1/2 cup dry Riesling or Gewurztraminer
1 tablespoon sherry vinegar
3 tablespoons extra?virgin olive oil
Salt and freshly ground black pepper
2 large bunches frisee, ends trimmed
1 small head radicchio, torn into 2-inch pieces
1 Fuyu persimmon, cut into thin slices
1 Red Bartlett pear, halved, cored, and cut into thin slices
6 figs, halved
1 small pomegrante, peeled, seeds removed and separated
1/2 cup walnut halves, toasted

Steps:

  • In a small saucepan over high heat, reduce the wine until 1 to 2 tablespoons remain. Let cool.
  • In a small bowl, whisk together the vinegar, reduced wine, and olive oil and, season, to taste, with salt and pepper. Place the frisee, radicchio, persimmon slices, pear slices, and figs in a bowl.
  • Add the vinaigrette and gently toss together. Place on individual salad plates. Garnish with pomegranate seeds and walnut halves and serve immediately.

1/2 cup tamarind paste, dissolved in water (optional)
1 1/2 cups freshly squeezed orange juice
1/4 cup molasses
1 1/2 teaspoons chile powder
1/2 cup rice vinegar
1 tablespoon olive oil
1 1/2 tablespoons chopped fresh basil
2 pounds boneless loin of pork, with the fat cap left on
2 cups dried Black Mission figs, trimmed and coarsely chopped
1 1/2 teaspoons chopped roasted garlic
1 teaspoon pureed chipotles in adobo
2 teaspoons chopped fresh thyme
2 tablespoons chopped fresh flat-leaf parsley
1/4 teaspoon salt
2 tablespoons lemon-flavored oil or 2 tablespoons virgin olive oil with 2 teaspoons minced lemon zest
1 teaspoon sherry or balsamic vinegar
1/4 cup pine nuts, toasted
Olive oil, for searing

Steps:

  • To prepare the marinade: Blend together the tamarind paste, if using, orange juice, molasses, chile powder, vinegar, oil, and basil. Pour the marinade over the pork loin in a shallow glass baking dish, cover, and marinate overnight in the refrigerator.
  • To prepare the stuffing: Place the figs, garlic, and pureed chipotles in a food processor and pulse until semi-smooth. Transfer to a bowl and fold in the remaining ingredients.
  • To prepare the pork: Remove the pork from the marinade, reserving the marinade, and blot dry. Butterfly the loin lengthwise, leaving 1/2 inch of meat attached to connect the 2 halves of the loin. Open the pork loin and cover it with plastic wrap. Pound lightly with a butcher's mallet or heavy pan to an even thickness, 1/2 to 3/4 inch. Mound the stuffing down the center of the loin and fold it closed. Tie the loin carefully at 1-inch intervals with butcher's string. The loin may be prepared to this point up to 24 hours in advance.
  • Preheat the oven to 325 degrees. Pour the marinade into a saucepan and reduce it over low heat to a glazelike consistency. Heat the olive oil in a saute pan over moderate heat and sear the meat. Transfer to a metal rack wet in a roasting pan and roast for 40 to 50 minutes, or until the internal temperature is 145 degrees. Bursh the pork liberally with the glaze during the last 5 minutes of cooking. Let the meat rest for 5 minutes or so before removing the twine. Slice and serve.
  • Serving Suggestion: Serve with sauteed chanterelle mushrooms with apple wedges.

RICE WITH CORN, OKRA, AND CHIPOTLE

1/2 pound small fresh okra, washed, trimmed, and sliced 1/2inch thick
Juice of 1 lemon
3 tablespoons Spanish olive oil
1 medium onion, finely diced
1 small green pepper, stemmed, seeded, and finely chopped
3 cloves garlic, finely chopped
3 canned plum tomatoes, seeded and chopped
1/2 cup dry sherry
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
2 cups long grain white rice, rinsed until the water runs clear
8 threads saffron, crushed
1 cup corn kernels (from about 2 ears corn)
1 pickled chipotle chile, chopped (see Note)
1/4 cup pickling liquid from chipotles (see Note)
4 1/4 cups light chicken broth, preferably homemade

Steps:

