Steps:
- Spray aubergine slices with low calorie cooking spray and grill on both sides.
- Mist a decent sized pan with low calorie cooking spray then add onions and sauté until they start to soften and colour.
- Stir in the garlic, tomato puree and the lamb. Cook for a minute or two.
- Add the red wine vinegar and allow it to reduce slightly.
- Add the tinned tomatoes, courgettes, sweetener, a pinch of cinnamon, oregano, bay leaf and a good pinch of salt and pepper. Bring to the boil, turn the heat down, cover and simmer with the lid on for about 30 - 40 minutes, until most of the juices have evaporated and the lamb is tender.
- While this is cooking, make the white sauce.
- In a bowl, mix together the yogurt, eggs, mustard powder and a pinch of salt and pepper.
- Pre-heat the oven to 180°C.
- Place a layer of the lamb mix on the bottom of an oven proof dish.
- Top with a layer of grilled aubergine then another layer of the lamb mixture.
- Top with a final layer of aubergine.
- Pour the white sauce over the top, making sure there are no gaps.
- Sprinkle the grated cheese evenly over the top, then cook for 30-40 minutes, or until the cheese is golden brown
- Remove from the oven and allow to stand for a few minutes before serving.

This Slimming world friendly Lentil and vegetable moussaka is vegetarian but loved by meat-eaters too as it's full of flavour. Extra easy to make for all the family.

- Spray aubergines with a little low-calorie spray and griddle on both sides until starting to colour and soften. Careful you don't allow them to soften too much or they are hard to pick up later in the recipe.
- Preheat the oven to 200°c.
- Spray a large frying pan with low-calorie cooking spray and add onion. Fry for a few minutes until they are softened but only just colouring.
- Add the garlic, tomato puree, red wine vinegar and peppers and cook for a further two minutes.
- Add the tinned tomatoes, lentils, courgettes, mixed herbs, sweetener, and cinnamon. Season with a bit of salt and pepper then bring to the boil.
- Simmer for 20 minutes or until the peppers are all tender and there is very little sauce left.
- Meanwhile using a large mixing bowl mix together the quark, eggs, mustard powder, yoghurt and a little salt and pepper.
- Using a large ovenproof dish spoon half the peppers, onion etc mixture into the dish, cover with a layer of grilled aubergines then half of the white sauce. Then add another layer of peppers, courgettes etc, then a layer of aubergine. Finally, top with the remaining white sauce and sprinkle with the grated cheese.
- Cook for 30-40 minutes in the centre of the oven or until it is hot through and the cheese is starting to brown nicely.

HEARTY MOUSSAKA WITH LOW-FAT WHITE SAUCE

- Preheat oven to 425°F. Spray 2 large baking sheets with olive oil spray. Arrange eggplant slices and half of zucchini rounds, overlapping slightly, on 1 baking sheet. Arrange potato rounds and remaining zucchini, overlapping slightly, on second baking sheet. Spray vegetables generously with olive oil spray. Sprinkle with salt and pepper. Bake until tender and beginning to brown, about 40 minutes. Remove from oven and cool. Reduce oven temperature to 375°F.
- Heat 1 teaspoon oil in large nonstick skillet over medium heat. Add onion and garlic; sauté until onion is tender, adding 1 to 2 tablespoons water if mixture seems dry, about 7 minutes. Stir in oregano. Add beef; sauté until brown, breaking up with back of spoon. Add tomatoes with their juices and tomato paste, breaking up tomatoes with back of spoon. Simmer until mixture thickens slightly, about 15 minutes. Season to taste with salt and pepper. Remove from heat. Mix in 1/4 cup breadcrumbs, egg whites and cinnamon.
- Spray 13x9x2-inch glass baking dish with olive oil spray. Sprinkle 1/4 cup breadcrumbs over bottom of dish. Arrange potatoes in prepared dish. Spoon half of beef mixture over. Arrange eggplant slices over. Spoon remaining beef mixture over. Top with all of zucchini, overlapping slightly if necessary.
- Pour warm Low-Fat White Sauce over moussaka. Sprinkle 2 tablespoons cheese over. Bake until top is golden brown, about 55 minutes. Let stand 15 minutes. Cut into squares and serve.
LOW-FAT MOUSSAKA
I adapted this from the May 2007 issue of Cooking Light. It was a lot of work, but worth it. There's a lot of flavor without a lot of cheese and fat.

