1 lb ground lamb
2 tsp dried oregano
1 tsp dried mint
1 tsp onion powder
salt and black pepper

Steps:

  • Mix all the ingredients together apart from the salt. Form the mixture into four patties and season with salt on both sides.
  • Grill or fry until cooked to personal preference.
  • Optional - load up the burger with crumbled feta cheese, diced cucumber, fresh mint leaves and marinated red onions.

Homemade burgers are always a winner - try this low-calorie, Greek spin with cucumber and mint yogurt and spicy patties

25g bulghar wheat
500g extra-lean lamb mince
1 tsp ground cumin
1 tsp ground coriander
1 tsp smoked paprika
1 garlic clove , very finely crushed (optional)
oil , for brushing
large burger buns , sliced tomato and red onion, to serve
5cm piece cucumber , deseeded and coarsely grated
200g pot thick Greek yogurt
2 tbsp chopped mint , plus a handful of leaves to serve

Steps:

  • Tip the bulghar into a pan, cover with water and boil for 10 mins. Drain really well in a sieve, pressing out any excess water.
  • To make the tzatziki, squeeze and discard the juice from the cucumber, then mix into the yogurt with the chopped mint and a little salt.
  • Work the bulghar into the lamb with the spices, garlic (if using) and seasoning, then shape into 4 burgers. Brush with a little oil and fry or barbecue for about 5 mins each side until cooked all the way through. Serve in the buns (toasted if you like) with the tzatziki, tomatoes, onion and a few mint leaves.

  • In a skillet over medium-high heat, saute green bell pepper and onion in the olive oil until soft. Remove from heat and allow to cool slightly.
  • In a large bowl, mix ground lamb, pepper and onion mixture (with olive oil and all pan juices included), egg, feta cheese, marjoram, rosemary, oregano, salt, and pepper, together until blended.
  • Preheat grill to between 450 and 500º (high heat). Place patties on the grill and cook for 3 minutes. Flip the burgers and continue grilling for an additional 3- 5 minutes or until the internal temperature reaches 160°.

  • Burgers: Add the lamb and beef to a medium bowl, tear up into small pieces and mix gently with your hands to distribute more evenly. Chop the garlic and rosemary and add to the meat. Add the rest of the dry ingredients to the meat, sprinkling it evenly over the surface. Mix well. I use my hand mixer. Form into 6 balls and flatten into patties. Refrigerate overnight or cook now. The flavor is better the next day.
  • Grill or pan fry the lamb burgers to your preference. I grilled mine 2 1/2 minutes on 1 side and 2 minutes on the other.
  • Tomato & Cucumber Salad: Halve the tomatoes and place into a medium bowl. Peel the cucumber and dice or cube putting it on top of the tomatoes. Halve the olives and place on the cucumbers. Chop and add the onions, add the cheese and then the mint. Do not mix or add the olive oil, salt and pepper until ready to serve.
