1 pound cremini mushrooms (baby bella), coarsely chopped

Steps:

  • Heat 1 teaspoon oil in a large skillet over medium-high heat. Add shallots and cook, stirring, until starting to lightly brown, about 30 seconds. Add mushrooms and cook, stirring frequently, until their liquid is almost evaporated, 4 to 5 minutes. Add sage, salt and pepper and cook, stirring, for 2 minutes more. Add sherry, scraping up any browned bits, and cook until the liquid evaporates, 2 to 3 minutes.
  • Transfer the mixture to a food processor. Add the remaining 2 tablespoons oil, walnuts and nutritional yeast (or Parmesan) and pulse until very finely chopped, about 30 seconds. Serve garnished with sage, if desired.

Chopping the mushrooms and crushing the tomatoes by hand ensures some uniformity. The sauce can be prepared in advance, since you will summon the powers of the cooking water from the tagliatelle. Use more, if needed, to moisten the mixture before serving.

4 ounces pancetta, diced
12 ounces cremini mushrooms, wiped clean, cut in 1/2-inch dice

1 medium onion, finely chopped
4 cloves garlic, minced
4 canned San Marzano tomatoes, drained and finely crushed with a fork
1/2 cup dry red wine
1 teaspoon anchovy paste
Ground black pepper
2 tablespoons minced flat-leaf parsley leaves
1 pound fresh tagliatelle or fettuccine
Freshly grated Parmigiano-Reggiano cheese

Steps:

  • Heat 1 tablespoon oil in a large (12- to 14-inch) skillet or sauté pan. Add pancetta and cook on medium until lightly browned. Add mushrooms, strew with some salt and continue to cook until mushrooms have softened and most of the liquid in the pan has evaporated, 6 to 8 minutes. Stir in onion and garlic, and cook another 5 minutes or so until the onion starts to brown.
  • Add tomatoes, wine and anchovy paste. Stir well and continue to cook until the liquid in the pan reduces and thickens somewhat, another 5 minutes or so. Season with pepper and more salt if needed. Fold in parsley and remaining oil, and remove from heat.
  • Meanwhile, bring a large pot of salted water to a boil for the pasta. Cook pasta about 4 minutes, until al dente. Remove from heat. Use tongs to transfer pasta to the skillet, with some of the pasta water still clinging to it. Reserve another cup of the pasta water.
  • Reheat mixture in the skillet, folding mushroom mixture with pasta for several minutes. Add additional pasta water as needed so the mixture is moist but not soupy. Transfer to a large, warm bowl and serve, with grated cheese alongside.

This is a really easy to make, chunky, coarse vegetarian pate and is delicious. I like to eat it on toast or in sandwhiches and it keeps well so I make big batches at a time that I can use all week for lunches. I have also served it to guests on crusty bread several times and it has always been complimented. -The most important thing when making this is to chop the mushrooms as finely as possible. -For variations in flavour, try experimenting with different types of mushrooms. -I personally like the chunky, coarse texture of this pate, but if you prefer a more traditional, smooth, spread-like pate just blend it at the very end.

150 ml red wine
1 finely chopped onion
1 teaspoon dried herbs
1 crushed garlic clove
black pepper
350 g finely chopped button mushrooms
1 tablespoon chopped fresh parsley

2 -5 tablespoons balsamic vinegar (add more or less according to personal taste)

Steps:

  • Heat the oil in a large, deep frying pan and gently cook the onion and garlic until soft.
  • Add the mushrooms, season with black pepper, and cook until they start releasing liquid.
  • Add the wine, dried and fresh herbs and bring to the boil.
  • Reduce the heat and simmer uncovered, stirring occasionally until all the liquid is absorbed.
  • Remove from the heat and chill for at least 30minutes until cold or overnight if preparing in advance.
  • When completely chilled, add balsamic vinegar to taste and beat in the soft cream cheese until evenly mixed.

