1 1/2 lb. Ground Beef
3/4 c. Oats
1 c. Milk
3 tbsp. Very Finely Minced Onion
1 1/2 tsp. Salt
Plenty Of Ground Black Pepper, to taste

FOR COOKING MEATBALLS
1 c. All-Purpose Flour (coating For Frozen Meatballs)
Canola Oil
_____
FOR SAUCE
1 c. Ketchup
2 tbsp. Sugar
3 tbsp. Vinegar
2 tbsp. Worcestershire
4 tbsp. (to 6 Tablespoons) Onion
1 dash Tabasco

Steps:

  • Preheat oven to 350 degrees.Combine all meatball ingredients. Roll into medium-small balls and place on a cookie sheet. Place sheet in freezer for five minutes.After 5 minutes, remove meatballs from freezer and immediately dredge in unseasoned flour. Brown meatballs in canola oil until just brown. Place into a baking dish.Combine all sauce ingredients. Pour over meatballs and bake at 350 degrees for 45 minutes. Serve with egg noodles, mashed potatoes, or crusty French bread.

5 pounds ground beef
1 1/2 cups plain breadcrumbs
1/2 cup milk
1/4 cup heavy cream
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons grainy mustard
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
4 large eggs
2 tablespoons olive oil

Steps:

  • To make the meatballs, combine the ground beef, breadcrumbs, milk, cream, parsley, mustard, salt, black pepper, red pepper flakes and eggs in a large mixing bowl. Mix together well with your hands. Scoop out 1-tablespoon portions and roll them into balls with your hands. Place the meatballs onto parchment-lined baking sheets and put the baking sheets in the freezer for 5 to 10 minutes for the meatballs to firm up.
  • To brown the meatballs, heat the olive oil in a heavy pot or large skillet over medium-high heat. Add the meatballs in batches, making sure not to overcrowd the pot. Cook, turning the meatballs to make sure they brown all over, 5 to 7 minutes per batch. Drain on paper towels.
  • Freezer instructions: Put the cooked meatballs in a single layer on baking sheets and put into the freezer. When frozen, divide them into freezer bags, 25 per bag, and return them to the freezer.

2 scallions, chopped (green only)
1 teaspoon black pepper
1 teaspoon oregano
1 teaspoon basil
2 egg whites
2 (8 ounce) cans no-salt-added tomato sauce
3 small roma tomatoes, diced
1/3 cup white onion, chopped
1/3 cup green bell pepper, chopped
1 tablespoon parsley flakes
1 tablespoon fresh garlic, minced
1 teaspoon basil
1 teaspoon oregano
1/4 cup red wine vinegar
2 (2 teaspoon) packets sugar substitute

Steps:

  • Mix the meatball ingredients first in a large enough bowl to get your hands inches.
  • Meatball ingredients are everything from the ground turkey down in the ingredients list.
  • Mix turkey, green onions, spices and egg whites together in a large mixing bowl.
  • Make golf ball sized meatballs and place on cookie sheet, lightly sprayed with cooking spray.
  • Bake at 350 for 20 minutes, or until lightly browned.
  • While the meatballs are baking, Start working on the sauce.
  • In a small sauce pan, saute the onion, bell peppers and parsley flakes over medium-high heat for a minute or two.
  • Add the tomao and tomato sauce and lower heat to low.
  • Add garlic, basil, oregano, red wine vinegar and packets of sugar substitute to pan. stir well and let simmer for 5 minutes.
  • Do a taste test; add more kick or sweet as needed. Continue simmering 5 more minutes or until sauce thickens slightly.
  • Combine your sauce and meatballs in a large enough pot and warm for about 5 minutes as the flavors join.

1 tablespoon loosely packed brown sugar
1 teaspoon hot sauce
1 teaspoon Worcestershire sauce
One 25-count bag All-Purpose Meatballs (still frozen is fine), recipe follows
Mashed potatoes, for serving
Chopped fresh parsley, for serving
Green salad, for serving
5 pounds ground beef
1 1/2 cups plain breadcrumbs
1/2 cup milk
1/4 cup heavy cream
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons grainy mustard
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes

Steps:

¼ teaspoon minced garlic
1 cup brown sugar
¼ cup chopped onion

1/2 cup evaporated milk
1 cup dry bread crumbs
1 small onion, chopped
1 teaspoon salt

SAUCE:
1-1/2 cups water
2/3 cup packed brown sugar
1/4 cup chili sauce
3 tablespoons cider vinegar
3 tablespoons soy sauce
2 tablespoons ketchup
1-1/2 teaspoons ground ginger
1/4 teaspoon salt
1/8 teaspoon pepper
Dash Worcestershire sauce

Steps:

  • In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well. With wet hands, shape into 1-in. balls. In a large skillet, brown meatballs in small batches over medium heat, turning often. Remove with a slotted spoon and keep warm; drain. , In the same pan, combine sauce ingredients. Bring to a boil over medium heat. Reduce heat; add the meatballs. Simmer, uncovered, for 30 minutes or until sauce is absorbed.
