KETO SAUSAGE BALLS
Quick and simple, keto and gluten free. Perfect Game Day snack! I like this recipe best with hot sausage for a little kick, but you can make it to your preference. Serve plain or with honey mustard.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Combine sausage, cream cheese, Cheddar cheese, Parmesan cheese, mustard, garlic powder, and salt in a large bowl. Mix gently until just combined. Roll heaping tablespoonfuls of the pork mixture into balls. Place on the prepared baking sheet.
- Bake in the preheated oven until golden brown, 30 to 35 minutes. Place on a paper towel-lined plate to soak up excess grease. Serve immediately.

These are a snap to make. I make them ahead and just pop a few in the microwave as I'm heading out the door!

Steps:
- I use Tennesse Pride HOT sausage for a little kick. You can use whichever you like.
- Place all the ingredients in a large mixing bowl and use your hands to mix them together. I add salt and pepper in moderation, more pepper than salt.
- Once mix is all combined, form into 1 - 1 1/2 inch balls and place on cookie sheet. Bake for 10-12 minutes at 350 degrees, or until cheese has melted a bit out of the balls and onto the sheet.
- Remove from sheet and drain. Makes about 50 balls.

Steps:
- 1. Preheat oven to 350 degrees. Spray a baking pan with nonstick cooking spray.
- 2. Let sausage sit out for 15 least 15 minutes to make mixing easier. In a large bowl, mix all ingredients with your hands.
- 3. Roll into walnut-size balls and place on prepared pan. This should make exactly 24. Bake 20-25 minutes. Let cool on pan and serve warm or transfer to a large ziplock bag to refrigerate and microwave 3 at a time 1 minute to heat.

- Prep. Preheat oven to 350 F, and prepare a rimmed baking sheet with parchment or cooking spray.
- Combine. In a large bowl, combine the almond flour ( 3 cups), baking powder (1 1/2 tablespoons), salt (1/2 teaspoon), garlic powder (1/2 teaspoon), and oregano (1 teaspoon). Add the heavy cream (1/2 cup) and pork sausage (1 pound) and combine using your hands. Add the grated cheese (16 ounces ) a little at a time, again mixing with your hands until everything is well incorporated.
- Shape + Bake. Use a cookie scoop or your hands to form 36 1 1/2-inch balls, and place them in a single layer on your prepared baking sheet. Bake until brown, about 30 to 35 minutes. Serve immediately, and enjoy!
