Steps:
- Whisk peanut butter, hoisin sauce, water, tomato paste, and chili sauce, if using, in small bowl.
- Heat oil, garlic, and red pepper flakes in small saucepan over medium heat until fragrant, 1 to 2 minutes.
- Stir in peanut butter mixture; bring to simmer, then reduce heat to medium-low and cook, stirring occasionally, until flavors blend, about 3 minutes. (Sauce should have ketchup-like consistency. To thin, add water, 1 teaspoon at a time, until proper consistency is reached.).
- Transfer to bowl; cool to room temperature.
- The sauce can be refrigerated in an airtight container for up to 3 days. Serve at room temperature.

PEANUT DIPPING SAUCE
I know there's lots of recipes for this type of sauce but this is my favorite and it's low in fat and calories. I've served this with veggies, as an appetizer, or tossed it with noodles as a main dish (Must sprinkle with plenty of cilantro!!) Recipe courtesy of the Chicago Sun-Times.

Steps:
- Combine peanut butter, ginger root, garlic, scallions, stock, soy sauce or tamari, vinegar, honey, cilantro and hot sauce in a mixing bowl and whisk until smooth.
- Check the seasoning and add more soy sauce, vinegar or honey according to your taste. The sauce should be a little sweet, sour and salty.
- Serve it with veggies for dipping or toss it with noodles and garnish with LOTS (we like lots) of freshly chopped cilantro.

- In a smallish microwave safe bowl, gently warm the peanut butter. Whisk in the chile garlic sauce, sweetener of your choice, and Tamari soy sauce.
- Put a small pan over medium heat and warm the oil. Add the Thai red curry paste and cook until very fragrant. Scrape the oil and curry paste into the bowl with the peanut butter and whisk to combine.
- Slowly add the coconut milk to the peanut butter mixture while stirring with a whisk. Taste and adjust seasonings. (If it doesn't "pop" add a little more sweetener or a squeeze of lime or lemon juice. You can also add a little fish sauce or salt.) Serve room temperature or slightly warmed.
- Makes just over 1/2 a cup, serving 4, at just over 2 tablespoons per serving. Refrigerate up to 5 days.
