CREAMY CHICKEN AND POTATO BAKE



Creamy Chicken and Potato Bake image

Tender chicken, potatoes and carrots baked in a rich, creamy Alfredo Sauce. This easy to make meal will quickly become a family favorite!

Number Of Ingredients 9

2-3 chicken breast (boneless skinless, cut into 2 inch pieces)
4-5 potatoes (diced into large chunks)
2 cups baby carrots (cleaned )
10.5 ounces can cream of chicken soup
12 ounces evaporated milk
8 ounces cream cheese
3/4 ounce ranch mix
2 cups shredded cheddar cheese
optional toppings - crispy bacon, minced parsley or thinly sliced green onions.

Steps:

  • Preheat the oven to 375 degrees. Spray casserole dish with non stick cooking spray, set aside.
  • Cut the chicken breast into large chunks. Place in casserole dish.
  • Top the chicken with the quartered potatoes and carrots.
  • Combine the cream cheese, evaporated milk, cream of chicken soup, ranch mix and half the shredded cheese in a medium sauce pan. Place over medium high heat and whisk until smooth.
  • Pour cream mixture over the top of the potatoes. Finish with the remaining shredded cheese. Cover tightly with foil. Bake in preheated oven for 1 hour 30 minutes.
  • Remove foil, place under broiler for 4-6 minutes until the top of the casserole is golden brown. Watch it carefully so it doesn't burn, you just want it to get all golden and toasty!
  • Allow to rest 15-20 minutes before serving.

Here's what you need: russet potatoes, shredded chicken, ranch dressing, bacon, shredded cheddar cheese, sour cream, scallion

2 russet potatoes
1 cup shredded chicken, leftover
½ cup ranch dressing
¼ cup bacon, cooked and chopped
¼ cup shredded cheddar cheese
sour cream, to serve
scallion, to serve

Steps:

  • Preheat oven to 400°F (200°C).
  • With a fork, poke the potatoes.
  • Place the potatoes on a plate and microwave for five minutes on each side.
  • In a bowl mix the chicken, ranch dressing, bacon, and cheddar cheese.
  • Carefully place the potatoes on a baking sheet, and slice them half way down.
  • Fill the potatoes with the chicken mixture.
  • Top with more cheddar cheese.
  • Bake for 20 minutes or until cheese is melted.
  • Top with sour cream and scallions.
  • Enjoy!

1 lb cooked boneless/skinless chicken breasts (1") cubed
6-8 medium red potatoes with skins 1/2" cubes
1/3 c olive oil
1 1/2 tsp salt
1 tsp black pepper
1 Tbsp paprika
2 Tbsp garlic powder
2 Tbsp hot sauce
2 c fiesta blend cheese
1 c crisp cooked crumpled bacon
1 c diced green onion
1/2 c sour cream or ranch dressing for topping

Steps:

  • 1. PREHEAT OVEN TO 400 DEGREES. SPRAY A 9X13 BAKING DISH WITH COOKING SPRAY.
  • 2. IN A LARGE BOWL, MIX TOGETHER THE OLIVE OIL, SALT, PEPPER, PAPRIKA, GARLIC POWDER AND HOT SAUCE. ADD THE CUBED POTATOES AND CHICKEN AND STIR TO COAT.
  • 3. SCOOP THE POTATOES AND CHICKEN INTO THE PREPARED BAKING DISH. BAKE THE POTATOES AND CHICKEN FOR 55-60 MINUTES, STIRRING EVERY 20 MIN. UNTIL COOKED THROUGH, CRISPY AND BROWNED ON THE OUTSIDE.
  • 4. WHILE THE POTATOES AND CHICKEN ARE COOKING, FRY YOUR BACON (I USE A LB.)
  • 5. ONCE THE POTATOES AND CHICKEN ARE FULLY COOKED, REMOVE FROM THE OVEN. TOP WITH THE CHEESE, BACON AND GREEN ONIONS. RETURN THE CASSEROLE TO THE OVEN AND BAKE FOR 5 MORE MIN. OR UNTIL CHEESE IS MELTED.
  • 6. TOP WITH RANCH OR SOUR CREAM!

5 medium Yukon Gold potatoes
¼ cup olive oil
1 tablespoon Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker, divided
1½ pounds boneless, skinless chicken breasts
2 cups cheddar cheese
4-6 slices bacon
2 scallions
sour cream

Steps:

  • Preheat oven to 425°F. Grease a 9×13-inch baking dish with olive oil or non-stick spray. Toss the potatoes with half of the olive oil and half of the seasoning mix and spread in the baking dish; place in oven.
  • While the potatoes cook (without disturbing), toss the chicken in the remaining olive oil and seasoning mix and let sit. After 25 minutes, remove the potatoes from the oven and toss with the chicken.
  • Spread out evenly in the pan and return to the oven for another 20-25 minutes, until chicken is cooked through and potatoes are crisp.
  • Sprinkle the potatoes and chicken evenly with the cheese, crumbled bacon, and scallions and bake another 5-6 minutes, until cheese is melted. Top with sour cream or ranch dressing and serve warm.

8 potatoes, cubed
1/3 cup olive oil
1 1/2 teaspoons salt
1 tablespoon fresh ground pepper
1 tablespoon paprika
2 tablespoons garlic powder
3 tablespoons hot sauce
2 cups cheddar cheese, shredded
1 cup bacon, crumbled
1 cup green onion, diced

Steps:

  • Preheat oven to 500 degrees.
  • In large bowl mix olive oil, salt, pepper, paprika, garlic powder and hot sauce.
  • Add potatoes to bowl and allow to marinate for 10 minutes.
  • Using a strainer and another bowl, drain the potatoes. Collect all remaining sauce in one bowl and set aside.
  • Coat baking dish with cooking spray.
  • Spread potatoes evenly in baking dish and bake for 45 minutes, stirring every 15 minutes.
  • Fry bacon and set aside to drain.
  • Using the bacon grease, brown the chicken cubes and add them to the remaining sauce. Coat the chicken cubes evenly in the sauce.
  • Once potatoes are done, spread the chicken on top. Bake for 12 minutes.
  • Crumble the bacon, grate the cheese, and chop the green onions.
  • Layer the cheese, bacon, and half of the green onions and bake for 3 - 5 minutes more, until the cheese is melted.
  • Add fresh green onions before serving.

  • Preheat oven to 425F. Add the potato chunks to a large mixing bowl, then add oil, hot sauce, garlic powder, 1 tablespoon of the Ranch seasoning packet, salt, and pepper to the bowl. Mix well until oil and seasonings are evenly distributed. Using a slotted spoon (don’t pour them in), add the potatoes to a 9×13 inch casserole dish. Save the bowl and leave any oil/seasonings that have collected in the bowl there for the chicken.
  • Roast the potatoes in the preheated oven for 45 minutes total, stirring every 15 minutes so the potatoes cook evenly.
  • Cut chicken into 1 inch chunks if not already done, then add to the same bowl the potatoes were mixed in. Add the remainder of the Ranch seasoning packet to the chicken and stir until well mixed and chicken is coated in oil from the bowl. Set aside until the potatoes have cooked for 45 minutes.
  • After the potatoes have cooked for 45 minutes, remove the dish from the oven and give the potatoes a final stir. Add a layer of bacon bits (about 2/3 of them) on top of the potatoes, followed by about 1/2 cup of cheese.
