MOCK PECAN PIE I
This recipe is from the Ruthven, Iowa United Methodist Cookbook, contributed by the late Irene Samek (dietician, minister's wife). As president of the United Methodist Women, I believe I can give permission to print this. We re-issued the cookbook last year and would appreciate the mention!

PECAN PIE
Rich, buttery, and oh-so-simple, the classic pecan pie has earned its place as a Thanksgiving mainstay. It's also a wonderful choice to make ahead of time since it will need several hours to cool before serving. Dollop with freshly whipped and barely sweetened cream to balance out the bold sweetness of this pie.

I loved my Grandma Sadie. When she passed, I inherited her cookbooks, one of which was titled, "From the Queen's Kitchen: A Collection of Pinto Bean Recipes from Cortez, Colorado" This cookbook was published in 1967 but encompasses a time span from 1958 to 1967. All recipes were taste tested during the Four Corners Harvest...
