Aubergine and Mozzarella Pasta image

A delicious homemade tomato pasta sauce, perfectly cooked aubergines and salty, stretchy, gooey strings of Mozzarella make this simple Aubergine and Mozzarella Pasta recipe a real family favourite. Ready in under 30 minutes it's perfect for busy weeknights!

1 tablespoon olive oil
1 small red onion (you can use a white one, but I prefer red in this recipe)
1 medium aubergine (chopped into 1cm cubes)
1 clove of garlic (crushed or finely diced)
400 g tin chopped tomatoes
1 tablespoon balsamic vinegar
Salt and pepper
300 g penne pasta (you could make this with any shape, but I like it best with penne)
A small handful of basil leaves (roughly torn)
150 g ball mozzarella (chopped roughly)

Steps:

  • Put a the olive oil in the base of a wide, deep pan. Add the chopped red onion and put the lid on. Sweat the onion on a low heat until it is translucent, but not brown - about 5 minutes. Meanwhile you can chop the other veggies.
  • Turn the heat up high and add the aubergine. Stir-fry until the aubergine is nicely browned, (you may need to add a splash more oil), then turn down the heat and add the crushed garlic and fry for 1 more minute.
  • Add the tin of chopped tomatoes, a tablespoon of balsamic vinegar and some salt and pepper, then bring to the boil. Turn the heat down and leave to simmer for 10-15 minutes with the lid off, stirring occasionally.
  • While the sauce is cooking, cook the pasta according to the packet instructions / your own preferences.
  • Drain the pasta and tip it into the sauce, stirring thoroughly to coat the pasta in the sauce. You may want to add a drop or two of the pasta cooking water to make the sauce looser.
  • Finally, add the basil leaves and mozzarella and stir again. There should be just enough heat in the pan to warm and slightly soften the mozzarella. Yum!

Delicious long fusilli with a full-bodied aubergine sauce and stringy smoked buffalo mozzarella.

300 g Fusilli Lunghi Pasta (or other long or short pasta)
600 g Eggplants
130 g Italian Pancetta (smoked into cubes)
100 g Yellow Onion
3 cloves Garlic
800 g Peeled Tomatoes (in pieces)
300 ml Water
½ tsp Origan
10 leaves Basil
to taste White Pepper
to taste Dry Chili Peppers
to taste Salt
250 g Buffalo Mozzarella (smoked or normal)
to taste Parmesan Cheese (grated)
to taste Pecorino Cheese (grated)

Steps:

  • Finely chop the onion. Wash and dice the aubergines.
  • In a large, hot pan, she begins to fry the bacon. When it starts to release the fat, add the garlic and onion and sauté until the onion is browned.
  • Add the aubergines and fry them over medium heat, until they are softened, (if you want you can fry them separately previously). If they are too dry, add 1 or 2 tablespoons of oil to avoid burning them.
  • Add the chopped peeled tomatoes, oregano, basil, chilli and white pepper to taste and salt. Stir well and finally add the water and cook over medium-low heat, taking care to mix it.
  • Put a large pot of water on the stove.
  • Cut the mozzarella into pieces and grate the pecorino and parmesan.
  • When the sauce has set, turn off the heat.
  • When the water boils, add salt and cook the pasta according to the package directions.
  • When the pasta is half cooked, heat the sauce and add the mozzarella so that it warms up and melts.
  • Cook the pasta, drain it, keeping some water of the pasta aside. Add the pasta to the sauce and mix well. If it is too dry, add a little water kept aside and finally the Parmesan and pecorino. Serve still hot.

4-5 tbsp olive oil
1 medium red onion , finely sliced
2 garlic cloves , finely sliced
1 small dried red chilli , chopped
handful oregano or marjoram, roughly chopped
2 medium aubergines , diced into 2.5cm/1in cubes
50g raisins
4 large tomatoes , chopped
2 tsp tomato purée
2 tbsp baby capers , rinsed, drained and roughly chopped
2-3 tbsp good quality red wine vinegar
400g fusilli
small handful mint , roughly chopped
50g pine nuts , toasted
aged ricotta or vegetarian Parmesan-style cheese (try Bookhams 'Not just a pasta cheese'), to serve

Steps:

  • In a heavy based pan, heat ½ tbsp of oil and gently cook the onion, garlic and chilli until soft with half the oregano.
  • Meanwhile, heat 3-4 tbsp of oil in another frying pan and start browning the aubergines. Once cooked, add to the onion mixture. Fry the raisins in another ½ tbsp oil and, when they have puffed up, add to the aubergine mix. Add the tomatoes, purée and rest of the oregano. Cook on a medium heat for 15-20 mins so all the flavours come together.
  • Finally add the capers and the vinegar and leave on a low heat while you cook the pasta in plenty of boiling, salted water. If the mixture becomes very thick add 100ml of water. Toss the pasta through the aubergine sauce and sprinkle with fresh mint and the pine nuts. Let everyone grate over their own cheese.

