I got this recipe from out of the Sept. 2004 issue of BBC Good Food Magazine. It is gorgeous and I have made it 4 times already this week, once for company. My company loved it as well. It is easy to do,impressive, not that expensive and the results are delicious!

2 tablespoons cider vinegar or 2 tablespoons white wine vinegar
2 tablespoons double cream
3 1/2 ounces olive oil
2 ounces Stilton cheese or 2 ounces other blue cheese (I used Danish Blue)
2 little gem lettuce (I have done it with sliced romaine as well with very good results)
2 green onions, finely sliced
1 tablespoon sugar or 1 tablespoon sugar substitute (the recipe did not call for this, it is my preference, but I found it added a lovely flavour to the)
salt and pepper

Steps:

  • Make the dressing by whisking the vinegar and cream with a little seasoning,and the sugar, then gradually whisk in the oil and crumble in the cheese.
  • Cut the lettuces into wedges lengthways and arrange on a plate.
  • Drizzle over the dressing and scatter on the green onions.

Liven up lettuce with this vibrant and healthy side salad

4 tbsp avocado oil or olive oil
1 tbsp balsamic vinegar , white or dark
4 Little Gem lettuces , cut into wedges
50g parmesan shavings

Steps:

  • Mix the oil and vinegar with a generous pinch of salt (preferably flakes) to make the dressing.
  • Pack the lettuce into a plastic food container with ice to keep it fresh. Take the dressing and cheese into smaller containers. Arrange the lettuce on a platter, drizzle with the dressing and scatter with the cheese.

1 cup sour cream
5 ounces blue cheese (crumbled)
1 teaspoon chopped garlic

Steps:

  • Blend your mayonnaise, blue cheese and garlic.
  • Fold in the sour cream, then refrigerate 3-4 hours.
  • Keeps well.

Contessa's Heirloom Tomatoes With Blue Cheese Dressing image

When tomatoes are ripe in the summer, this is the simplest and most delicious salad to make. It only has a few ingredients, so choose luscious ripe tomatoes and a good Roquefort cheese. Adapted from Barefoot Contessa at Home cookbook.

3 lbs heirloom tomatoes, mixed colors and sizes
kosher salt
fresh ground black pepper
1/2 lb Roquefort cheese, divided
1 cup good mayonnaise
1/3 cup heavy cream
2 teaspoons tarragon vinegar
2 tablespoons. chopped fresh flat leaf parsley

Steps:

  • Core the tomatoes and cut the large ones into thick slices, halve or quarter the small ones. Arrange to look pretty on a platter and sprinkle liberally with salt and pepper.
  • To make dressing:.
  • Place half the Roquefort cheese, maoynnaise, cream, vinegar, 1 teaspoons salt and 1/2 teaspoons pepper in the bowl of a food processor: process until combined but still chunky.
  • Drizzle the dressing over the tomatoes. Crumble the remaining Roquefort cheese over the tomatoes. Sprinkle with the parsley and serve at room temperature. Enjoy!

A crisp salad with tangy blue cheese dressing, crumbled cheese and crunchy toasted walnuts - a great accompaniment to steak

50ml buttermilk
50g soured cream
50g mayonnaise
1 tsp lemon juice
75g blue cheese , crumbled
½ small pack chives , snipped
1 iceberg lettuce washed and quartered
25g walnuts , toasted and chopped

Steps:

  • Make the dressing in a medium-sized bowl by combining the buttermilk, soured cream, mayonnaise, lemon juice and 50g of the blue cheese. Season and stir through the chives. Chill until ready to serve.
  • When ready to serve, pour half the dressing over the lettuce wedges and crumble over the remaining blue cheese and a scattering of walnuts. Serve the rest of the dressing on the side.

  • Make mustard maple glazed bacon if using: Mix mustard and maple syrup together in a tiny bowl, and brush on both sides of bacon. Place on a sheet pan, or a couple pieces of oil, with edges turned up to catch the oil. Bake in a 400 F oven until crispy, about 15-20 minutes. Drain, blot and chill. Crumble with your fingers.
  • Make dressing: Mix all dressing ingredients together in a small bowl and immediately refrigerate. You want the dressing to be really cold! Feel free to make ahead!
  • When ready to serve, cut the romaine hearts into long quarters, and lay side by side on a platter. Arrange the remaining veggies, down the center, over the romaine.
  • Pour the chilled dressing down the center, over the veggies, sprinkle with the crumbled bacon and chives and serve immediately.
