This is like the best parts of a loaded baked potato and traditional mashed potatoes all rolled into one. For extra fun, take your leftovers, add some milk or cream, reheat, and you've got a kickin' loaded potato soup!

4 slices bacon, or more to taste
3 pounds potatoes, or more to taste, peeled and cut into chunks
½ cup butter
1 (16 ounce) container sour cream
8 ounces shredded Cheddar cheese
½ chopped fresh chives
salt and ground black pepper to taste

Steps:

  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels.
  • Place potatoes into a large pot of lightly salted water; bring to a boil, reduce heat to medium-low, and simmer until tender, about 20 minutes. Drain potatoes and return them to the pot.
  • Mash butter into the potatoes with a potato masher or electric hand mixer until melted completely into the potatoes; add sour cream and continue to beat until combined. Crumble bacon into the potato mixture; add Cheddar cheese and chives and stir. Season potatoes with salt and pepper.

1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
4 slices bacon
2 tablespoons butter
1 shallot, minced
2 tablespoons all-purpose flour
1 ½ cups whole milk
2 tablespoons sour cream
1 pinch ground black pepper
1 pinch nutmeg
1 ½ cups shredded sharp Cheddar cheese, divided
3 green onions, sliced
2 tablespoons sour cream, or to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Arrange potato nuggets in a single layer on a baking sheet.
  • Bake in the preheated oven until lightly golden, 20 to 25 minutes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and chop coarsely.
  • Melt butter in a saucepan over medium heat; add shallot and cook until fragrant. Stir in flour and cook until light golden, about 2 minutes. Whisk in milk and 2 tablespoons sour cream; stir until smooth and thick, about 5 minutes. Season with black pepper and nutmeg. Stir in 1 cup Cheddar cheese until fully melted.
  • Transfer potatoes to a 9x13-inch baking dish. Sprinkle bacon on top. Pour cheese sauce over the potatoes. Sprinkle remaining 1/2 cup Cheddar cheese on top.
  • Bake in the preheated oven just until cheese melts, about 7 minutes. Remove from the oven; top with green onions and 2 tablespoons sour cream.

2 russet potatoes
2 teaspoons olive oil
½ cup sour cream, plus more for serving
2 tablespoons unsalted butter, melted
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 cup shredded cheddar cheese, divided
½ cup scallions, thinly sliced, divided
2 strips bacon, cooked, crumbled

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • Rub each potato with 1 teaspoon of oil, and prick the top with a fork.
  • Place the potatoes on a rimmed baking sheet and bake for 1 hour.
  • Transfer potatoes to a cutting board, and cut in half.
  • Using a spoon, gently scoop out the inside flesh of the potatoes and transfer to a medium bowl. Reserve the skins.
  • Add the sour cream, melted butter, salt, pepper, ½ of the shredded cheese, and ½ of the scallions, and combine with a hand mixer until smooth.
  • Use a spoon to transfer the potato mixture back into the scooped out potato skins.
  • Bake for 10 minutes.
  • Sprinkle the potatoes with remaining cheese, and bake for 5 more minutes, until the cheese is melted.
  • Top with sour cream, bacon, and the remaining scallions.
  • Enjoy!

3/4 cup sour cream
1/2 cup milk

Dip these baked loaded mashed potato tater tots into my creamy loaded potato dipping sauce. They are the perfect healthier way to use leftover mashed potatoes!

1 1/2 cups mashed potatoes, cold
1 large egg
1/4 cup flour
1/2 cup shredded cheddar cheese
2 tablespoons cooked, finely chopped bacon
1 tablespoons diced chives
panko bread crumbs
1 cup sour cream
2 tablespoons shredded cheddar cheese
2 tablespoons cooked, finely chopped bacon
1 tablespoon diced chives
1 teaspoon vinegar

Steps:

  • Pre-heat oven to 375 degrees F. Line a baking sheet with foil or parchment paper
  • In a medium bowl, combine the mashed potatoes, egg, flour, cheddar cheese, bacon and chives with a wooden spoon. Pour panko bread crumbs onto a medium sized plate.
  • Use a melon baller to scoop out the mashed potato mixture and place the mashed potato ball into the panko bread crumbs. Roll the mashed potato until covered, then use your fingers to form it into a tater tot shape. Place on pan.
  • Repeat until all the mashed potatoes are covered in panko, refilling the panko plate as needed.
  • Place in the oven and bake for 25 minutes, turning the tater tots once halfway through baking. Remove from oven and serve hot.
  • To make the dipping sauce, combine all ingredients in a small bowl. Chill for 20 minutes before serving.
