Steps:
- For the French toast: Coat a 9- by 13-inch baking dish with cooking spray. Arrange the bread slices on the diagonal in 3 rows in the dish, slightly overlapping the slices. Whisk together the evaporated milk, milk, vanilla and almond extracts, cinnamon, salt and eggs until well combined. Pour the egg mixture over the bread slices, taking care to evenly coat the bread. Cover with aluminum foil and refrigerate for at least 8 hours, or overnight. Preheat the oven to 350 degrees F. Remove the foil from the baking dish and spoon any remaining egg mixture over the top of the bread pieces to assure they are evenly moistened.
- For the topping: Sprinkle the pecans evenly over the bread. Sprinkle with 2 tablespoons of the maple syrup and the cinnamon. Bake until golden, about 40 minutes. Drizzle with the remaining 1/4 cup maple syrup and serve.

Steps:
- Melt 2 tablespoons butter in heavy large skillet over medium heat. Add 2 tablespoons sugar and 2 tablespoons water and stir until sugar dissolves. Continue stirring until mixture is foamy, about 2 minutes. Add bananas; cook until tender, stirring occasionally, about 5 minutes. Transfer to small bowl; cool. (Can be prepared 4 hours ahead. Cover and chill.)
- Preheat oven to 350°F. Using small sharp knife, cut 2-inch-long slit in 1 side of each bread slice, cutting 3/4 of way through bread and creating pocket that leaves 3 sides of bread intact. Divide banana mixture equally among pockets in bread. Whisk milk, eggs, 1/2 teaspoon cinnamon, vanilla and 1/2 cup sugar in large bowl to blend. Pour into large glass baking dish. Place bread in egg mixture; let soak 10 minutes, turning occasionally.
- Place almonds in shallow bowl. Carefully remove bread from egg mixture and coat both sides with almonds. Place bread on heavy large baking sheet. Mix brown sugar, oats, flour and remaining 2 teaspoons cinnamon in medium bowl. Add remaining 1/4 cup butter and rub in, using fingertips, until moist clumps form. Sprinkle topping over bread.
- Bake French toast until topping is golden brown and filling is hot, about 25 minutes. Transfer toast to plates. Serve hot with maple syrup.

- Preheat oven to 375°. Spray a glass baking dish with nonstick spray (this is an important step to keep the bread from sticking to the bottom; instead of using spray you can also use a small amount of oil to coat the bottom of the pan).
- In a small bowl, mix the cream cheese and apricot jam together. Evenly divide the cream cheese mixture on two pieces of whole wheat bread. When done, place the other slice of whole wheat bread on top and put both sandwiches in the baking dish.
- In another small bowl, whisk together the milk, pumpkin spice, vanilla extract, maple syrup and egg whites. Pour mixture overtop the two sandwiches.

Melt the butter on medium high heat Peel and cut the bananas in half add the bananas to the hot butter Turn often and cook until they begin to brown and get slightly softer Remove bananas and place on a plate. - Using a flat-ended wooded spatula/spreader cut a 1/4” wide strip of the softened cheese onto the spreader. Gently opening the center cuts in the slices and placing your left hand flatly behind the topside using gentle pressure from top to bottom spread in one motion the cheese.
