1-1/2 pounds bulk Italian sausage
3 pounds potatoes, peeled and sliced
3 cans (14-1/2 ounces each) chicken broth
2 cups water
1 cup chopped sweet onion
2 garlic cloves, minced
1/4 teaspoon salt
1/8 teaspoon pepper
3 cups chopped Swiss chard
2 cups heavy whipping cream
8 bacon strips, cooked and crumbled

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink. Drain; set aside., In a Dutch oven, combine the potatoes, broth, water, onion, garlic, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 18-22 minutes or until potatoes are tender., Stir in the Swiss chard, cream, bacon and sausage. Bring to a boil. Reduce heat; simmer, uncovered, for 5 to 10 minutes or until chard is tender.

Potatoes, breakfast sausage, and cheese combine to make a hearty soup. I use reduced fat sausage so you don't have to drain off the fat. Great with cornbread and salad for a comfort food meal on a cold night.

1 lb low-fat breakfast sausage
5 -6 cups russet potatoes (peeled and chopped)
2 (14 ounce) cans chicken broth
3/4 cup sweet onion (chopped)
1 (12 ounce) can evaporated milk
garlic powder
cracked pepper
2 cups 2% cheddar cheese (shredded)

Steps:

  • Brown sausage and onion in dutch oven until no longer pink. (If using regular sausage, drain and wipe out bottom of pan.).
  • Add chicken broth to sausage and onions and bring to boil.
  • Add potatoes and simmer on med high for 20 mins or until potatoes are soft.
  • Remove from heat and mash potatoes completely.
  • Add evaporated milk and cheese and stir until cheese is melted.
  • Add garlic powder and cracked pepper to taste.
  • If you like a thicker soup, add a little cornstarch or flour for thickening.

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by the Tallman Family. They run a potato processing plant in town. So, it make sense they submitted a potato recipe. As with so many of these recipes, they didn't specify how many servings it made so I am guessing.

1 lb smoked sausage, cut into bite-sized pieces
1 tablespoon margarine
3 cups potatoes, diced
1/2 onion, chopped
2 cups water
2 tablespoons parsley
1 egg yolk
1/2-1 cup milk
1/2 cup flour
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In large Dutch oven melt margarine.
  • Brown the sausage and drain off all but 1 tablespoon of dripping.
  • Add all other ingredients except egg yolk, flour and milk.
  • Bring to a boil and simmer until potatoes are tender.
  • Mix yolk and flour until pea-size and crumbly.
  • Add to soup, stirring constantly.
  • Cook for one to two minutes.
  • Add milk and heat.
  • Serve immediately.

1 onion, coarsely chopped
32 ounces milk
2 teaspoons salt
1/4 teaspoon pepper
2 teaspoons dried parsley
1 tablespoon butter
1/2 cup flour
1 egg, well beaten
2 -4 tablespoons milk

Steps:

  • Cook potatoes and onion in boiling salted water until tender- drain.
  • Add 1 quart of milk to potatoes and heat, and then blend in the salt, pepper and parsley.
  • Cut butter into flour- blend together the egg and milk using only enough milk to make the mixture thin enough to drop into the hot soup.
  • Cover and cook about 10 minutes.
  • Serve at once.

In Pennsylvania Dutch County, we call it "filling." It is a potato and bread filling. I never measure, so this is what I do.

6 large potatoes, cut in pieces
2 medium onions, chopped
6 stalks celery, chopped small
Enough vegetable oil for saute
8-10 pieces of old bread, broken into bite-size pieces
1/4 to 1/2 cup milk
4 raw eggs, beaten
Salt and pepper
Salt and pepper
4-5 tablespoons fresh parsley, chopped fine
1-2 tablespoons poultry seasoning
Stock from the giblets and neck
Stock from the giblets and neck
1/2 stick of butter, cut into pieces

Steps:

  • Boil potatoes in salted water. Saute onion and celery in oil. Add salt and pepper to taste. Boil the giblets and neck in salted water to make stock.
  • Moisten bread with milk. Smash the potatoes in a large bowl. (I use a small roasting pan, and then I roast the filling right in it.) Add all other ingredients including all spices and oil from saute. When adding the eggs, add a little of the hot mixture to the eggs first and beat well, so as to not scramble them when they go into the whole mix.
  • Mix thoroughly. If it needs more moisture, add the stock, a little at a time. Taste to make sure enough spices are added. Add more salt and pepper and poultry seasoning, if needed.
  • Bake at 350 degrees in a greased casserole dish or roasting pan until very hot and browned, usually one hour. Dot the top with pats of butter before putting into oven. I know some people chop the giblets and add to the filling, but I don't.

1 pound marble potatoes
1 yellow onion, sliced thin
1 orange bell pepper, sliced thin
1 green bell pepper, sliced thin
1 red bell pepper, sliced thin
Kosher salt and freshly ground black pepper
1 pound kielbasa sausage, sliced into 1/2-inch rounds
3 cloves garlic, minced
1 cup amber beer
1 tablespoon grainy mustard
3 cups chopped kale
Fresh herbs, to garnish.

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the potatoes, onions and peppers, then season with a pinch of salt and pepper. Cook until the onions are translucent and the potatoes begin to brown, 5 to 6 minutes.
  • Stir in the kielbasa and garlic. Add the beer and mustard, then stir to combine. Cover and cook until the potatoes have softened and the sausage is heated through, 2 to 3 minutes.
  • Remove the lid and stir in the kale. Cook until the kale has wilted, 5 to 6 minutes. Taste and adjust the seasonings as needed. Garnish with the herbs and serve straight from the skillet.

  • In a nonstick skillet, brown sausage over medium heat; set aside. For white sauce, melt butter in a saucepan. Stir in flour and seasonings until smooth. Gradually add milk. bring to a boil; cook and stir for 2 minutes or until thickened. I've tweaked this recipe I found in an herb magazine I once subscribed to. Since my husband is an avid deer hunter, I sometimes use venison kielbasa. Then we call it 'Buck-Pole Soup'

1 package(s) polish kielbasa or smoked sausage, cut in bite sized pieces
4-5 - red skinned potatoes, cut in bite sized pieces
3 large celery stalks, chopped
1 large yellow onion, chopped
1 bunch(es) parsley, chopped
2 can(s) 10 3/4 ounces chicken broth
2-3 cup(s) water, depending on how much broth you want
3-4 teaspoon(s) chicken bouillon granules, to taste
1/2 cup(s) cream or half and half

Steps:

  • Combine first 7 ingredients in large soup pot and simmer until potatoes are tender. Add chicken boullion to taste during cooking. Add cream to finished soup right before serving. Do not boil after cream is added.
  • This could also be made in a slow cooker for 3 hours on high or 5 hours on the low setting. The cream can also be added to each individual bowl after serving.
