Provided by asimplegirl

Categories     Beans

Time 50m

Yield 30 rolls, 4-6 serving(s)

Number Of Ingredients 4

2 (8 ounce) cans green beans (i like french cut)
1 (1 lb) package bacon (thin cut)
1 (1 lb) package brown sugar
1 cup pancake syrup

Steps:

  • I dont know about measurements. This stupid recipe wont do right, it calls for 2 reg sized cans of green beans.
  • Open bacon and separate into strips( you can halve these lengthwise). Open green beans and drain.
  • Pinch up enough brown sugar to fill fingertips, and rub onto bacon (Sugar layer will be slightly thick).
  • Place enough green beans ( about an inch thick. I'm not sure of the amount with french cut, I just eyeball it. with whole green beans, you should only use about 4 or 5) onto the end of sugared bacon strips and roll.
  • Seal with a toothpick. Place seam side down on cookie sheet. Pour syrup over rolls.
  • Cook at about 400 degrees( or higher, your preference) until bacon is cooked through and rolls are candied.

LOUISIANA GREEN BEANS (CREOLE RECIPE FOR ZWT-9)

Louisiana Green Beans (Creole Recipe for ZWT-9) image

Found at a cooking-by-country (or region) website, just reading this recipe took me back decades to a time growing up when we would pick beans from the garden & cook them until soft w/a combo of onion w/ham or bacon. I never cared when the main-course was as long as I could have a HUGE plate of those green beans. If it was my choice to make, I would definitely dbl this recipe! Enjoy!

6 slices streaky bacon (cut into bite-sized pieces)
3 garlic cloves, crushed
1 lb fresh green beans (left whole)
1 large onion, chopped
1 tablespoon dried parsley
1 teaspoon creole seasoning
salt

Steps:

  • Heat oil in a frying pan. Add the bacon, onion, garlic plus parsley & sauté until onion is soft & golden brown.
  • Add the beans, salt to taste preference & Creole seasoning. Reduce heat to low & cook gently for about 30 min or until beans are soft (Add a sml amt of water if needed to keep the beans from sticking to the bottom of the pan.
  • HINT: Try pairing these beans w/my also newly entered Creole Meatloaf recipe & your favorite thick mashed potatoes. Yum!

I've made several variations of this recipe throughout the years. I like to try different herbs and sometimes add some crushed red pepper flakes to change up the flavors a little more and make it more interesting. I found this recipe in the American Heart Association cookbook.

IMITATION CRABMEAT TORTILLA ROLLUPS

Imitation Crabmeat Tortilla Rollups image

I don't know where I got this recipe, but I know it wasn't on this site, 'cause I couldn't find it anywhere. I've made them before (and they're yummy) so I knew I must have it written down somewhere. Luckily, I found it and am posting it here for safe-keeping. You can use any type of seafood you desire, just be sure to finely dice it, and enjoy. BTW, Prep time doesn't include chilling time, and the 1/2 cup of seafood cocktail sauce at the end of the ingredient list is optional for dipping.

Categories     Spreads

Time 30m

Yield 32 slices, 4-6 serving(s)

Number Of Ingredients 8

1 (8 ounce) pkg.of cream cheese, softened
1/4 cup seafood cocktail sauce
1 (8 ounce) package imitation crabmeat, finely diced
1/4 cup swiss cheese, shredded
1/4 cup green onion, chopped, or
1/4 cup green pepper, chopped
4 (8 inch) flour tortillas
1/2 cup seafood cocktail sauce

Steps:

  • Mix softened cream cheese and cocktail sauce together, until well blended.
  • Stir in crabmeat, swiss cheese and green onion, or green pepper and mix well.
  • Spread evenly onto the 4 flour tortilla shells and roll each one up tightly.
  • Wrap in plastic wrap and refridgerate for at least 2 hours, or overnight.
  • After they are thoroughly chilled, slice into 1/2 inch circles, and serve with the 1/2 cup, optional cocktail sauce.
  • Note: I microwave my tortilla shells (one at a time) for about 15 seconds, before I spread the mix on them. That makes the shells much easier to roll.
  • I also make my own 'cocktail sauce' by simply mixing prepared horseradish and ketchup (to taste) together.
