OLD FASHIONED LOVAGE AND POTATO SOUP



Old Fashioned Lovage and Potato Soup image

A family favourite in our household.....a creamy and easy soup which needs nothing more than good crusty rolls or home-baked bread to serve with it. This travels well in a Thermos flask making it an ideal and comforting soup to take on a picnic. This recipe is based on a Historical 16th/17th Century recipe, no milk was added then - it was made with stock only.

1 medium onion, peeled and finely chopped
1 tablespoon olive oil
1 kg potato, scrubbed and cubed
1/2 liter good vegetable stock (adjust to give preferred consistency) or 1/2 liter chicken stock (adjust to give preferred consistency)
1/2 liter milk
5 tablespoons chopped lovage (retain small amount for garnish)
salt & pepper

Steps:

  • In a large saucepan, saute the chopped onion in olive oil until translucent; then add the cubed potatoes and mix together.
  • Add the stock and milk, simmering until the potatoes are nearly tender.
  • When potatoes are soft,add the lovage and liquidise the soup, adding further stock or milk if a thinner consistency is required.
  • Check the seasoning and add salt and pepper to taste.
  • Return to the saucepan and heat through gently - do NOT allow the soup to boil.
  • Serve hot and garnish with the remaining lovage and crusty bread and butter or bread rolls.
  • This travels very well in a thermos flask for a warming picnic soup.

Lentils With Lovage image

This is low in fat and high in protein and fiber, seasoned with lovage adding it flavor of anise and celery and helps reduce flatulence or colic by expelling gas.

1/2 small chopped sweet onion
1 garlic clove
1 tablespoon olive oil
12 ounces whole green lentils, Rinse, strained and sort through, removing debris
1/2 cup chopped lovage
1 sprig fresh thyme
orange zest
3 -4 cups water

Steps:

  • Sautee the chopped onions and garlic in the oil till soften but do not brown. Stir in the lentils.
  • Add the chopped lovage, thyme, one strip on orange zest and water to covered by an inch. Bring to a boil then reduce to medium, cover and simmer until tender.
  • Remove the lentil mixture with a slotted spoon if any liquid is left. Reduce the liquid in the pan, while adding a little more olive oil and salt and pepper to taste. Serve over the lentil mixture. Or just drizzle lentils with loive oil and season with salt and pepper.

Creamy Lovage and Mustard Salad Dressing image

I grow this wonderful old fashioned herb in my herb garden, it's one of my favourites - I love it's warm celery-lemon flavour. Lovage was used extensively during the Middle ages - right up to Victorian times - then it somehow fell out of fashion, which is such a shame as it is such a versatile and interesting herb. This is a wonderful creamy salad dressing, which perks up any mundane leaves - I like to serve it with Mache or Lamb's Lettuce and Tomatoes for a simple and yet elegant starter. It also works well with cooked spring vegetables such as peas, baby carrots, new potatoes and young broad beans.

3 tablespoons mayonnaise
3 tablespoons yogurt
1 teaspoon lemon juice
1 teaspoon Dijon mustard
2 tablespoons chopped lovage, leaves

Steps:

  • Whisk all the ingredients together until well blended and slightly thickened.
  • Check seasoning and adjust to taste.
  • Serve with mixed salad leaves and tomatoes.
  • Also excellent if used with lightly cooked and cooled spring vegetable salads such as peas, baby carrots, new potatoes and young broad beans.
  • Store any unused dressing in a bottle or jar in the fridge for up to 2 days.

Tip: If you don't have fresh lovage, celery will do just fine. Be sure to use a top quality tomato or V8 juice, as this is the main 'body' of your drink.
