This delicious side dish is a terrific 5-ingredient recipe. It's quick and easy and makes a nice complement to any main dish. The flavors are great, making it a wonderful holiday side dish for Mother's Day, Father's Day or Easter.

2 lbs. carrots (peeled and cut in ½" slices)
4 tbsp. unsalted butter
1/2 cup sour cream
2 tbsp. dried basil
1/2 tsp. pink Himalayan sea salt (or salt to taste)

Steps:

  • Sauté carrots in butter with basil for about 20 minutes with lid covered.
  • Cook carrots until a fork will pierce through the carrot and test done.
  • Remove from heat.
  • Stir in sour cream and salt to combine.

1 tablespoon butter

  • Place 1 in. of water in a large saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer for 7-9 minutes or until crisp-tender. Drain. In the same pan, melt butter; stir in lemon juice, garlic salt if desired, basil and pepper. Return carrots to the pan and heat through

1 tablespoon butter
1 to 2 teaspoons lemon juice

Quick Carrots With Garlic & Basil image

A quick different way with carrots. You can use other herbs if you like in place of the basil. I have used both fresh garlic and crushed from a jar with little difference.

500 g carrots (sliced diagonally)
2 teaspoons olive oil
2 large garlic cloves (sliced thinly or 1 teasp crushed garlic from a jar)
2 tablespoons fresh basil (thinly sliced or chopped)

Steps:

  • Cook carrots in boiling water for for 2 -3 mins until tender but crisp or microwave if desired.
  • Drain and reserve 1/2 cup of liquid.
  • Combine the garlic and oil in a nonstick pan and cook over a moderate heat until fragrant (you can smell the garlic).
  • Add the carrots and stirring, cook until well combined and hot, adding a little of the reserved cooking liquid if necessary.
  • Remove from the heat and stir in the basil.
  • Serve hot.

2 tablespoons honey
1 tablespoon olive oil
1/4 teaspoon salt

Steps:

  • In a small bowl, combine the parsley, basil, lemon zest, orange zest, garlic and pepper flakes if desired; set aside., In a 2-qt. microwave-safe dish, combine carrots and 1/4 cup water. Cover and microwave on high for 3 minutes; stir. Cover and cook 3-4 minutes longer or until tender. Drain. Combine the honey, oil, salt and pepper; stir into carrots., Transfer carrots to a serving plate and sprinkle with parsley mixture.

1 lb carrot
1 cup water
2 tablespoons balsamic vinegar
2 teaspoons honey
1 teaspoon olive oil
1/2 teaspoon spicy brown mustard
1 teaspoon dried basil
1/8 teaspoon ground pepper

Steps:

  • Peel the carrots and slice them. Put them in a pan with the cup of water. Bring to a boil. Cover and reduce heat. Simmer for about 10 minutes or until soft (but not mushy). Drain and return to the pan.
  • While the carrots are cooking combine the other ingredients in a small bowl. Mix well to combine.
  • When the carrots are drained add the vinegar mixture and return to the heat. Stir frequently for 2 minutes.
  • Serve warm.