BAKED RIGATONI WITH AUBERGINE & MOZZARELLA



Baked rigatoni with aubergine & mozzarella image

A fantastic dish for entertaining - the whole thing can be made ahead

1 ¼kg small vine or small plum tomato
a sprinkling of golden caster sugar
4 tbsp extra-virgin olive oil , plus extra for drizzling
1 large aubergine (about 450g/1lb)
500g rigatoni
2 garlic cloves , crushed
85g black olive , stoned and chopped
2 good handfuls of basil leaves, plus extra for serving
450g buffalo mozzarella
50g parmesan , freshly grated, plus extra for serving

Steps:

  • Preheat the oven to fan 140C/conventional 160C/gas 3. Halve the tomatoes through their equator, rather than their core. Stand them cut-side up on a shallow baking tray (I use a nonstick Swiss roll tin). Scatter a little salt, pepper and sugar over the cut surfaces and drizzle with extra virgin olive oil. Roast for 45 minutes.
  • Meanwhile, slice the aubergine into rounds, brush both sides with oil and spread out in one layer on another tray. After the tomatoes have been roasting for 45 minutes, put the aubergines in with them and roast for another 45 minutes.
  • Towards the end of the time, cook the pasta in plenty of gently boiling well-salted water until nearly al dente - it should be undercooked because it finishes off in the oven. Drain well and tip into a large bowl. Have ready 4 tbsp of extra virgin olive oil mixed with the crushed garlic and chopped olives. Toss the oil mixture through the pasta and turn half of it into a 2-21⁄2 litre ovenproof dish.
  • Remove the tomatoes and aubergines from the oven. (You can prepare them up to 24 hours ahead.)
  • Turn up the oven to fan 180C/conventional 200C/gas 6. Scatter half the tomatoes and their juices over the pasta in the dish. Roughly tear the basil leaves and scatter on top. Drain the mozzarella, pat dry with kitchen paper, then slice very thinly. Lay two-thirds of the slices over the tomatoes. Grind black pepper over, and scatter over the aubergine. Add the rest of the pasta, top with the remaining tomatoes and mozzarella and then the parmesan. (Can be made up to here 3-4 hours in advance). Bake for 20-25 minutes, until piping hot and the top is extra crusty. Serve hot with a sprinkle of basil and extra parmesan.

1 pound fusilli pasta
3 tablespoons olive oil
2 cloves garlic, minced
3 cups cherry tomatoes, quartered (about 1 1/2 pints)
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup packed fresh basil leaves, torn
8 ounces fresh mozzarella, diced (about 1 1/4 cups)

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta into a large bowl and reserve 1/2 cup of the cooking liquid.
  • In a medium skillet heat the olive oil over medium heat. Add the garlic and saute until fragrant, about 2 minutes. Add the tomatoes, salt, and pepper. As the tomatoes cook and soften, smash them with a fork. Continue to cook until the tomatoes make a chunky style sauce, about 4 minutes. Transfer the tomato sauce to the bowl with the pasta. Toss to combine. Add the basil leaves and mozzarella. Stir to combine. Add the reserved pasta water, 1/4 cup at a time, until the pasta is moist. Serve.

1 tbsp cold-pressed rapeseed oil
1 large onion , finely chopped (160g)
2 large garlic cloves , finely grated
1 tsp chilli flakes
1 tsp smoked paprika
400g can chopped tomatoes
1 tsp vegetable bouillon powder
1 aubergine , chopped
150g wholemeal penne or fusilli
large handful of basil , plus extra to serve
25g parmesan or vegetarian Italian-style hard cheese, finely grated

Steps:

  • Heat the oil in a large non-stick pan, add the onions, cover and cook for 5 mins. Remove the lid and cook for 5 mins more, stirring frequently until softened. Add the garlic, chilli flakes and paprika, stir briefly, then tip in the tomatoes and a can of water. Stir in the bouillon and aubergine, then bring to a simmer, cover and cook for 20 mins.
  • Cook the penne in a pan of boiling water for 12 mins until al dente. Drain, reserving 60ml of the cooking water. Add the cooked penne to the sauce, and toss well with the basil and a little of the reserved water, if needed. Spoon into two shallow bowls, and serve topped with the cheese and some extra basil, if you like.
