LOBSTER IN VANILLA SAUCE

1 carrot, roughly chopped
1 large onion, roughly chopped
1 stalk celery, roughly chopped
Few parsley stems
1 clove garlic
4-5 black peppercorns
2 bay leaves
Pinch of thyme
Pinch of tarragon
Salt to taste
.5 gallons fish stock or water
1 Nielsen-Massey vanilla bean, sliced in half lengthwise
.5 gallons white wine
2 lobsters, about 1 pound-2 pounds each
3-4 shallots, chopped
1/2 teaspoon butter
2 fl. oz. white wine
1 vanilla bean, chopped
1 quart whipping cream
2-3 branches seaweed
1 fl. oz. fish glacé (1 oz. Lobster Tomalley may be substituted)
1 pound bay scallops
Salt and pepper to taste
1 leek, chopped (use all of the white part and 2 inches of the green)
1 tablespoon butter
6 fl. oz. whipping cream
Salt and pepper to taste

Steps:

  • Simmer the first 9 ingredients in the fish stock or water for 1 hour. Add the vanilla bean and white wine and bring to a boil. Add the seaweed and lobsters and boil 8 to 10 minutes. Reserve until service.
  • Briefly sauté shallots in butter. Add white wine and vanilla bean. Reduce until almost dry. Add cream and fish glacé. Bring to a boil. Reduce heat and simmer about 5 minutes. At the last minute, add the scallops and simmer until barely done, about 1 1/2 minutes per side. Correct seasoning. Remove pan from heat and reserve, keeping warm.
  • Sauté the leek in the butter until tender but still green in color. Add the whipping cream. Season with salt and pepper and reduce at a low boil until the liquid almost evaporates and a thick sauce forms. Reserve, keeping warm.
  • Shell the lobster tails and claws. Slice the tails into medallions. On each serving plate place 1 spoonful of leeks and half of a lobster. Spoon scallops on top of the leeks. Spoon vanilla sauce over all. Garnish with lobster heads, tails and legs.

Fettuccini with Vanilla Bean Lobster Sauce image

2 frozen lobster tails, thawed
1/2 lb. fettuccini
2" piece vanilla bean
1 small shallot, finely minced
3 tsp. unsalted butter
1 tsp. chopped flat leaf parsley
Kosher salt and freshly ground black pepper
Fleur de Sel for sprinkling, optional

Steps:

  • Place lobster tails in a saucepan of well-salted water, cover and bring to a boil. As soon as the pan comes to a boil, turn off the heat and allow lobster tails to sit in hot water for 5 minutes. Bring a large pot of salted water to boil for pasta. Drain lobster tails and let cool, just until they are cool enough to handle. Remove lobster meat from tails by gently cracking apart the underside of the shell, or carefully cut through shell with a pair of sharp kitchen scissors. Cut lobster tails on an angle into 1/2" slices and set aside.
  • With the tip of a pairing knife slice open vanilla bean and scrape out seeds. Add pasta to boiling water and cook according to package directions until al dente. While pasta is cooking heat a large skillet on medium high. Add butter to skillet and when it foams add vanilla bean seeds and pod and shallots and reduce heat to medium low. Cook, stirring for 1 munute. Add lobster pieces and continue cooking and stirring until lobster is cooked through and coated with butter mixture. Reduce heat to low and drain pasta, reserving about 1/2 cup of pasta cooking water.
  • Add hot pasta to skillet along with 1/4 cup of pasta cooking water, increase heat to medium and continue tossing mixture until sauce thickens slightly, adding a bit more cooking water if needed to nicely glaze pasta. Season to taste with salt and pepper and arrange pasta on serving plates. Sprinkle with parsley and finishing salt.

Get out the bibs, lobster crackers and picks! If you've never prepared live lobster, this is a straightforward approach to a decadent meal. I make this once a year, on January 1, my wedding anniversary. My husband and I had a very low-key wedding (I was wearing jeans, an old sweater and my house slippers!), at 12:30 AM on January 1, 2001 (01-01-01). To celebrate that humble beginning, I make a totally decadent meal for us every New Year's Day. This one is our favorite and it's fun for us to do together. We halve the recipe and drink the leftover champagne. You'll need a really big pot for this, I use a big stock pot. Make sure plenty of napkins are on hand and that you have lobster shell crackers and picks.

1 bottle dry champagne
1 cup chopped fresh parsley
1 bunch fresh thyme
1 bay leaf
4 shallots, chopped
12 tablespoons unsalted butter
salt and pepper
4 live lobsters (1 1/2-2 pounds each)

Steps:

  • To make the sauce, pour the champagne into a medium saucepan and add the parsley, thyme, bay leaf and shallots; cook over medium heat until just 1 cup of liquid remains, about 25-30 minutes.
  • Strain the liquid and discard the herbs, slowly whisk in the butter, one tablespoon at a time, over low heat.
  • When all the butter has been added, season the sauce with salt and pepper to taste.
  • Keep the mixture warm while preparing the lobsters.
  • In a large pot, bring to a boil enough salted water to cover the lobsters.
  • Remove the rubber bands that hold the claws shut.
  • Plunge the lobsters into the water, head first.
  • Cover and bring the water back to a boil; cook the lobsters for 10-12 minutes from the time the water returns to a boil.
  • Serve lobster with champagne dipping sauce in individual bowls.