2 shallots , finely chopped
1 leek , finely chopped
2 garlic cloves , crushed
100g chestnut mushroom , finely chopped
100g shiitake mushroom , finely chopped
2 tsp wholegrain mustard
2 tbsp crème fraîche
3 tbsp chopped fresh tarragon , plus extra to garnish
1 French stick ; extra vigin olive oil; mixed salad leaves, to serve

Steps:

  • Heat butter in a large frying pan. Add shallots, leek and garlic, then gently fry for 7 mins until softened.
  • Increase the heat, add the chestnut and the shiitake mushrooms, then cook for 10 mins, stirring, until the juices have evaporated and the mushrooms are tender. Stir in the mustard and crème fraîche, then season well. Cook for a further 2 mins then stir in the chopped tarragon.
  • Preheat the grill. Cut the French stick into diagonal slices, drizzle with a little olive oil, then grill until golden. Spoon the hot pâté on to the toasts, garnish with the extra tarragon, then serve with salad leaves.

50g dried porcini mushroom
2 tbsp butter
3 shallots , finely chopped
250g chestnut mushrooms , finely chopped
2 garlic cloves , crushed
250g mascarpone
½ tbsp white wine vinegar
30g parmesan or vegetarian alternative, finely grated
3 tbsp truffle oil
cornichons and toast, to serve
100g salted butter
2 tbsp truffle oil
3 thyme sprigs, leaves picked
½ tsp green peppercorn , crushed
½ tsp pink peppercorns , crushed

Steps:

  • Put the porcini mushrooms in a bowl and pour boiling water over them. Leave to soak for 10 mins.
  • Melt the butter in a frying pan until foaming and fry the shallots over a low heat for 10 mins or until softened and translucent. Add the chestnut mushrooms and fry for 8 mins. Drain (freeze the liquid for stock or risotto) and finely chop the porcini mushrooms, then add to the pan, frying for another 5 mins. Add the garlic and cook for 1 min. Set aside to cool for 20 mins.
  • Tip the mushroom mixture into a food processor, along with the mascarpone, vinegar, parmesan and seasoning. Blitz until smooth while drizzling in the truffle oil. Divide between six ramekins.
  • For the topping, melt the butter in a small pan. When the milk solids separate and sink to the bottom, pour the clarified butter into a jug. Mix with the truffle oil and pour over each ramekin. Sprinkle with the thyme and peppercorns. Chill for at least 5 hrs. Serve with cornichons and toast, if you like.

This sauce is so simple and tastes absolutely divine! It can be used in so many ways! I stumbled over it when I didn't have the ingredients I wanted in the kitchen and thought I would be adventurous. Well good on me!!! This is a definite regular in our house over a big fat T-bone with chips and salad but we also have it with chicken and mashed potatoes. I truly love making this sauce because you really can't go wrong! The only wrong thing you can do...is not try it!!! It is LOW FAT too!!!

500 g portabella mushrooms (these have a much stronger flavour and colour)
1 tablespoon balsamic vinegar
1 teaspoon cornflour
1 (375 ml) can creamy evaporated low-fat milk
salt & pepper
1 dash oil or 1 dash butter

Steps:

  • This sauce is really quick and only takes about 5 minutes to make once everything is prepared!
  • White mushrooms are fine to use if you don't have Portabelo and you can chop them or slice them - whatever you prefer.
  • Put the oil or butter in a medium sized fry pan with the mushrooms and cook them on a medium heat until they start to soften slightly. Add 3/4 can of evaporated milk and the tablespoon of balsamic vinegar and keep it at a medium heat.
  • While the mushrooms are cooking in the milk (this won't take long!) quickly mix a little of the milk with the cornflour to form a paste. Add this to the sauce and keep stirring and it will start to thicken. Don't be afraid to bring it to the boil, it won't go funny.
  • This is where it is up to you how thick you want the sauce! If it becomes too thick just add more Evaporated Milk till you get the desired consistency. If it is not thick enough just make up some more cornflour paste and add it a little at a time until it is just right. You really can't fail to get it the way you want. The best advice I can give is don't have the pan too hot and make sure you keep stirring!
  • Also taste it before you add any salt and pepper as the Balsamic gives it such a nice flavour you don't want to overpower the sauce with too much salt and pepper. If it doesn't have enough flavour, add another dash of Balsamic Vinegar. It really is that simple!
  • Pour it over steak and chips or any meat that takes your fancy! Or you can cook up some cubed chicken breast and add them to the sauce and serve with mashed potatoes and greens for a healthy delicious meal! This recipe can easily be doubled.
  • One tip to give it your sauce more flavour is after you have cooked your steaks use the same pan and leave the juice. It saves on washing and adds that richness. Get saucy!

