LOW-FAT CORN MUFFINS



Low-Fat Corn Muffins image

"These quick corn muffins use applesauce in place of oil," explains Gary Raymond of Seattle, Washington. "My friends say they're the best."

Yield 1-1/2 dozen.

Number Of Ingredients 10

1-1/3 cups all-purpose flour
1-1/3 cups cornmeal
1/3 cup nonfat dry milk powder
1/4 cup sugar
4 teaspoons baking powder
1/4 teaspoon salt
1 can (8-1/4 ounces) cream-style corn
3/4 cup water
1/2 cup egg substitute
1/2 cup unsweetened applesauce

Steps:

  • In a bowl, combine the first six ingredients. In another bowl, combine corn, water, egg substitute and applesauce; mix well. Stir in dry ingredients just until moistened. Fill muffin cups coated with cooking spray two-thirds full. Bake at 350° for 17-20 minutes or until muffins test done. Cool for 5 minutes before removing from pans to wire racks.

Number Of Ingredients 10

1 cup whole wheat pastry flour
1/4 cup almond flour
1/2 cup cornflour
1/4 cup soy flour
1/4 cup Splenda sugar substitute
2 teaspoons baking powder
1/2 teaspoon salt
1 cup skim milk
1/4 cup canola oil
1 egg

Steps:

  • Sift together dry ingredients. Mix together wet ingredients and add to dry. Mix until moistened and pour into 12 greased muffin pans. Bake 15 - 20 minutes at 400* F. Cool in pan for 3 - 4 minutes and then on racks.

  • In a large bowl, combine eggs, heavy whipping cream, coconut milk, melted butter (cooled slightly), and cream cheese. Using a hand mixer, mix everything until the cream cheese is well-incorporated. (It's okay if you have a few small flecks remaining.) Set aside.
  • In a medium-sized bowl, combine coconut flour, almond meal, Swerve Confectioners, baking powder, and salt. Mix thoroughly.
