CHEESY BROCCOLI PASTA BAKE
This Cheesy Broccoli Pasta Bake is made with just a few ingredients that you probably already have in your kitchen.

Steps:
- Put the pasta in a pan of boiling water and simmer for 10-12 minutes until it still has a little bit of bite to it.
- Make the cheese sauce.
- Add the broccoli to the pasta about 3 minutes before the pasta is finished cooking. You don't want to overcook the broccoli, as it will become mushy once baked.
- Drain the pasta and then add the cheese sauce and mix well. Put the mixture in to a large baking dish.
- Sprinkle with the breadcrumbs and extra cheese (optional) and then put in a preheated oven at 190°C/375°F/Gas 5 for 15 minutes until the top starts to crisp up.

- Preheat oven to 350°F Spray a 9 x 13 baking dish with nonstick spray.
- Bring a large pot of water to a boil. Add the pasta and cook 5 minutes. Add the broccoli and cook, stirring occasionally, until the pasta and broccoli are tender, 3-4 minutes. Drain; return the broccoli and pasta to the pot.
- While the pasta and broccoli are cooking, heat the oil in a large saucepan over medium heat. Add the onion and cook, stirring occasionally, until tender, about 5 minutes. Add the flour and mustard; cook, stirring constantly, about 1 minute. Gradually whisk in the milk and salt. Increase the heat and cook, whisking constantly, until the sauce boils and thickens, 3-4 minutes.
- Add the sauce to the pasta and broccoli. Stir to combine. Transfer to the prepared baking dish and sprinkle evenly with the cheese. Bake until bubbling,about 25 minutes.

LOW FAT CHEESY PASTA
I adapted this from a similar recipe on recipezaar to suit my low fat diet needs. This is a GREAT base recipe or even great on it's own! You can put virtually anything in this and it's fun to play around with the cheese too...sometimes i sue a parmesan and fontina blend to give it a little bit of a different flavor. I prefer to use Barilla Plus pasta for this. I love the lightness of this cheese sauce, it's a great alternative to Alfredo!

Steps:
- Cook box of penne per package directions and keep warm.
- Mince garlic and sauté in butter/olive oil blend until garlic is slightly golden.
- Add broth and milk.
- Add 3 tsp flour, salt/pepper to taste.
- Simmer and stir constantly until sauce thickens.
- Pour over warm pasta, coat and enjoy!
- **You can put anything in this, chicken, broccoli, any vegetables -- play with it! Have fun with it!

- Boil the broccoli and dried pasta in the same pan as per the pasta instructions. Use the sunflower spread flour and milk to make a white sauce and add 20g of the cheese and mix until melted and the cottage cheese and mix again. Add the cooked pasta and broccoli and the sauce to a oven proof dish and stir to cover all of it. Mix the remaining cheese and the bread crumbs and cover the top with them, grill for 5 mins until browned.

CREAMY PASTA WITH CHICKEN, BROCCOLI AND BASIL - LOW FAT VERSION
This comes from a Pam Anderson recipe. I love creamy pastas like alfredos, etc... but don't like all the fat. This recipe is a great solution. By using 2 percent evaporated milk, instead of heavy cream, the fat content is cut considerably. The flavor and consistency is still wonderful, in my opinion. I love this recipe because: it's lower in fat; you can use left-over chicken (or cooked rotisserie chicken); cooking the broccoli in the same pot as the pasta saves an extra pot to wash, it's an easy one-dish meal! There are many variations you could try with this recipe, too. Notes: 1.this recipe calls for diced tomatoes - if you'd prefer a more traditional alfredo-type sauce, I think you could probably omit the tomatoes and it would be just fine. 2. Also, if you like your pasta spicier you could add more red pepper flakes than the amount called for. 3. I find it very helpful to have all my ingredients prepped/chopped and ready before I start cooking - especially for this recipe. 4. Make sure you reserve about a cup of the pasta cooking water - it helps to thin out the finished product, if necessary. Have fun and enjoy!

- Bring about 2 quarts of water to a boil - add a tablespoon of salt to the boiling water.
- Add pasta and use the cooking time given on the package to cook your pasta al dente. Stir frequently at first to prevent pasta from sticking.
- Add the broccoli to the boiling pasta water during the last 5 minutes of cooking.
- Meanwhile, microwave broth, milk and garlic in a microwave-safe bowl until steamy hot (approx. 3 to 4 minutes). Then let it stand for a few minutes.
- Put butter in a saucepan over low heat.
- After butter melts, whisk in flour, then hot milk mixture. Whisk constantly over medium-low to medium heat until sauce thickens. This should take about 1 to 2 minutes. You judge as to when the sauce thickens up.
- Stir in parmesan, cooked chicken, tomatoes, basil and red pepper flakes.
- Salt and pepper to taste and let simmer for about 5 minutes to blend flavors.
- Drain pasta and broccoli, *reserving 1 cup pasta cooking liquid* and return to pasta pot.
- Pour cream sauce over pasta, adding enough reserved cooking liquid to moisten.
- Toss and serve immediately with a light sprinkling of parmesan.
- Enjoy!

- Preheat the oven to 350 degrees. Cook the pasta al dente according to the package directions. Add the broccoli florets to the boiling water for the last two minutes of cooking the pasta. Drain the pasta and broccoli and set aside.
- Meanwhile, heat the olive oil in a large skillet over medium heat. When the oil begins to shimmer, add the garlic and cook for a minute or two until it begins to brown. Add the flour, and whisk until a smooth roux forms. Add the milk, mustard and the spices and continue whisking until the mixture thickens, about 1-2 minutes. When the sauce begins to bubble, add the cheddar cheese and stir until melted.
- Add the pasta and broccoli to the sauce and stir until combined. Pour the pasta mixture into an oven-safe casserole dish and sprinkle with the Parmesan cheese. Bake until the pasta is warmed through and the top is golden brown, about 15-20 minutes. Serve warm.
