CHOCOLATE MARTINI MOCKTAIL

Steps:

• Combine the milk, 1/4 cup chocolate syrup, corn syrup, and crushed ice in a blender and blend until smooth.
• Pour some of the chocolate syrup onto a small plate and some of the chocolate sprinkles onto another small plate. Dip the rim of each glass in the chocolate syrup and then dip the rim in the chocolate sprinkles. Fill each glass to the top with the chocolate milk mixture.

GAYLE'S SUNSHINE MOCKTAIL

Steps:

• Take 2 glasses and fill them with ice. Using a potato peeler, peel a couple strips of lime zest and run one around the rim of each glass to flavor it, then drop it into the glass.
• Halve the lime and squeeze each half into a glass over the ice. Pour 1/2 cup pineapple juice and 1/2 cup ginger beer into each glass. Slightly crush the mint sprigs and add them to the drinks. Stir and serve immediately.

CHOCOLATE MILK MOCKTAIL

Steps:

• Chill 2 martini glasses. Dampen the rim of each glass and invert into the cocoa powder to rim the glass.
• In a large martini shaker, add the chocolate sauce and milk and fill with ice. Shake the cocktail well for 30 seconds. Pour the cocktail into the glasses and garnish with shaved chocolate.

STRAWBERRY SUNSHINE COCKTAIL

Steps:

• Add strawberries and limes into a large mortar or bowl. Crush together to extract juices. Add mint and crush to incorporate the flavors. Add strawberry syrup and pour into a pitcher. Add Champagne and stir. Serve in ice filled glasses and garnish with strawberry slices.
