1 (8 ounce) can pillsbury refrigerated crescent dinner rolls
1 (4 ounce) can pillsbury refrigerated crescent dinner rolls
1 tablespoon sugar
1/3 cup chopped dried sweetened cranberries, craisins
1/3 cup chopped walnuts, can sub pecans
1 tablespoon powdered sugar

Steps:

  • Preheat oven to 375.
  • Unroll dough; separate into 12 triangles.
  • Sprinkle with sugar, craisins and walnuts.
  • Press craisins and walnuts lightly into dough.
  • Roll up loosely towards pointed end.
  • Place rolls point-side down, onto ungreased cookie sheet; curve into crescent shape.
  • Bake at 375 for 11-13 minutes or until golden brown.
  • Sprinkle with powdered sugar and serve warm.

2 large apples, peeled, cored and quartered
1 cup whole cranberry sauce
1/4 cup sugar
1/4 cup water
2 tablespoons apple juice
1 teaspoon lemon juice
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2/3 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
3 eggs
3/4 cup sugar
1/3 cup water
1 teaspoon vanilla
1/3 cup finely ground walnuts
8 ounces cream cheese
1 cup powdered sugar
1 teaspoon vanilla
4 tablespoons butter or margarine

Steps:

  • Preheat oven to 375 degrees F. Grease a jellyroll pan, line with waxed paper, and grease the paper.
  • Combine apples, cranberry sauce, sugar, water, apple juice, lemon juice, cinnamon, and nutmeg in a non-reactive heavy-bottomed saucepan. Cook over medium heat, stirring until mixture thickens, about 6 minutes. Set aside to cool.
  • For cake, sift together flour, baking powder, and salt on a piece of waxed paper, set aside. Beat eggs in medium bowl for 2 minutes. Gradually beat in sugar until thick and pale, about 5 minutes. Stir in water and vanilla. Fold in flour mixture and ground walnuts.
  • Pour into the prepared pan spreading evenly. Bake for 12 minutes.
  • Loosen cake around the edges with a knife. Invert the pan onto a clean towel dusted with powdered sugar. Remove from the pan. Carefully peel away waxed paper. Starting at short end, roll cake and towel together. Cool on a wire rack about 30 minutes.
  • When cake is cool, unroll carefully. Spread roll evenly with prepared fruit filling, leaving a 2-inch border along the short side, which will be the outside seam. Reroll the cake from short end, using towel as an aid. Place roll, seam side down, on serving platter.
  • Whip together frosting ingredients. Place into a pastry bag fitted with a star tip. Pipe whipped frosting around edges and on top of cake roll.

1/4 cup dried sweetened cranberries, coarsely chopped
1/3 cup chopped walnuts
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1 (12 ounce) can refrigerated buttermilk biscuits (10 biscuits)
1/2 cup mascarpone cheese or 1/2 cup cream cheese, softened
1/4 cup butter, melted
1 tablespoon mascarpone cheese or 1 tablespoon cream cheese, softened
1 cup powdered sugar
1 -2 tablespoon milk

Steps:

  • Heat oven to 350°F Lightly spray 8- or 9-inch round cake pan with cooking spray.
  • In small bowl, mix cranberries and walnuts; set aside. In another small bowl, mix granulated sugar and cinnamon; set aside.
  • Separate dough into 10 biscuits; press each biscuit into 3-inch round. Place heaping 1 teaspoon of the mascarpone cheese on center of each biscuit. Bring all sides of dough up over filling, stretching gently if necessary, and gather in center above filling to form a ball; firmly pinch edges to seal. Roll each biscuit in melted butter, then roll in sugar-cinnamon mixture. Place 1 biscuit in center of pan. Arrange remaining biscuits, seam sides down and sides touching, in circle around center biscuit. Pour remaining butter over biscuits; sprinkle with remaining sugar-cinnamon mixture.
  • Reserve 1/4 cup cranberry-walnut mixture; sprinkle remaining mixture over biscuits.
  • Bake 28 to 33 minutes or until biscuits are golden brown. Place heatproof serving plate upside down on pan; carefully turn plate and pan over. Let stand 1 minute, then carefully remove pan.
  • Sprinkle reserved cranberry-walnut mixture over coffee cake. In medium bowl, stir glaze ingredients until smooth. Drizzle glaze over top of rolls. Serve warm.

Mascarpone is a mild and creamy fresh cheese with a consistency similar to soft butter or thick crème fraîche and a fat content between 70 and 75 percent. You may know it as the key ingredient in the decadent Italian dessert tiramisu. This recipe hails from Allison Hooper, award-winning cheese maker and co-owner of the notable Vermont Butter & Cheese Creamery.

