- Preheat the oven to 400 degrees F. Butter a large baking dish with the butter.
- Slice the potatoes into sticks, and then cut the sticks to create a dice.
- Combine the cream and milk in a bowl. Add the flour, salt and some pepper. Whisk it together well so that the flour is incorporated into the milk/cream mixture. Add the diced potatoes to the prepared baking dish and pour the creamy mixture all over the top.
- Cover the dish with foil and bake for 20 to 30 minutes. Remove the foil and bake 15 to 20 minutes more. Just before serving, sprinkle on the grated cheese and return it to the oven until the cheese is melted and bubbly, 3 to 5 minutes. Sprinkle on the green onions and serve it hot. Creamy, dreamy and divine.

- Preheat oven to 400 degrees.
- Lightly grease a medium gratin dish with butter.
- Cover the bottom of the pan with an overlapping layer of potatoes.
- Lightly season with salt, pepper, garlic powder, and onion powder and top with a sprinkling of cheese (about 2 tablespoons).
- Continue layering potatoes, seasoning, and cheese, ending with the remaining cheese on top.
- Pour the cream over the potatoes, pressing lightly with your hands to cover the potatoes with cream.

- Preheat the oven to 350°F and set an oven rack in the middle position. Grease an 8-inch (or 2-quart) baking dish with butter.
- In a large mixing bowl, toss the potatoes with the salt and pepper until evenly coated.

- Preheat the oven to 350ºF.
- In a saucepan, combine the sliced potatoes, cream or milk, garlic, salt and pepper. Heat this mixture until it is just coming to a boil. Immediately reduce the heat to a gentle simmer. Do not let the cream come to a hard boil. Cook for 5 or 6 minutes, or until the potatoes are almost tender but not fully cooked.
- If you are using the cornstarch mixture to thicken the sauce: In a small jar, blend the cornstarch with water. Stir this mixture into the potatoes and simmer until it is thickened, which will be about 1 minute. Remove the pan from the heat and stir in 1/4 cup of the Gruyere cheese plus the Parmesan cheese.
- Transfer the potato and cheese mixture to lightly greased 8"x8" (20.5 x 20.5 cm) baking dish. Make sure they are evenly layered.
- Sprinkle the remaining grated Gruyere cheese over the potatoes. Bake in a preheated 350ºF (180ºC) oven for 30 to 40 minutes or until the top is golden brown.

- Preheat oven to 350°F. Coat a 3 quart casserole dish with cooking spray. Set aside.
- In a small saucepan, melt the butter and then whisk with flour until it forms a paste. While whisking, pour in milk until smooth. Add the bay leaf, salt, pepper, onion and garlic powder. Bring to a low simmer.
- Remove the saucepan from heat and whisk in 2 cups of the cheese. Whisk until cheese has melted and sauce thickens. Set aside.
- Peel potatoes and evenly slice to 1/4 inch or less thick. Place in cold ice water to prevent browning (optional).
- Remove the bay leaf from cheese sauce.
- Place half of the sliced potatoes in the prepared baking dish. Pour half of the cheese sauce over the top. Add remaining potatoes and top with the remaining cheese sauce. Cover tightly with aluminum foil.
- Bake covered for 60 minutes.
- Take the baking dish out of the oven and remove the aluminum foil. Top with the remaining 1/2 cup of shredded cheddar cheese and return to the oven uncovered. Bake for an additional 20 minutes or until potatoes are soft the whole way through.
- Remove and allow to sit for 15 minutes before slicing and serving.
- Optionally, top with additional salt and pepper, bacon, scallions or chives.