  • In a glass or ceramic bowl, toss the okra with the lemon juice. Let sit for 15 minutes.
  • In a large heavy saucepan, heat the olive oil over high heat. Saute the okra for 4 to 5 minutes, stirring frequently, until golden. Add the onion, reduce the heat to medium, and cook for 6 to 8 minutes, until softened. Add the green pepper and the garlic and cook for 2 minutes more, until the garlic releases its aroma. Add the tomatoes, cook for 2 minutes, stirring, and add the sherry, salt, and pepper. Cook the mixture for 5 minutes, stirring occasionally, until thickened.
  • Increase the heat to medium, add the rice, saffron, corn, drained okra, and chipotle. Stir the mixture well and cook for 2 minutes. Add the pickling liquid and the chicken broth, stir again and cook partially covered for 15 to 20 minutes, until most of the liquid has been absorbed and small craters form in the top of the rice. Stir with a fork and cover the pan. Reduce the heat to low and simmer for 10 to 15 minutes more, until the rice is tender.

POMEGRANATE GLAZED PORK

One 6- to 7-pound 8-rib bone-in center cut pork loin, chine bone removed, frenched
2 carrots, halved lengthwise
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 tablespoon plus 1/4 teaspoon kosher salt
2 cups pomegranate juice
4 sprigs fresh thyme
3 tablespoons maple syrup
2 tablespoons whole-grain mustard

Steps:

  • Remove the pork roast from the refrigerator 30 minutes before cooking.
  • Preheat the oven to 350 degrees F. Place the rack on the lower middle section of the oven.
  • Place the carrot halves on the bottom of a small roasting pan and set aside.
  • Trim off any thick areas of fat from the roast. Make shallow slits about 1 inch apart in a crosshatch on the meat of the roast. Mix together the cinnamon, cloves and 1 tablespoon salt in a small bowl. Sprinkle the seasoning mixture evenly over the roast and rub to coat. Place the roast on the carrots and add 1/2 cup water to the pan. Roast for 1 hour, adding another 1/2 cup water if the pan gets dry.
  • Meanwhile, combine the pomegranate juice and thyme in a small saucepan. Place over medium heat and reduce by half, about 15 minutes. Stir in the maple syrup and mustard and continue to reduce until slightly thickened, another 3 to 4 minutes. Season with the remaining 1/4 teaspoon salt and remove and discard the thyme.
  • Baste the meat with the pomegranate mixture and roast until the internal temperature reaches 120 degrees F, another 30 minutes. Remove the roast from the oven and turn the oven up to 450 degrees F.
  • Baste the roast again with the pomegranate mixture. Return the roast to the hot oven for an additional 20 minutes, basting with the pomegranate sauce every 5 to 10 minutes until the internal temperature reaches 135 degrees F and the roast is evenly glazed. Remove the roast to a platter to rest for 10 minutes. Add any juices from the pan to the sauce and bring to a simmer over medium heat. Stir to combine. Slice the roast and serve with the sauce on the side.

1 1/4 cups reduced-sodium chicken broth
8 dried black Mission figs, coarsely chopped
2 sprigs fresh rosemary
2 cinnamon sticks
1 tablespoon honey
3 tablespoons unsalted butter, cut into pieces
Salt and freshly ground black pepper
2 tablespoons olive oil
2 tablespoons chopped fresh rosemary leaves
1 tablespoon salt, plus additional for seasoning
1 1/2 teaspoons freshly ground black pepper, plus additional for seasoning
1 cup canned low-salt chicken broth
1 (4 to 4 1/2-pound) boneless pork loin

Steps:

  • For the sauce: In a heavy medium saucepan, combine the first 6 ingredients. Boil over medium-high heat until reduced by half, about 30 minutes. Discard the herb sprigs and cinnamon sticks (some of the rosemary leaves will remain in the port mixture). Transfer the port mixture to a blender and puree until smooth. Blend in the butter. Season the sauce, to taste, with salt and pepper. (The sauce can be made 1 day ahead. Cover and refrigerate. Rewarm over medium heat before using.)
  • For the pork: Preheat the oven to 425 degrees F.
  • Stir the oil, rosemary, 1 tablespoon salt and 1 1/2 teaspoons pepper in a small bowl to blend. Place the pork loin in a heavy roasting pan. Spread the oil mixture over the pork to coat completely. Roast until an instant read meat thermometer inserted into the center of the pork registers 145 degrees F, turning the pork every 15 minutes to ensure even browning, about 45 minutes total.
  • Transfer the pork to a cutting board and tent with foil to keep warm. Let the pork rest 15 minutes. Meanwhile, stir the chicken broth into the roasting pan. Place the pan over medium heat, and scrape the bottom of the pan to remove any browned bits. Bring the pan juices to a simmer. Season with salt and pepper, to taste.
  • Using a large sharp knife, cut the pork crosswise into 1/4-inch-thick slices. Arrange the pork slices on plates. Spoon the jus over. Drizzle the warm fig sauce around and serve immediately.