CREAMY VEGAN MUSHROOM PâTé



Creamy vegan mushroom pâté image

Prepare these vegan mushroom pâté with candied walnuts canapés ahead of time. When the party starts, all you need to do is pop them in the oven!

2 tbsp olive oil, plus extra for drizzling
750g chestnut mushrooms, sliced
2 garlic cloves, sliced
1 tbsp thyme leaves, plus 2 tsp
100-150ml soya or coconut cream
sourdough toast, to serve
caramelised red onion chutney or relish, to serve
25g caster sugar
50g walnut halves

Steps:

  • Heat the oil in a frying pan over a high heat, and fry the mushrooms for 15-20 mins until very soft, and any liquid that's been released has evaporated. Stir in the garlic, 1 tbsp thyme leaves, 1 tsp sea salt and a good grinding of black pepper, and cook for 3 mins more. Leave to cool slightly.
  • Transfer the mushroom mixture to a food processor and blitz to a thick paste. Add 100ml soya cream, then blitz again until smooth and creamy, scraping down the sides as you go. You may need to add up to 50ml more cream. Season to taste, then spoon into a serving dish or bowl and smooth the top with the back of a spoon. Drizzle over enough olive oil to coat the top of the pâté - it should be just enough to stop it drying out. Cover and chill for 2 hrs until firm. Will keep in the fridge for up to 24 hrs.
  • To make the walnuts, put the sugar in a medium heavy-based frying pan with 1 tsp water, and stir to dissolve. Bring to a medium-high heat and bubble for 10 mins without stirring until the sugar has melted and turned into a golden caramel. Stir in the nuts, 2 tsp thyme leaves and a pinch of sea salt, then tip onto a baking tray lined with baking parchment and leave to cool. Once cool and set, bash or break into chunks.
  • To serve, spread the pâté over the sourdough toast, then cut into bite-sized squares. Top with dollops of chutney and the candied walnuts.

A simple fry-pan cooked mushroom -lowfat version for my New Years Resolution to lose some weight. Great served on toast with egg, serve on top of steak or chicken. For a gluten-free or lactose free then check your stock powder is suitable (I use Massel brand-GF, vegan, lactose free and all natural). For a creamier sauce use low-fat cream or evaporated milk in place of the water. I've noticed that the nutrition panel seems to be picking up on the extra olive oil-it's optional and only needed if your mushrooms require. Instead of the extra oil you could use a little water.

Steps:

  • Heat the oil in a non-stick frying pan over medium heat.
  • Add the garlic and onion -stir until the onion has softened. Add the stock powder and dried basil. This should take roughly 3 minutes.
  • Add the cut mushrooms and continue to cook for another minute. Add the extra oil if required to moisten the mushrooms. Season with salt and pepper to taste.
  • Mix the cornflour with a little water in your measuring cup. Add more water to bring to the 1/4 cup measurement of water. Mix and add over the mushrooms. You can use cream or evaporated milk in place of the water if you wish.
  • Continue to cook and stir until done to your liking. I prefer to keep my mushrooms chunky.
  • Serve over toast, steak or chicken.

2 slices rindless bacon
1/2 teaspoon paprika
1 teaspoon oregano

parchment paper

Steps:

  • Preheat oven 200C/400F; DEFINATELY cook bacon this way for ease! I used rindless bacon on lined tray with parchement paper/baking paper; http://www.recipezaar.com/208501.
  • Lightly spray fry pan and saute finely diced red onions for 5 minutes; ADD diced mushrooms until cooked; PLACE in oven casserole dish.
  • Pound veal steaks thin and lightly saute them in frypan.
  • NOTE: I cut veal steaks into three pieces for ease; also cooked for 1 minute each side.
  • ADD to casserole dish.
  • In bowl, mix cornflour and a couple of drop of water to form paste; ADD crumbled bacon, wine and spices.
  • Place over veal mixture in casserole dish.
  • COVER and cook in oven for about 40 minutes.
  • Sprinkle with parsley before serving.
