SOY MAPLE GLAZED CHICKEN AND SWEET POTATOES (SLOW COOKER)



Soy Maple Glazed Chicken and Sweet Potatoes (Slow Cooker) image

This slow cooker Soy Maple Glazed Chicken and Sweet Potatoes dish is packed with flavor. Don't be scared by the two tablespoons of sriracha it calls for ... it becomes pretty mild after cooking for so many hours, and you'll hardly even notice it's there!

1 1/2 pounds chicken drumsticks
1 1/2 pounds bone-in, skin-on, chicken thighs
1 1/2 pounds sweet potatoes (cut into 1" thick wedges)
1/2 cup chicken broth
1/3 cup pure maple syrup
2 tablespoons soy sauce
2 tablespoons sriracha ((it's not that spicy after being in the slow cooker for so long!))
1/2 teaspoon salt
2 tablespoons butter (or olive oil)
2 tablespoons whole-wheat flour

Steps:

  • Use kitchen shears to cut off and remove the big pieces of skin from the chicken (it helps reduce the amount of fat rendered into the sauce). No need to do a perfect job here.
  • Place chicken in the bottom of the slow cooker. Layer sweet potato wedges on top.
  • Whisk together the chicken broth, syrup, soy sauce, sriracha, and salt. Pour over top of the sweet potatoes and chicken. Cook on low for 5 to 6 hours, or high for 3 to 4 hours, until the chicken is tender and almost falling off the bone.
  • Preheat the oven broiler to high. Remove and run the cooking liquid (from the bottom of the slow cooker) through a fine-mesh strainer, you should have about 2 cups. Skim the fat off the top and discard, if desired.
  • Heat the butter or olive oil in a small pot or saucepan over medium heat. Whisk in the flour and cook while stirring to help break up any clumps until it browns, but does not burn, 2 to 3 minutes. Whisk in the cooking liquid and lightly boil over medium-low heat, while stirring occasionally, until it reduces by half into a glaze, 5 to 10 minutes.
  • Meanwhile, line a baking sheet with foil and use a slotted spoon or spatula to carefully transfer the chicken and sweet potatoes in one layer (without letting the pieces break apart).
  • Pour/brush the thickened cooking liquid on top of the chicken and potatoes and place under the broiler until bubbly and dark brown, 6 to 8 minutes, and serve immediately.

6 ounces frozen orange juice concentrate
3 whole chicken breasts, split
1/2 teaspoon marjoram
1 dash ground nutmeg
1 dash garlic powder
1/4 cup water
2 tablespoons cornstarch

Steps:

  • Combine thawed orange juice concentrate (not regular orange juice) in bowl along with the marjoram, garlic powder and nutmeg.
  • Split the chicken breasts to make 6 serving sizes.
  • Dip each piece into the orange juice to coat completely.
  • Place in crock pot.
  • Pour the remaining orange juice mixture over the chicken.
  • Cover and cook on low for 7-9 hours, or cook on high for 4 hours if you wish.
  • Precise cooking time is not important in crock pot cooking.
  • When chicken is done, remove to serving platter.
  • Pour the sauce that remains in crock pot into a saucepan.
  • Mix the cornstarch and water and stir into the juice in pan.
  • Cook over medium heat, stirring constantly, until thick and bubbly.
  • Serve the sauce over the chicken.

LOW FAT CROCK-POT CHICKEN STROGANOFF

This is a very light, tasty and delicious chicken stroganoff made in the crockpot. If your crockpot cooks hot like mine, this only needs to cook on low for 4 hours. If you have one of the older models...follow the stated directions. My family LOVES this! This is best served over egg noodles. If adding mushrooms, whole fresh mushrooms work best. If you use sliced mushrooms...they get too mushy. So add them in the last hour if using sliced.

1 (10 1/2 ounce) can cream of mushroom soup, 98% fat free undiluted
16 ounces light sour cream
1 (1 ounce) package onion soup mix
1 teaspoon crushed red pepper flakes
8 ounces button mushrooms, whole
2 teaspoons garlic powder
1 medium onion, sliced thinly
4 garlic cloves, minced
2 dashes Worcestershire sauce

Steps:

  • Place frozen chicken breasts on the bottom of the crock pot.
  • Layer onion, minced garlic and mushrooms on top.
  • Mix soup, sour cream, onion soup, mix, crushed red pepper, garlic powder and worcestershire together and pour over chicken breasts.
  • Cook on Low for about 7-8 hours, or until chicken is no longer pink in the center.
  • Stir sauce before cooking and if you would like to thicken sauce, add flour or cornstarch.
  • Serve over rice or noodles.

  • In a skillet, saute the chicken cubes in oil, until browned; transfer to a slow cooker.
  • Top with apple.
  • Combine the apple cider and vinegar; pour over chicken and apple.
  • Sprinkle with remaining salt mixture.
  • Top with bay leaf.
  • Cover, and cook on high for 4-5 hours, or until veggies are tender, and chicken is cooked.
  • Remove the bay leaf.
  • Stir before serving.

So easy and so good. I use frozen chicken breasts and cook on high for 4 hours in the slow cooker. The sauce is not thick, it is a bit runny, but very tasty. Add tomato paste if you want it thicker. Serve on top of pasta and sprinkle with Parmesan cheese. I use one can of crushed tomatoes and one can of diced tomatoes.