4 boneless pork top loin chops (1 1/2 inches thick, about 8 ounces each)
A few dashes Kosher salt
A few dashes black pepper (freshly ground)
1/4 teaspoon ground chipotle chile peppers (or to taste, see Notes)
1 tablespoon olive oil
1 tablespoon butter
1/2 cup onion (minced)
2 large cloves garlic (finely minced)
1/2 cup red ​wine
1 cup chicken broth
1 teaspoon fresh thyme
1 cup fresh figs (diced)

Steps:

  • Gather the ingredients.
  • Place each pork loin chop between sheets of plastic wrap and pound down to a one-inch thickness.
  • Season with salt, pepper, and ground chipotle.
  • Heat a large heavy skillet over medium-high heat. Add olive oil and swirl to coat the pan. Sear pork loin chops until golden brown on each side, turning only once.
  • Remove to a platter and keep warm.
  • Reduce heat, add onions and saute for two minutes.
  • Add garlic and saute an additional one minute.
  • Carefully pour in red wine and stir to deglaze the pan, scraping up browned bits.
  • Cook one minute, then add chicken broth, thyme, and figs.
  • Cook over medium heat about 10 minutes, stirring often and mashing the figs until the sauce is thickened.
  • Return pork loin chops to the pan, along with any juices that have accumulated on the platter, and coat both sides with sauce. Simmer for two minutes.
  • Serve pork loin chops with the fig sauce.

Steps:

  • Stir together cumin, coriander, pepper, cinnamon, and salt in a shallow bowl. Pat tenderloins dry and dredge in spice mixture until evenly coated.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. Reduce heat to moderate and cook pork, turning occasionally, until meat is browned on all sides and thermometer inserted diagonally into center of each tenderloin registers 145°F, 20 to 25 minutes. Transfer pork with tongs to a cutting board (reserve skillet) and let stand 10 minutes.
  • While pork stands, pour off and discard any fat from skillet, then add pomegranate juice to skillet and boil over moderately high heat until reduced to about 2/3 cup, about 3 minutes (if side of skillet begins to scorch, reduce heat to moderate). Stir together cornstarch and water and whisk into juice, then boil sauce until thickened slightly, 1 to 2 minutes.
  • Remove from heat and add Sherry vinegar to taste, then swirl in butter until incorporated. Pour sauce through a fine-mesh sieve into a bowl and skim off any fat. Season with salt. Slice pork and serve with sauce.

8 ounces ripe black mission figs, stemmed and quartered
1/4 cup honey
Small pinch of kosher salt
Kosher salt
2 thin lime wheels
2 ounces blanco tequila
1 ounce fresh lime juice
1 ounce orange liqueur, such as Cointreau
3/4 ounce Fig-Honey Syrup
1/4 ounce pomegranate juice
1/2 ripe black mission fig, for garnish

Steps:

  • For the fig-honey syrup: Combine the figs, 3/4 cup water, honey and salt in a medium saucepan. Bring to a boil over high heat, then reduce to medium heat. Cook, mashing the figs with a potato masher or whisk, until the mixture thickens and is deep purple, 3 to 5 minutes. Let cool completely.
  • Strain through a fine-mesh sieve set over a bowl, pressing on the solids to extract as much liquid as possible; discard the solids. Makes 5 to 6 1/2 ounces or enough for 6 to 8 cocktails (see Cook's Note).
  • For the cocktail: Spread some salt in a small shallow bowl. Run 1 of the lime wheels around the rim of a rocks glass, then dip the rim into the salt to coat.
  • Add the tequila, lime juice, orange liqueur, fig-honey syrup and pomegranate juice to a cocktail shaker. Fill the shaker with ice and shake vigorously until mixed and chilled, 20 to 30 seconds. Fill the prepared glass with ice and strain the cocktail into it. Garnish with the remaining lime wheel and fig half, pierced on a cocktail pick. Serve immediately.
