HEALTHY OVERNIGHT FRENCH TOAST BAKE

One 8-ounce whole wheat baguette, cut into twenty-four 1/4-inch slices
One 12-ounce can evaporated fat-free milk
1 cup reduced-fat (2-percent) milk
1 teaspoon pure vanilla extract
1/4 teaspoon almond extract
1/4 teaspoon ground cinnamon
Pinch kosher salt
4 large eggs
1/3 cup chopped pecans
1/4 cup plus 2 tablespoons pure maple syrup
1/8 teaspoon ground cinnamon

Steps:

  • For the French toast: Coat a 9- by 13-inch baking dish with cooking spray. Arrange the bread slices on the diagonal in 3 rows in the dish, slightly overlapping the slices. Whisk together the evaporated milk, milk, vanilla and almond extracts, cinnamon, salt and eggs until well combined. Pour the egg mixture over the bread slices, taking care to evenly coat the bread. Cover with aluminum foil and refrigerate for at least 8 hours, or overnight. Preheat the oven to 350 degrees F. Remove the foil from the baking dish and spoon any remaining egg mixture over the top of the bread pieces to assure they are evenly moistened.
  • For the topping: Sprinkle the pecans evenly over the bread. Sprinkle with 2 tablespoons of the maple syrup and the cinnamon. Bake until golden, about 40 minutes. Drizzle with the remaining 1/4 cup maple syrup and serve.

Steps:

24 slices cinnamon raisin bread
cooking spray
3 cups 1% low-fat milk
2 cups egg substitute, divided (like Egg Beaters)
1 cup half-and-half cream
1 cup sugar, divided
1 tablespoon vanilla extract
1/8 teaspoon ground nutmeg
1 (8 ounce) package fat free cream cheese, softened

Steps:

  • Preheat oven to 400 degrees.
  • Spray 13 x 9 inch baking pan with nonstick coating.
  • Layer bread evenly in bottom of baking pan.
  • Beat together milk, 1/4 cup honey, salt, vanilla and 1 teaspoon cinnamon until well blended; then mix in beaten eggs with above mixture.
  • Pour batter evenly over torn bread.
  • Core and slice apples, leaving peelings on.

1/2 cup fat free cream cheese (about 5 oz.)
2 tablespoons fruit preserves, whatever flavor you prefer
8 slices French bread, 1-inch thick
2 slightly beaten egg whites
1 beaten egg
3/4 cup nonfat milk
1/2 teaspoon vanilla
1/8 teaspoon apple pie spice
1/2 cup honey or 1/2 cup fruit preserves, of your choice
sifted powdered sugar (optional)

Steps:

  • In a small bowl stir together cream cheese and the 2 tablespoons of preserves. Using a serrated knife, cut a pocket in each bread slice by making a cut in the crust top of each slice from the top almost to the bottom. Fill each pocket with some of the cream cheese mixture.
  • In a shallow bowl beat together the egg whites, whole egg, milk, vanilla, and apple pie spice. Coat an unheated nonstick griddle or large skillet with cooking spray. Preheat over medium heat.
  • Dip bread slices into egg mixture, coating both sides. Cook bread slices on hot griddle about 3 minutes or until golden brown, turning once to cook second sides.

8 1"-slices french bread
2 egg whites
1 egg, beaten
3/4 c gat-free milk

1/2 c low-sugar strawberry preserves

  • 1. In bowl, mix together cream cheese and 2 tbsp preserves. Using a knife, make a pocket in each bread slice, but don't cut all the way through.

1 1/2 cups thinly sliced almonds, toasted
1/4 cup (packed) golden brown sugar
1/4 cup quick-cooking oats
2 tablespoons all purpose flour

Steps:

  • Melt 2 tablespoons butter in heavy large skillet over medium heat. Add 2 tablespoons sugar and 2 tablespoons water and stir until sugar dissolves. Continue stirring until mixture is foamy, about 2 minutes. Add bananas; cook until tender, stirring occasionally, about 5 minutes. Transfer to small bowl; cool. (Can be prepared 4 hours ahead. Cover and chill.)
  • Preheat oven to 350°F. Using small sharp knife, cut 2-inch-long slit in 1 side of each bread slice, cutting 3/4 of way through bread and creating pocket that leaves 3 sides of bread intact. Divide banana mixture equally among pockets in bread. Whisk milk, eggs, 1/2 teaspoon cinnamon, vanilla and 1/2 cup sugar in large bowl to blend. Pour into large glass baking dish. Place bread in egg mixture; let soak 10 minutes, turning occasionally.
  • Place almonds in shallow bowl. Carefully remove bread from egg mixture and coat both sides with almonds. Place bread on heavy large baking sheet. Mix brown sugar, oats, flour and remaining 2 teaspoons cinnamon in medium bowl. Add remaining 1/4 cup butter and rub in, using fingertips, until moist clumps form. Sprinkle topping over bread.
  • Bake French toast until topping is golden brown and filling is hot, about 25 minutes. Transfer toast to plates. Serve hot with maple syrup.

  • Grind freeze dried berries and mix with one package of vegan cream cheese and sugar, set aside.
