Welcome to the world of Cheesy Hash Brown Casserole goodness! If you love the one Cracker Barrel offers, you'll love this copycat recipe. It's a much healthier version that doesn't use canned soup. Enjoy it as a side for breakfast for brunch.

6 tablespoons butter (+ extra for greasing the pan)
1/3 cup onion (diced)
1 clove garlic (minced)
4 tablespoons whole-wheat flour
1 1/2 cups milk
½ teaspoon salt
pepper (to taste)
2 cups cheddar cheese (mild, freshly grated)
1 pound frozen hash browns (be sure to buy a brand with only 1 ingredient - potatoes, no need to defrost)

Steps:

  • Preheat the oven to 350 degrees F. Grease a square baking dish with butter (8 x 8 or 9 x 9 inch) and set aside.
  • In a large sauté pan over medium heat melt the butter. Cook the diced onion until it softens but does not brown, about 2 to 3 minutes. Throw in the minced garlic and cook while stirring for 1 more minute.
  • Turn the heat down to medium low and whisk in the flour. Continuously stir until the flour darkens but is not burnt, about 1 to 2 minutes.
  • Whisk in the milk, salt, and pepper until it slightly thickens, about 1 minute.
  • Turn the heat off and, using a spatula or wooden spoon, stir in the grated cheese until it melts. Fold in the hash browns until evenly coated.
  • Transfer to the baking dish being careful to push the thick mixture down on top into one even layer.
  • Bake for 30 to 35 minutes uncovered, and then turn the heat up to broil for 3 to 4 minutes or until the top turns golden brown. Keep a close eye under the broiler so it doesn't burn! Serve warm and enjoy.

Hash browns are usually a breakfast thing--crispy and served with eggs. I love what happens when I combine them with other ingredients and bake into a casserole, mixing all the flavors and textures into one delicious cheesy, crispy and creamy bite!

1 tablespoon unsalted butter, at room temperature
One 16-ounce bag frozen shredded hash brown potatoes, thawed
8 ounces sharp yellow Cheddar, shredded (about 4 cups)
1/2 cup sour cream, plus more for garnish
1 medium yellow onion, coarsely grated
1 large egg
1 1/2 teaspoons sweet paprika
1/4 teaspoon cayenne
1/4 cup plus 2 tablespoons chopped fresh chives
Kosher salt and freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F. Grease a 9-by-9-inch casserole dish with the butter and set aside.
  • Add the hash browns, 7 ounces (about 3 1/2 cups) of the Cheddar, the sour cream, onion, egg, paprika, cayenne and 1/4 cup of the chopped chives to a large bowl. Season with salt and pepper and stir until combined. Pour into the prepared casserole dish and top with the remaining 1 ounce (1/2 cup) Cheddar.
  • Bake for 45 minutes until the casserole is heated through, browned on top and the sides become crispy. Let cool for 5 minutes. Cut into slices and dollop with more sour cream and the remaining 2 tablespoons chives.

1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
1 (8 ounce) container sour cream
½ cup melted butter
½ cup chopped onion
½ teaspoon salt
½ teaspoon ground black pepper
1 cup crushed cornflakes
½ cup melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.
  • Bake in the preheated oven until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.

1 large tub sour cream (500 ml)
1/2 cup(s) butter, melted
1 cup(s) hellman's mayo
2 can(s) mushroom soup
2 1/2 cup(s) grated cheddar cheese

Steps:

  • Slightly thaw hash browns for easier mixing. Spray a 9×13 baking dish with cooking spray and set aside. Preheat oven to 350.
  • In a large bowl mix everything together well.Once mixed together well pour into your prepared 9×13 and cover with tinfoil.
  • Place in oven and bake for 1 to 1 1/2 hours. This recipe also freezes well unbaked. Perfect if you want to make it ahead of time and freeze it for another night. Then you can just pop it in the oven. Enjoy
