- In a large nonstick saucepan coated with cooking spray, cook turkey, green pepper and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in beans, salsa, tomato sauce, tomatoes, onion powder, garlic powder and cumin. Bring to a boil. Reduce heat; simmer, uncovered, 10 minutes., Preheat oven to 350°. Spread 1 cup meat sauce into a 13x9-in. baking dish coated with cooking spray. Top with six tortillas. Spread with half the remaining meat sauce; sprinkle with 1 cup cheese. Layer with remaining tortillas and meat sauce., Cover and bake 20 minutes. Uncover; sprinkle with remaining cheese. Bake 5-10 minutes longer or until bubbly and cheese is melted.

- Preheat the oven to 375° and have ready a greased 9x13" casserole dish.
- Place a large pot of heavily salted water over high heat. Once the water comes to a boil, add the pasta and cook to al dente according to package instructions. Strain and add to casserole dish.
- Add 2 tablespoons of oil to a large saute pan or Dutch oven and allow to come to temperature. Add turkey and taco seasoning, and break apart the meat, sautéing about 6-8 minutes, or until cooked through. Remove the turkey from the pan using a slotted spoon and disperse evenly over pasta.
- Add 1 tablespoon of oil to the pan, followed by the diced onions and jalapeños. Saute for 6-8 minutes, or until softened. Add in the tomatoes, salt, pepper, cumin, and paprika. Stir to combine and carefully pour over the pasta and turkey.
- Add half of the cheese to the casserole and gently stir everything to combine. Scatter the remaining cheese across the top and bake, uncovered for 20 minutes, or until the cheese has melted and the casserole is hot all the way through. Serve and enjoy.

- Preheat oven to 350 degrees F.
- In a large nonstick skillet, heat oil on medium high.
- Add the chicken breasts and garlic, and cook for a couple minutes until chicken is just starting to brown.
- Add the bell pepper, tomato, red onion, cumin, chili powder, and salt. Mix well and cook about 5 minutes until vegetables are slightly tender.
- Pour in the chicken stock and chilies. Cook another 5 minutes until stock is almost all evaporated.
- Spray an 8x8 inch baking dish lightly with cooking spray.
- Place one tortilla in the bottom of the pan. Top with 1/2 of the chicken and veggies, then sprinkle with 1/2 cup of cheddar cheese.
- Place the second tortilla on top and spread the remaining chicken and veggies over it, then sprinkle with remaining cheese.
- Bake for 15 minutes, until cheese is melted and tortilla edges are crispy.
- Sprinkle with fresh cilantro (if using) and slice into 6 pieces.

MEXICAN FIESTA CASSEROLE

- 1. Preheat the oven to 350°F. Spray a 9 by 13-inch baking dish with cooking spray.
- 2. In a large skillet, heat the oil over medium-high heat. Add the turkey and cook until browned, 5 to 7 minutes. Stir in the onions and zucchini and cook until tender, about 5 minutes. Stir in the taco seasoning, 2/3 cup water, and the corn. Simmer until thickened, about 2 minutes, then stir in the black beans.
- 3. Spread 1/2 cup of the salsa in the bottom of the baking dish. Lay 4 tortillas over the salsa, and spoon half of the meat mixture on top. Cover with 3/4 cup of the salsa and 1 cup of the shredded cheese. Top with 4 more tortillas and the remaining 3/4 cup salsa. Scatter the remaining 1/2 cup shredded cheese over the top.
- 4. Bake the casserole until the cheese is melted and bubbling, about 25 minutes. Slice and serve, topped with scallions and sour cream.
LOW CARB KETO LEFTOVER TURKEY CASSEROLE RECIPE
Steps:
- Dice the carrot. Slice the onion, green beans, mushrooms and broccoli. Mince the garlic. Shred the turkey breasts.
- Grate the cheddar and parmesan.
- In a large pot, melt the 4 tbsp of butter. Add the onion, garlic and carrots. Cook 2-3 minutes and cover with a lid. Let steam for 2 minutes. Take the cover off and add the mushrooms and broccoli. Cook for another minute, cover and let steam for another 2 minutes.
- Add the shredded turkey breasts and mix everything together. Turn off the heat and set aside.
- Preheat the oven to 180C/350F.
- In a small pot, melt the 2 tbsp of butter on medium heat. Add the cream cheese in. It's easier to melt if you separate the cream cheese into small cubes before putting it in the pot.
- Once the cream cheese starts to melt, start mixing it with a whisk. You'll notice that the butter and cream cheese do not mix together and are separated. That's okay.
- Add the heavy cream to the pot and continue mixing with your whisk. The oil and milk will now mix together without any problems.Add the salt, pepper and nutmeg, and mix together. Add the parmesan AND Heat the white sauce until it starts to bubble, for about 2-3 minutes.
- Turn off the heat and pour the white sauce all over the meat and vegetable mixture in the other pot that we set aside.
- Transfer the casserole ingredients into a casserole dish.
- Sprinkle the grated cheddar, chopped parsley and crushed pork rinds over everything.
- Bake for 15 minutes or until the cheese starts to become golden brown.Take out of the oven and serve!

- 1. In a baking dish or pan place a little salsa then about three of the tortillas
- 2. Mix remaining salsa with tomatoes with green chiles adding cumin and chili powder Mix well.
- 3. Fry hamburger with veggies until Light brown

- Preheat oven to 350º Fahrenheit. Grease an 8" x 8" baking dish or similar size casserole with butter or coconut oil.

- Heat cream and cheese, stirring frequently, until cheese has melted. Stir in the salsa. Bring mixture to a simmer and simmer gently until mixture has thickened enough to coat a spoon.
- Taste sauce and add sea salt and black pepper if desired. Pour sauce over the contents of the baking dish.
- Top with the remaining ounce of cheese. Bake in the preheated oven for 30-35 minutes, or until cheese has melted and contents are bubbly in the center.
- Sprinkle green onion on top to garnish.