ROAST LOBSTER WITH VANILLA SAUCE

2 live lobsters, 1 1/4- to 1 1/2-pounds each
1 tablespoon olive oil
7 tablespoons plus 2 teaspoons unsalted butter
3 shallots, peeled and finely chopped
1/4 cup white wine
1 1/2 tablespoons white wine vinegar
1/2 vanilla bean, split lengthwise
1/2 teaspoon kosher salt
Freshly ground pepper to taste
3/4 pound tender spinach, stemmed
1 pound watercress, stemmed

Steps:

  • Place a roasting pan large enough to hold the lobsters in the oven and preheat to 450 degrees. With the tip of a sharp knife pierce lobsters between the eyes to sever the spinal cord. Crack claws using the blunt edge of a cleaver or a hammer. Place lobsters in the hot roasting pan, drizzle with oil and roast until red, about 15 minutes. Remove from oven, and set aside.
  • Melt 2 teaspoons of butter in a small saucepan, add the shallots and saute over low heat until soft and translucent, about 3 minutes. Add wine and vinegar, raise heat and cook at a moderate boil until the liquid is reduced to 1 tablespoon, about 5 minutes. Remove the pan from the heat, and whisk in 6 tablespoons of butter, about 1 tablespoon at a time until all is incorporated. Scrape the seeds from the vanilla bean into the sauce, stir to combine and strain into a clean saucepan. Season with 1/4 teaspoon salt and pepper, and set aside.
  • When the lobsters are cool enough to handle, remove the meat from the claws. Detach the tails, and discard the heads. With a pair of scissors, cut the shell on the underside of each tail in half lengthwise, remove the meat and cut into 1/4-inch-thick slices. Loosely cover the meat with aluminum foil, and keep warm.
  • Melt 1 tablespoon of butter in a large pot, and add spinach and watercress. Stir until greens have melted down, and continue to cook, stirring occasionally, until greens are tender, about 5 minutes. Season with 1/4 teaspoon salt and pepper.
  • To serve, reheat the sauce over low heat until warm, whisking constantly. Place a bed of greens on each plate, arrange the lobster meat on top and spoon the sauce over the lobster. Serve immediately.

FOR THE SAUCE:
1 vanilla bean (about 4 inches long)
1 sprig fresh thyme, small
1 tablespoon minced shallot
1 cup Brut champagne
1/2 cup unsalted butter, cold
kosher salt
freshly ground black pepper
4 lobster tails (uncooked), about 7 ounce each
1/2 cup unsalted butter, softened
2 teaspoons lemon juice
1 teaspoon snipped fresh chives
1/4 teaspoon kosher salt

Steps:

  • TO MAKE THE SAUCE: Cut the vanilla bean in half and split lengthwise. Place in a small saucepan with the thyme, shallots, and champagne. Bring just to a boil, reduce the heat, and simmer until reduced to 1/4 cup. The reduction will be a clear golden color. Remove from the heat and strain the reduction through a sieve. Reserve the vanilla bean. Rinse the saucepan and return the reduction to the pan. Using a sharp paring knife, scrape the seeds from the vanilla bean into the reduction. Bring the reduction to a simmer and whisk in the butter, 1 tablespoon at a time to fully incorporate, until glistening and smooth. Adjust the seasoning with salt and pepper, if necessary. Remove from the heat and set aside until the lobsters are ready. Keep warm. Place the tails, shell-side down, on a cutting board. Split the tails lengthwise to expose the meat. In a small bowl mash the butter with the lemon juice, chives, and salt using the back of a fork. Spread the butter over the lobster meat and between the shell and the meat. Grill the tails, shell side down, over Direct Medium heat, until opaque throughout, 8 to 10 minutes. 4 lobster tails, defrosted if frozen
lemon wedges, to serve
125g butter , softened
1 garlic clove , crushed
handful parsley leaves, finely chopped, plus extra to serve
1 tsp Dijon mustard
small pinch chilli powder , optional
1 lemon , juiced

Steps:

  • Make the butter by mixing together all the ingredients, then season and set aside. Can be made two days ahead. Remove from the fridge to soften before using.
  • Use kitchen scissors to cut along the tops of the lobster shells, then flip the tails over and crack the ribs of the shell. Use your fingers to open the shell and loosen the meat keeping it attached at the base and pull it half out. Use a knife to cut along the top of the tail without cutting all the way through and remove the vein if you see one. Sit the tail in a shallow roasting tray and add some butter to each one. Tails can be prepared a few hours ahead and chilled.
  • Heat the grill to high, then grill the lobster tails for 10 mins until cooked through. Put them on plates and drizzle with the butter from the pan, or pour the butter into a ramekin and put it in the middle of the table for dipping the lobster meat in. Serve with lemon wedges and scatter with extra parsley, if you like.
