blanched broccoli and seared beef (along with any juices). Mix everything together over medium heat until the sauce coats the beef and broccoli. If the sauce seems thin, turn up the heat and reduce it further, or add a bit more cornstarch slurry. If the sauce is too thick, add a splash of chicken stock or water. Serve with plenty of steamed rice!

1/4 cup light brown sugar
2 tablespoon cornstarch
1 cup beef broth

2 broccoli crowns cut into small florets
2 to 3 green onions

Steps:

  • Combine sliced steak with 1 tablespoon of dark soy sauce and 2 tablespoons of mirin. Set aside to marinate while working on the sauce.
  • In a small bowl whisk together the ingredients for the stir-fry sauce: the remaining 3 tablespoons soy sauce, oyster sauce, ginger paste, garlic paste, and brown sugar.
  • Spoon a couple of tablespoons of the beef broth into the cornstarch and stir to dissolve the cornstarch.
  • Mix both the cornstarch mixture and the remaining beef broth into the rest of the stir-fry sauce.
  • Drain the marinated steak and discard juices.
  • Heat the oil in a skillet or wok over medium-high heat until the oil is nearly smoking and a drop of water in the pan sizzles immediately.
  • Drop the drained meat into the pan and stir-fry for 2 to 3 minutes until the meat is browned on both sides.
  • Remove the meat from the pan and set it aside.
  • Add a thin layer of water to the bottom of the pan, just a few tablespoons to steam/simmer the broccoli in. You can use a clean pan or the pan you've just used to cook the meat.
  • Add the broccoli florets to the skillet and bring to a simmer. Simmer over medium-high heat, tossing the broccoli a few times until it begins to soften and turns vibrant green, about 3 to 4 minutes.
  • Add about half of the prepared sauce to the broccoli and bring to a simmer. Stir and simmer 1 to 2 minutes longer until the sauce thickens.
  • Add the cooked meat back into the pan and add as much of the remaining sauce as you'd like. This recipe makes a very saucy dish.
  • Heat the meat through and simmer long enough to thicken any additional sauce you have added.
  • Garnish with sliced green onions and toasted sesame seeds, if desired.
  • Serve over white rice or fried rice