2 cups pasteurized heavy cream without thickeners
1/3 cup powdered skim milk
1 lemon, cut in half

Steps:

  • 1. Read through the recipe and review any terms and techniques you aren't familiar with. Assemble your equipment, supplies, and ingredients, including a dairy or kitchen thermometer; clean and sterilize your equipment as needed and lay it out on clean kitchen towels.
  • 2. In a nonreactive, heavy 2-quart saucepan with a lid, whisk together the cream and powdered milk. Place over low heat and slowly bring to 180°F, stirring constantly to prevent scorching. It should take about 40 minutes to come to temperature. Turn off the heat.
  • 3. Slowly squeeze the juice from half of the lemon into the cream. Switch to a metal spoon and keep stirring; do not use a whisk, as that will inhibit the curd formation. Watch carefully to see if the cream starts to coagulate. You will not see a clean break between curds and whey. Rather, the cream will coat the spoon and you will start to see some flecks of solids in the cream.
  • 4. Add the juice from the remaining lemon half and stir with the spoon to incorporate. Cover the pan and cool the cream in the refrigerator for 8 hours or overnight.
  • 5. When the cream is firm to the touch, transfer it to a bowl or colander lined with clean, damp butter muslin. Draw the ends together and twist into a ball to squeeze out the excess moisture. This last step will make the mascarpone thick.
  • 6. This cheese is now ready to eat. It has a very short shelf life, so refrigerate what you don't eat immediately and use it within 2 days.

1 tablespoon light brown sugar
1 1/2 teaspoons quick-rising dry yeast
1 1/2 teaspoons salt
1 1/2 cups whole milk
2 tablespoons vegetable oil, plus additional for coating bowl
1 large egg
1 cup sweetened dried cranberries
nonstick cooking spray
1 large egg, beaten to blend (for glaze)

Steps:

  • Stir the walnuts in a dry skillet over medium heat until toasted, about 5 minutes. Set aside to cool.
  • Mix 3½ cups bread flour with the brown sugar, yeast and salt in the bowl of a stand mixer fitted with a paddle attachment.
  • Warm the milk in a small saucepan over low heat until an instant-read thermometer inserted into the milk registers 95 degrees F. Add the oil; remove from the heat.

  • Add the nuts and the cranberries. Replace the paddle attachment on the mixer with a dough hook. Mix dough on low speed until smooth, elastic, and slightly tacky, adding more flour by the tablespoonfuls as needed, about 4 minutes. Transfer the dough to a floured surface and knead for about 2 minutes.
  • Lightly oil a large bowl. Shape the dough into a ball; place in the prepared bowl, turning to coat with oil. Cover with plastic wrap and let the dough rise at room temperature until almost doubled in volume, 1¾ to 2 hours.
  • Line a large baking sheet with parchment paper. Transfer the dough to an unfloured surfaced; divide into 12 equal pieces. Shape each piece of dough into a smooth round ball. Transfer the rolls to the prepared baking sheet, spacing them apart. Spray the rolls with nonstick spray. Cover loosely with plastic wrap; let rise at room temperature until 1½ times original size, about 1½ hours. Brush rolls with egg glaze; sprinkle with raw sugar. Let rise 15 minutes longer.
  • Position a rack in the center of the oven and preheat to 425F,.
  • Place rolls in oven; reduce oven temperature to 400 degrees F and bake 7 minutes. Rotate baking sheet; continue to bake rolls until golden and slightly firm to the touch, about 8 minutes longer. Cool completely on a cooling rack.

1 cup fresh cranberries, coarsely chopped
1 cup walnuts, chopped
2 large eggs
1 cup buttermilk
6 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 425°; grease a 9 x 5 inch loaf pan or spray it with cooking spray.
  • Combine cornmeal, flour, brown sugar, salt, baking soda, and orange zest in a bowl.
  • Add in the cranberries and walnuts; stir to combine.
  • In a small bowl, mix the eggs and buttermilk with a whisk; add to the dry ingredients and pour the melted butter on top.
  • Stir just until all ingredients are moistened and thoroughly blended; don't overmix.

1/2 teaspoon ground cloves
1/4 cup sugar
18 sheets phyllo dough
1 lb unsalted butter, melted
2 cups water
1 1/2 cups sugar
1 lemon wedge

Steps:

  • Preheat oven to 375.
  • Mix nuts, cinnamon, cloves, and 1/4 cup sugar and set aside.
  • Brush 3 sheets of phyllo with butter and stack on top of each other. Sprinkle evenly with thin layer of nut mixture. Repeat with 3 more sheets and another layer of nuts. Roll up like a cinnamon roll. Brush top of roll with butter.
  • Repeat to make 2 more rolls.
  • Cut each roll in 1" slices. Place slices next to each other in baking pans.
  • Bake 30 minutes, until pastry is brown.
  • Meanwhile, make glaze. Combine 2 cups water, 1 1/2 cups sugar and piece of lemon in pot and simmer about 10 minutes.
  • Pour warm syrup over cookies as soon as they come out of the oven.
