CANDIED YAMS (CANDIED SWEET POTATOES)



Candied Yams (Candied Sweet Potatoes) image

Candied Yams will forever be a Thanksgiving favorite! This delicious side dish takes just minutes to prepare and the results are phenomenal! Candied Sweet Potatoes are made with brown sugar, maple syrup, butter and cinnamon then baked until perfectly sweet and tender. Marshmallows optional!

Number Of Ingredients 8

3 to 4 pounds sweet potatoes
6 tablespoons unsalted butter (melted)
1/4 cup maple syrup (real maple syrup, not pancake syrup)
1 cup dark brown sugar (light brown sugar also will work)
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 teaspoon salt
2 cups miniature marshmallows (optional)

Steps:

  • Preheat oven to 375F. Spray a 3 quart baking dish with nonstick cooking spray and set aside.
  • Peel sweet potatoes and rinse clean. Slice potatoes to 1/2 inch thick slices. Try to keep them roughly the same thickness so they cook evenly.
  • In a medium bowl, combine brown sugar, melted butter, maple syrup, ground cinnamon, vanilla extract and salt. Whisk until smooth. If the mixture is very thick, pop in the microwave for 30 seconds to loosen it up.
  • Transfer sliced sweet potatoes to the prepared baking dish and spread evenly.
  • Drizzle the brown sugar mixture over the top of the sweet potatoes and toss to combine. You want each piece of sweet potato coated in the mixture.
  • Cover the baking dish with foil and bake for 20 minutes. Remove foil and gently stir. Bake for another 15 minutes (no foil) and again, gently stir. Check to see how tender the sweet potatoes are at this point. Bake for another 5 to 15 minutes, depending on the size and thickness of your potatoes. Make sure they are tender (but not falling apart) before removing.
  • If adding marshmallows, sprinkle marshmallows on top and pop back in the oven for 5 minutes. Serve immediately.

3 lbs sweet potatoes (about 5 large)
4 ounces Philadelphia Cream Cheese, softened
3 tablespoons brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 cups post selects cranberry almond crunch cereal, crushed
2 tablespoons butter, melted
1 1/2 cups jet-puffed miniature marshmallows

Steps:

  • PREHEAT oven to 325°F Place sweet potatoes on microwaveable plate. Microwave on HIGH 8 minute Turn potatoes over; continue microwaving 9 to 10 minute or until very tender. Let stand 5 minute Cut potatoes in half lengthwise. Scoop pulp into large bowl; discard skins.
  • ADD cream cheese, brown sugar, cinnamon and nutmeg to potato pulp. Mash with potato masher to desired consistency. Spoon into 9-inch square glass baking dish.
  • MIX cereal and butter in medium bowl until well blended. Stir in marshmallows. Sprinkle evenly over potato mixture.
  • BAKE 30 to 35 minute or until topping is golden brown and mixture is heated through.
  • **Note**.
  • Mashed potato mixture can be prepared ahead of time. Cover and refrigerate up to 2 days. When ready to serve, uncover, sprinkle with streusel topping and bake as directed.

2 eggs
1/2 teaspoon lemon juice

1/3 cup sweetened condensed milk

1/4 cup flour
1/2 cup brown sugar
1 cup walnuts

Steps:

  • Cook 3-4 fresh sweet potatoes in plain water (chop potatoes into even pieces for faster cooking) when tender, drain and beat with mixer.
  • Mix together first 8 ingredients and pour into greased casserole dish.
  • Topping- Mix together remaining 4 ingredients, butter, flour, brown sugar and walnuts.And sprinkle on top of sweet potatoes.
  • Cook at 350 for 25 minute.

1 pastry for a 9-inch double crust pie
4 cups peeled chopped sweet potatoes
1 ½ cups white sugar
3 eggs
⅓ cup milk
¼ cup margarine
½ teaspoon vanilla extract
½ teaspoon lemon extract
⅓ teaspoon ground cloves
¼ teaspoon ground allspice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Press the pie pastries into two 9-inch pie dishes.
  • Place sweet potatoes into a large pot and cover with water; bring to a boil, reduce heat to medium-low, and simmer until tender, 15 to 20 minutes. Drain potatoes and let cool.
  • Beat potatoes, sugar, eggs, milk, margarine, vanilla extract, lemon extract, cloves, and allspice together in a bowl until smooth; pour into the prepared crusts.
  • Bake in the preheated oven until pies are set in the middle, 40 to 60 minutes.

6 sweet potatoes
6 tablespoons butter
8 ounces orange juice
1 cup Karo syrup
1 cup light brown sugar
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 orange, sliced

Steps:

  • Boil sweet potatoes for 30 minutes. Let potatoes cool and then peel. Cut into quarters.
  • Place in a large saucepan and add butter, orange juice, syrup and sugar.
  • On top of stove cook at low heat for about 1 3/4 hours to glaze potatoes. Tilt saucepan often to coat all potatoes. Place oranges slices in pot 30 minutes before serving. (She never used a crock pot, but I bet it would work as well.) Freezes well -- just reheat and serve.

8 medium sweet potatoes or 8 medium yams
3/4 cup butter (1 1/2 stick melted)
1/3 cup evaporated milk
2 eggs
1 teaspoon vanilla
1/2 cup pecans
1/2 cup brown sugar
1 cup flour

Steps:

  • Boil sweet potatoes or yams till soft. Mash together.
  • Mix mashed potatoes, 1/2 cup melted butter, evaporated milk, eggs and vanilla. Mix together and beat well.
  • Pour into a 9 X 13 pan.
  • Now make the topping. Mix brown sugar, flour, and pecans together.
  • Mix in remaining cup of melted butter (about 1/4 cup). Mix well.
  • Pour topping on top of potatoes.
  • Bake 40-50 minutes at 350 degrees.

8 medium sweet potatoes
3/4 cup butter
1 1/2 cups brown sugar

Steps:

  • Begin 2 hours before serving time.
  • In a large dutch oven place sweet potatoes ,add enough cold water to cover potatoes.
  • Over medium heat bring to a gentle boil. Boil for 25 minutes until skin is softened.
  • Drain and cool to room temperature.
  • Cut off ends and peel past yellow color and eyes.
  • Slice into 3/4 inch slices.
  • In a large non stick skillet low/medium flame,melt 4 tablespoons butter. Sprinkle 1/2 cup brown sugar over butter. Cook until just bubbling.
  • Add sweet potato slices in one layer. Cook until deep orange color with lightly browned edges. 15 minutes first side,10 minutes second side.
  • If more brown sugar/butter is needed add 2 tablespooons to 1/4 cup of brown sugar in between batches.

The original recipe says to bake for 30 minutes, but depending on the dish and oven, you may need to bake for much longer, so be sure to allow enough time to cook for a hour if needed.