- Preheat oven to 425.
- Prepare eggplant: Peel eggplants and slice into 1/2" slices. Lay slices on several layers of paper towels; sprinkle evenly with 1 teaspoons salt. Cover with additional paper towels and let stand for about 10 minutes, pressing down occasionally. Lightly coat each slice with cooking spray and sprinkle with 1/4 teaspoons black pepper. Arrange slices in a single layer on 2 baking sheets. Bake for 8 minutes at 425; take out and turn slices over, then bake for another 8 minutes. Remove from oven and set aside.
- Prepare meat mixture: Heat oil in large nonstick skillet. Add onion, garlic and ground turkey; saute 6-8 minutes, or until turkey is done. Stir in bulgur, mint, pepper, salt, allspice, and tomatoes. Bring to a boil, then cover and reduce heat. Simmer 20 minutes. Remove from heat and cool completely.
- Prepare topping: Melt butter in a saucepan over medium heat. Add flour, stirring with a whisk until well blended. Slowly add milk, stirring with whisk until blended. Add four minced garlic cloves. Bring to a boil, then reduce heat to low, cooking 2 minutes or until thickened, stirring constantly with whisk. Pour milk mixture into a food processor. Add feta and nutmeg, process until smooth, then stir in yogurt.
- Assemble: Coat a 13x9 pan with cooking spray. Place half the eggplant slices in bottom of pan, then cover with half the meat sauce. Layer remaining eggplant slices, top with remaining meat sauce. Spoon topping mixture evenly over top. Bake at 425 for 35 minutes.

- Cook the peppers gently in a large non-stick pan for about 5 mins - the water from them should stop them sticking. Add the garlic and cook for 1 min more, then add the beef, breaking up with a fork, and cook until brown. Tip in the lentils, half the oregano, the passata and a splash of water. Simmer for 15-20 mins until the lentils are tender, adding more water if you need to.
- Meanwhile, heat the grill to Medium. Arrange the aubergine and tomato slices on a non-stick baking tray and brush with the oil. Sprinkle with the remaining oregano and some seasoning, then grill for 1-2 mins each side until lightly charred - you may need to do this in batches.
- Mix half the Parmesan with the yogurt and some seasoning. Divide the beef mixture between 4 small ovenproof dishes and top with the sliced aubergine and tomato. Spoon over the yogurt topping and sprinkle with the extra oregano, Parmesan and nutmeg. Grill for 3-4 mins until bubbling. Serve with a salad, if you like.

Make our easy moussaka for an instant crowd pleaser. This classic Greek dish of layered thinly sliced potato, aubergine and lamb is topped with a creamy béchamel sauce.

- Heat a frying pan over a high heat. Drizzle 4 tbsp of the oil over the slices of aubergine and fry them in several batches for 5-7 mins or until golden brown and beginning to soften. If they look a little dry during cooking, add a dash more olive oil. Set aside on a plate lined with kitchen paper.
- Heat 1 tbsp of the oil in a large flameproof casserole dish or saucepan over a medium-high heat. Add the mince and fry for 8-10 mins until a deep golden brown, regularly stirring and breaking up with a wooden spoon. Tip into a bowl and set aside. Add the remaining oil to the casserole. Tip in the onion along with a pinch of salt and fry gently for 10-12 mins or until softened and turning translucent. Add the garlic, oregano, cinnamon, chilli and bay cooking for a further min. Return the lamb to the pan and pour in the red wine, bring to a bubble and reduce the wine by half. Stir through the tomatoes, tomato purée and brown sugar, along with 200ml water. Season. Lower the heat and simmer gently, uncovered, for 20 mins, stirring occasionally until the sauce has thickened.
- Heat oven to 200C/180 fan/gas 4. Bring a large pan of lightly salted water to the boil. Add the potato slices and cook for 6 mins, drain in a colander and leave to steam dry for 10 mins.
- Melt the butter in a small saucepan, stir in the flour and cook over a medium heat for 1 min. Remove from the heat and whisk in the milk, pouring in a bit at a time, until smooth. Return to the heat and bring to a simmer, cooking for 3 mins. Remove from the heat and whisk through the parmesan, a little grated nutmeg and some seasoning, and finally the whole egg as well as the yolk.
- Take a large rectangular ovenproof dish. Spoon a third of the meat into the dish and spread out evenly, followed by half the aubergine and half the potato, then the rest of the meat and another layer of aubergines, followed by potatoes. Finish with the béchamel, smoothing the top over with a palette knife. Put in the centre of the oven and cook for 50 mins or until deep golden brown. If it browns too much during cooking, cover the dish. Set aside for 10 mins to cool before serving.
