1 teaspoon baking powder
raspberry jam
125 g sugar
50 g coconut

Steps:

  • Cream butter and sugar.
  • Add yolks then sifted flour and baking powder.
  • mix - press into small slice tray or roll out onto greased baking tray.
  • Spread with Raspberry Jam.
  • Beat egg whites until stiff.
  • Fold in sugar and coconut.
  • Spread over Jam.
  • Bake 30minutes at 180celcius.

Louise cake is actually more of a slice than a cake and is always a special treat. The combination of coconut, jam, and meringue on a thin shortbread-style base is simply delicious. Traditionally, Louise cake is made with raspberry jam, but you can use any jam you please. The meringue will crack - this is normal! Serve with freshly whipped cream.

9 tablespoons unsalted butter, at room temperature
¾ cup white sugar
3 egg yolks, at room temperature
½ teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
¾ cup raspberry jam
3 egg whites, at room temperature
¼ cup white sugar
1 ¼ cups shredded coconut
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Lightly grease an 11x7-inch baking pan. Line with parchment paper, leaving an overhang over the edges.
  • Combine butter and sugar in a bowl; beat with an electric mixer until light and fluffy. Add egg yolks one at a time, beating well after each addition. Mix in vanilla extract.
  • Sift flour and baking powder together in a bowl. Fold into the creamed mixture until dough comes together. Press dough into the lined baking pan; prick all over with a fork.
  • Bake in the preheated oven until set, about 10 minutes. Spread raspberry jam thinly over the cake base.
  • Beat egg whites in a glass, metal, or ceramic bowl until soft peaks form. Add sugar 1 tablespoon at a time, continuing to beat until stiff, glossy peaks form. Gently fold in coconut and vanilla extract. Cover the jam layer with meringue.
  • Bake until the meringue topping takes on a soft pink or eggshell color, 20 to 25 minutes. Cool in the pan for 2 to 3 minutes, then carefully lift out using the parchment paper. Cool on a wire rack. Cut into squares.

175g butter , softened
350g golden or white caster sugar
1 tsp vanilla extract
5 eggs , 4 separated
175g plain flour
1 tsp baking powder
150ml milk
12 tsp raspberry jam - use a firm jam, we used Waitrose Essential Raspberry Jam
85g desiccated coconut

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line a 12-hole muffin tin with cases. In a large mixing bowl beat together the butter, 175g of the sugar and the vanilla extract until light and fluffy. Beat in the whole egg, followed by the 4 yolks, before briefly beating in the flour, baking powder and milk until smooth. Divide two-thirds of the mix evenly between the cases, then top the centre of each with 1 tsp jam. Divide remaining cake mix over the top, using a wet finger to smooth it in place so no jam is visible. Bake for 18-22 mins until a skewer poked into the centre comes out clean. Wait until cool enough to handle, then transfer the cakes to a flat baking sheet.
  • Lower oven to 110C/90C fan/gas ¼. Using a large, clean bowl, beat the 4 egg whites until stiff, then continue whisking while you gradually add the remaining 175g sugar. Beat until thick and shiny, then fold in the coconut and use spoonfuls of the mixture to top each cake. Bake for 30-35 mins until the outside of the meringue is crisp, then cool before serving.
