YUMMY HEALTHY BANANA BREAD
I made this recipe twice in 2 days as my friends and family all enjoyed it so much. It makes a moist, chewy yet soft bread/ cake with lots of banana flavour but not too sweet which suits my taste better. No eggs, no butter, no oil, quick and easy.

Steps:
- Preheat oven at 160 deg C (325 F). Grease 7X7" tin or a 9X5" bread tin. 7x7" cooks faster.
- Mix applesauce and sugar in a bowl. If using unsweetened applesauce, add about 2 tablespoons of sugar extra.
- Add bananas and mix. Add flour, salt, vanilla essence and baking soda. Mix quickly but thoroughly.
- Pour into tin. Sprinkle with some brown sugar and cinnamon powder. Put into oven immediately.
- Bake till a knife inserted in the centre comes out clean (A little mashed banana on the knife is ok as there's so much fruit. If in doubt, taste to see it doesn't taste of raw flour).
- Ovens vary so always check about 5mins before when you think it will be ready. About 50mins in a fan-assisted oven for 7X7" tin.
YUMMY BANANA CAKE ROLL
If you're looking to try something a little different with those overripe bananas sitting in your fruit basket, how about a banana roll? Banana sponge cake spread with a thick cream cheese filling rolled up into one yummy package - what's not to love?

Steps:
- Preheat oven to 375 degrees. Grease a 15×10 inch jelly-roll pan; line with parchment paper. Grease and flour paper; set aside. Spread out a clean, thin dish towel on the counter (make sure the towel is larger than your jelly roll pan); sprinkle liberally with powdered sugar (this can be done using a mesh strainer).
- In a small bowl, whisk together flour, baking powder, baking soda. In a large bowl combine eggs and sugar; beat until thickened. Add bananas and vanilla; beat until well mixed. Stir in flour mixture into egg mixture. Spread batter evenly into prepared pan, easing it carefully to the corners with a spatula.
- Bake for 13-15 minutes or until center springs back when lightly touched.
- Immediately loosen cake from edges of pan; invert cake onto the prepared towel. Remove pan; carefully peel off paper. Roll up cake in towel while hot, starting with 10-inch side. Cool completely on wire rack, at least an hour.
- When cake is almost completely cooled, make the filling: beat cream cheese, powdered sugar, butter, and both extracts in small mixer bowl until smooth.
- When cake has cooled completely, unroll and spread with filling, then re-roll cake. Wrap rolled cake in plastic wrap then refrigerate at least one hour but overnight is best.
- To serve, unwrap cake and place on a platter. Sprinkle with powdered sugar if desired, cut into slices.

YUMMY BANANA CAKE- NO MILK!
This is a recipe my mother taught me. It is really simple and tastes very nice. It's also great because it has no milk in it. This is definitely a recipe for the milk-free family!

Steps:
- Puree bananas in a bender.
- Add the oil and whisked eggs to the blender. Blend mixture together until mixed well, but still lumpy.
- In a separate bowl whisk flour, sugar, nutmeg and baking powder. Slowly pour in wet mixture. Mix mixture together until it is mixed well.
- Pour into a 8-inch round baking pan.
- Bake at 360°F (180°C) for 1 hour or until toothpick inserted to center comes out clean.

ROSE'S YUMMY BANANA CAKE
Through several trials and errors, this is what I've come up with. I hope you enjoy as much as my family does.

Steps:
- In a large mixing bowl, cream together the sugar and butter. Add the mashed bananas; combining well. To this mixture, add the sour cream, eggs, vanilla, baking soda adn salt. Beat until well combined. Add the flour and nuts. Mixing to combine well.
- Pour into prepared, greased and floured pan. Bake at 350 degrees. Depending on size of pan used; bake until a toothpick inserted in center comes out clean. You can bake this in any size or type pan. It's not a huge rising cake, so fill your pans accordingly.
- To make the frosting, mix powdered sugar, banana, butter and cream cheese. Stir in vanilla and enough milk to make spreading consistency. Frost cooled banana cake.
- This recipe can easily be doubled or tripled for larger quantity without trouble.
- One note on the bananas for the cake portion -- the riper the better! I actually prefer that the bananas to be engrossly black for this recipe.

- Cream together the butter and the sugar.
- Add the egg, bananas, and vanilla.
- Sift together all dry ingredients.
- Add half of the dry ingredients to the banana mix and alternate with half of the yogurt.
- Blend well after each addition.
- Pour into a 9" greased and floured pan.
- Bake in a 350F oven for 45-50 minutes.
