LOW CARB ZUCCHINI CRUSTED QUICHE RECIPE - (4/5)

- Preheat the oven to 350°F and spray an 9-inch baking dish or pie pan with nonstick cooking spray. Cut ends off zucchini and discard. Thinly slice zucchini on a bias or into discs, and lay them evenly across the bottom of the baking dish. Start with the bottom, and then line the edges of the baking dish. Once finished, sprinkle the oregano over top. Mix the eggs, heavy cream, salt, pepper, garlic powder, and mozzarella cheese in a bowl, and then pour the mixture over the zucchini in the baking dish. Sprinkle the Parmesan cheese over the top, and then push it down into the egg mixture with your hands or the back of a spoon, until mostly submerged. Bake for about 40 minutes, until the top of the quiche turns golden brown and a toothpick inserted into the center comes out clean. Let rest for 5 minutes to set before slicing. TIPS: If you have more than enough zucchini to line the bottom of the dish, chop the extra up and add it into the quiche in step 4. Or arrange some of the zucchini discs on the quiche's top for a nicer presentation. VARIATION: Go even more Italian by browning pancetta (Italian bacon) in a skillet over medium-high heat, draining well, and adding it to the quiche in step 4.
LOW CARB ZUCCHINI QUICHE
This will be great at your next brunch or even as an entree for supper along with a salad. I really liked the flavors in this quiche. The Bailey's creamer is definitely an odd ingredient, but it added just the right amount of sweetness to make it delicious.

- 1. Preheat oven to 375 F.
- 2. Line quiche pan with 9 slices of bacon. Cut one of them up to fill in the holes in between.
- 3. Whisk together eggs, salt, pepper, Bailey's creamer, nutmeg, and dried lemon peel.
- 4. Use a mandolin on the thinnest setting to slice zucchini paper thin.
- 5. Spread 1/3 of sliced zucchini on top of the bacon.
- 6. Pour 1/3 of egg mixture on top of zucchini.
- 7. Repeat twice more until all of egg and zucchini are in the quiche.
- 8. Top with grated gruyere. Be sure to cover evenly.
- 9. Sprinkle with cayenne. (Optional)
- 10. Bake at 375 for 35 to 40 minutes until puffed up and lightly brown on top.
- 11. Remove from oven and let sit for 5 minutes or so before slicing and serving.
LOW CARB CHEESEBURGER QUICHE
A low carb but not low fat version of a quiche using meat as a crust. It's actually pretty tasty and can definitely be used during an induction phase of a low carb diet.

- Preheat oven to 350*, Brown ground beef in skillet with onion and garlic.
- Drain off fat and mix in crisp crumbled bacon.
- Mix well to break up any large clumps.
- Press this mixture in the bottom of a deep dish pan or plate.
- Combine eggs, mayo,half and half and mix well.
- Sprinkle cheese over beef crust mixture.
- Pour egg mixture over the beef mixture.
- Bake 40-45 minutes at 350*, until browned and set.

- Butter a pie plate, put zucchini mixture in plate and then arrange sliced tomato on top of zucchini.

LOW-CARB CRUSTLESS QUICHE
DD gave me this idea when she made a crustless quiche using real eggs, cream and a variety of veggies. I substituted egg beaters and my own variety of fresh veggies. It made a hit with DH and me at breakfast this morning.

- Chop and slice the veggies.
- Grate the cheese Combine all the ingredients in a bowl and stir.
- Spray an 8" round cake pan with cooking spray.
- Pour the quiche in the cake pan.
- Put in a preheated 350º oven and bake for 20-25 minutes.
- Quiche is done when a toothpick inserted in the center comes out clean.
- Enjoy!
